There's nothing I like better than getting all my housework done and "cooking up a storm" in the kitchen. I was raised in a farming community that had many asparagus growers. So I've always made sure that there's an ample supply of asparagus in my freezer! My husband is a grain farmer, and we have four grown children and 13 grandchildren.

1 unbaked pie shell (9 inches)
1/2 pound fresh asparagus, trimmed
2 green onions, thinly sliced
1 tablespoon all-purpose flour
2 cups shredded Swiss cheese
3 large eggs, beaten
1 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon basil
1/8 teaspoon cayenne pepper

Steps:

  • Bake crust at 425° for 6-7 minutes. Remove from oven and set aside. , Cook the asparagus spears in a small amount of water until tender. Drain and cool. Set aside three spears for garnish; cut the remaining asparagus into 1/2-in. pieces. Combine the asparagus pieces and onions; add flour and toss. Pour into crust; sprinkle with cheese. Whisk together eggs, cream, salt, basil and cayenne; pour over asparagus mixture. , Bake at 325° for 25 minutes. Split the reserved asparagus spears lengthwise and arrange, cut side down, in a wheel pattern on top of filling. Bake 5-10 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

1 medium leek, quartered lengthwise, then cut crosswise into 1/3-inch pieces (white and pale green parts only)
1 lb medium asparagus, trimmed
1 tablespoon unsalted butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/3 cups heavy cream
3 large eggs
2 teaspoons finely chopped fresh tarragon
2 teaspoons water
1 unbaked pie shell

Steps:

  • Wash leek in a bowl of cold water, agitating water, then lift out leek and pat dry.
  • Cook asparagus in a wide 4- to 5-quart pot of boiling salted water, uncovered, until just tender, about 5 minutes. Transfer asparagus with tongs to a bowl of ice and cold water to stop cooking, then drain and pat dry. Cut off and reserve tips (leave more stalk if asparagus is thin), then thinly slice stalks crosswise.
  • Heat butter in a 10- to 12-inch heavy skillet over moderately low heat until foam subsides, then cook leek with 1/4 teaspoon salt, stirring, until softened, 6 to 8 minutes. Stir in sliced asparagus and 1/4 teaspoon pepper and remove from heat.
  • Put oven rack in middle position and preheat oven to 375°F.
  • Whisk together cream, 2 eggs, tarragon, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Lightly beat remaining egg with water in a small bowl and brush pie shell all over with some egg wash. Spoon asparagus mixture into shell, spreading evenly, then pour cream mixture over asparagus.
  • Bake until filling is just beginning to set but still loose on top, 20 to 25 minutes. Scatter asparagus tips over top, pressing lightly if necessary to help them settle into filling, then continue to bake until custard is golden and just set but still slightly wobbly in center, about 30 minutes more (custard will continue to set as it cools).
  • Cool on baking sheet on a rack until warm, about 30 minutes. Loosen edge with a small sharp knife. Serve warm or at room temperature, cut into wedges.

1/2 cup chopped onion, cooked
1 cup shredded monterey jack cheese
1/4 cup grated parmesan cheese

3/4 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons cold butter or 2 tablespoons margarine
1 1/2 cups milk
4 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Lightly grease 10 inches quiche dish or pie plate. Layer crabmeat, asparagus and onion in prepared pie plate; top with cheeses. Season with pepper to taste. Combine flour, baking powder and salt in large bowl. With pastry blender or 2 knives cut in butter until mixture forms coarse crumbs. Stir in milk and eggs; pour over cheese mixture. 1 tube (8 ounces) refrigerated crescent rolls
2 teaspoons prepared mustard
1-1/2 pounds fresh asparagus, trimmed and cut into 1/2-inch pieces
1 medium onion, chopped
1/2 cup sliced fresh mushrooms
1/4 cup butter, cubed
2 large eggs, lightly beaten
2 cups shredded part-skim mozzarella cheese
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon each dried basil, oregano and rubbed sage

Steps:

  • Separate crescent dough into eight triangles; place in an ungreased 9-in. pie plate with points toward the center. Press onto the bottom and up the sides to form a crust; seal perforations. I found this recipe in a newspaper years ago. It is one of my husband's favorite recipes. As soon as he sees the fresh asparagus in the spring, he asks for it!

1 9-inch pie shell with fluted edge, baked
1 1/2 lb asparagus (4 cups), cut into 1-inch pieces
4 c water
3/4 tsp salt, divided
3 Tbsp butter or margarine
3 Tbsp flour
1 c milk
1 chicken bouillon cube, crushed
1 tsp instant, minced onion
1/8 tsp pepper
4 eggs, hard boiled
1/2 c cheddar cheese, shredded
paprika

Steps:

  • 1. Prepare and bake pie shell.
  • 2. In a 10-inch skillet, place asparagus, water and 1/2 teaspoon salt. Over high heat bring to a boil. Reduce heat to medium low. Cover and simmer until asparargus is fork-tender. Drain.
  • 3. In a 3 quart saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually stir in milk until well blended.
  • 4. Cook, stirring constantly, until mixture boils and thickens. Remove from heat. Stir in bouillon cube, onion, pepper and 1/4 salt until bouillon is dissolved.
  • 5. Chop 3 of the eggs. Stir asparagus and chopped eggs into mixture until well blended.
  • 6. Pour into baked pie shell; sprinkle with cheese and paprika.
  • 7. Bake in a 350-degree oven 5 minutes or until cheese melts. Remove from oven.
  • 8. Cut reserved egg into 6 wedges. Arrange wedges in a petal design in center of pie.

1 pound asparagus, trimmed
1 sheet frozen puff pastry (about 1/2 pound), thawed
All-purpose flour, for dusting
1 cup grated fontina cheese (about 3 ounces)
1 cup grated comte or gruyere cheese (about 3 ounces)
1 tablespoon minced shallot
2 large egg yolks
3 tablespoons whole milk
1/8 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest

Steps:

  • Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
  • Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.
  • Meanwhile, mix the fontina, comte, shallot, egg yolks, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. Arrange the asparagus on the tart and bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest. Serve warm or at room temperature.

4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
2/3 cup 2% buttermilk
3 large tomatoes, peeled and sliced thin
8 asparagus spears, lightly steamed
salt and pepper, to taste
2 teaspoons basil, fresh chopped
2 teaspoons chives, fresh chopped
1 1/2 teaspoons oregano, fresh chopped
1 cup low-fat mayonnaise, Hellman's
2/3 cup cheddar cheese, grated
1/2 cup mozzarella cheese, grated
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375°F.
  • In a medium sized bowl, mix together the flour, baking powder, salt and cream of tartar.
  • Cut in the butter.
  • Swiftly add the buttermilk to the dry mixture but be careful not to 'over mix'.
  • Pat the dough evenly into a greased 9" pie plate.
  • Layer the tomato slices and sprinkle with the salt, pepper and fresh herbs.
  • In a large bowl, mix together the mayonnaise and the three cheeses.
  • Spread the cheese mixture over the tomato slices.
  • Arrage the asparagus spears on top as wheel spokes with the asparagus tops to the center. Gently press them into the topping.
  • Place the pie on the middle rack and bake at 375F for 40 minutes or until the cheese crust is golden.
