- In a bowl, mix together the tomatoes, basil, olive oil and vinegar. Add 1/4 teaspoon of the garlic paste, and blend well. Season to taste with salt and pepper. Let stand at room temperature for 2 hours, if possible.
- Place the bruschetta on a large platter in a single layer. When ready to serve, drizzle each one with about 1 tablespoon of juice from the bottom of the bowl containing the tomato mixture. With a slotted spoon, strew the tomato mixture over the bruschetta. Serve immediately.

- Combine tomatoes and 1/2 cup fresh basil in a colander, sprinkle with salt and toss to coat; let drain 1 hour.
- Preheat oven to 375°F
- In a large bowl combine the drained tomato/basil mixture with the minced garlic, 1/4 cup olive oil, remaining 1/4 fresh basil, oregano and thyme.
- Let stand at room temperature 15 to 20 minutes to allow flavors to blend.
- During this time brush French bread slices lightly with the remaining olive oil.
- Toast "lightly" in the oven (just a few minutes).
- Pull out and place a small amount of tomato mixture on top of the lightly toasted French bread slices.
- Top each piece with a small amount of Mozzarella.
- Toast in the oven until cheese has melted and its golden brown.
- Serve and enjoy.
FRESH ROMA TOMATO, BASIL & OREGANO BRUSCHETTA
This is a great appetizer, or accompaniment to any pasta dish, especially when made with vine ripened roma tomatoes. It is best with fresh herbs, but you can substitute dried in a pinch. I have experimented over the years with several different bruschetta recipes and finally came up with this version. The final result is definitely worth the work!

- Lightly toast the bread in the oven.
- Rub one side of the toast with garlic clove.
- Drizzle a little olive oil over each slice.

- Heat 1 tablespoon oil in a large skillet over medium-high heat until shimmering.
- Add the pepper strips and sauté until lightly browned at the edges and beginning to soften, about 5 minutes.

- Make the crostini: Preheat the oven to 350˚F (150˚C).
- Brush olive oil on both sides of the baguette slices and arrange on a baking sheet in a single layer. Lightly season with salt.
- Bake for about 15 minutes, rotating halfway through, until the crostini are light golden brown and crisp. Let cool slightly, then lightly rub the top of each crostini with the cut sides of the garlic.
- Make the oven-roasted topping: Preheat the oven to 300˚F (180˚C). Line 2 baking sheets with parchment paper.

BRUSCHETTA WITH FRESH MOZZARELLA
Bruschetta is a version of garlic bread (garlic toast, really), which is good by me because I think garlic should be its own food group. It's great in just about everything. Fresh mozzarella is the stuff that comes in little round tubs of brine, not the stuff that comes shrink-wrapped and that you put on pizza. It's soft and creamy and tastes amazing with the crispy bread, garlic, tomatoes, and basil.

- Preheat the oven to 375°F.
- Cut the baguette into 1/4-to 3/8-inch-thick slices and place on a baking sheet. Brush the bread with the olive oil and bake for 10 to 12 minutes, or until light brown. Peel one of the cloves of garlic and rub it over the warm bread slices.
- Cut the mozzarella into 1/4-inch cubes. Cut the tomatoes in half, remove the seeds by scraping them out of the tomato with a small tool or your finger, and dice into 1/4-inch pieces. Coarsely chop the basil. Peel and finely chop the remaining 3 cloves of garlic or pass them through a garlic press.
- Combine the mozzarella, tomatoes, basil, and chopped garlic in a bowl and season with salt and pepper.

- 1. Wash and cut each tomato into quarters. Place in a pan with a tiny drizzle of olive oil. Allow to cook covered on medium heat for 1 min. Turn the tomatoes and cook for 1 min on each side. - Preheat oven on BROIL.
- Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.

- Marinate chicken breasts in itallian dressing for 2 to 3 hours. While chicken is marinating, prepare fresh bruschetta in a medium glass bowl by combining extra virgin olive oil with next 5 ingredients. Mix bruschetta well, cover and refrigerate for 1 to 2 hours. Prepare grill. Remove goat cheese from refrigerator and let it sit at room temperature to soften. Grill the marinated chicken breats over medium-high heat, turning 1/2 way through. Remove from grill, spread each breast with about 1 oz of goat cheese and top with heaping scoops of fresh bruschetta. Serve with fresh grilled aspargus and garlic bread.
