EASY FRENCH PEACH PIE
This very rich and easy-to-make pie is a modified family recipe. It can be made with either peaches or apples.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Press pie pastry into a 9-inch pie pan.
- Fill prepared pie crust with peaches. Mix sugar, egg, flour, butter, and cinnamon together in a bowl; pour over peaches.
- Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C); bake until peach filling is bubbling and crust is lightly browned, 40 to 45 minutes.

FRENCH PEACH PIE
This is an easy impressive pie. It is also very good with fresh fruit.

Steps:
- Drain peaches, reserving 2/3 cup of syrup. Stir together pudding mix, milk, sour cream, and almond extract for 2 minutes, until very smooth. Pour filling into pie shell. Chill for 10 minutes.
- Arrange peach slices in a nice pattern over custard in pie shell.
- In a small saucepan, mix together reserved peach syrup and corn starch. Bring to a boil, and cook for 2 minutes. Remove from heat, and stir in lemon juice. Pour glaze over peaches. Chill until set. Serve.

- Prepare pastry and bake at 450 degrees for 5 minutes. Beat eggs and lemon juice. Stir in sugar and add peaches. Turn into shell. Combine cracker crumbs, nuts, and butter and sprinkle over peaches. Cover edge of pie with foil and bake at 375 degrees for 20 minutes. Remove foil and bake until set for an additional 20 to 25 minutes. Cool on wire rack. Cover and chill before serving.
