2 tablespoons olive oil
1 ½ cups chopped onion
¼ teaspoon kosher salt
1 cup sour cream
1 cup mayonnaise
½ teaspoon garlic powder
¼ teaspoon ground white pepper
½ teaspoon kosher salt

Steps:

  • Heat the oil in a large skillet over medium heat; add the onions and 1/4 teaspoon of kosher salt. Cook and stir until the onions are caramelized to a nice golden brown, about 20 minutes. Remove the onions from the heat and cool.
  • Mix together the sour cream, mayonnaise, garlic powder, white pepper, and remaining kosher salt. Stir in the onions when they are cool. Cover and refrigerate the dip for at least 2 hours before serving.

2 tablespoons canola oil
1 tablespoon butter
2 Vidalia onions, sliced into 1/4-inch rings (about 4 cups)
2 large shallots, sliced into 1/8-inch rings (about 1/2 cup)
2 cups sour cream
1 cup mayonnaise
1 teaspoon celery salt
1 teaspoon Worcestershire
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • In a large saute pan over low heat, add oil and butter. When butter is melted, add onions and saute stirring occasionally until golden brown and caramelized, about 35 minutes. Add shallots and some salt and saute for 15 minutes more until onions and shallots are dark brown. Remove from heat and let cool for 5 to 6 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
  • Meanwhile, in a medium bowl, combine sour cream, mayonnaise, celery salt, Worcestershire, salt and pepper. Fold in onion mixture. Chill at least 1 hour or overnight, prior to serving.

1 tablespoons extra-virgin olive oil, a turn of the pan
1 tablespoon butter
2 medium onions, quartered lengthwise then very thinly sliced
2 cloves garlic, finely chopped
1 cube beef bouillon
1/2 cup water
Black pepper
1 teaspoon ground thyme, 1/3 palm full
2 teaspoons Worcestershire sauce, eyeball it
2 cups sour cream
8 ounces cream cheese, softened in microwave for 20 seconds on high
Pinch salt, optional
2 tablespoons chopped chives, 5 to 6 blades
2 sacks chips (recommended: Onion and Garlic flavor Terra brand Yukon gold chips or other specialty chips of choice)
2 large carrots, peeled then very thinly sliced on a heavy angle
1 very firm medium sized zucchini, very thinly sliced on a heavy angle

Steps:

  • Place a medium skillet over medium to medium high heat and add the extra-virgin olive oil and the butter. Melt butter into oil then add onions and garlic cook 10 minutes, stirring occasionally. Add bouillon cube to the pan with 1/2 cup water and cook until it "melts" coats onions, stirring frequently, 3 minutes. Season the onions with pepper, thyme and Worcestershire sauce. Remove from heat and transfer to a plate to quick-cool a bit.
  • In a medium bowl, mix together the sour cream and softened creamed cheese using a rubber spatula. Stir in the onion mixture until completely combined, add salt if necessary and adjust your seasonings. Serve at room temperature or chill. Garnish with chives.
  • Pack up chips as-is. Season the veggie chips with salt and pack up with a paper towel to capture excess moisture in a plastic food bag. If serving at home, salt vegetables in single layer, let stand 5 minutes then pat dry. Arrange chips and vegetable chips around dip and serve.

These are yummy sandwiches for those that like roast beef and French onion soup. It is mainly on the slow cooker, but it requires a bit of prep on the stove, too.

5 tablespoons olive oil, divided
2 large onions, thinly sliced
3 tablespoons butter, divided
1 teaspoon white sugar
½ teaspoon salt
3 cloves garlic, minced
9 tablespoons water
¼ cup dry vermouth
2 ½ cups beef stock
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon fresh thyme
1 bay leaf
¼ teaspoon ground black pepper
3 pounds rump roast
salt and ground black pepper to taste
8 French rolls, split
1 (6 ounce) package grated Gruyere cheese

Steps:

  • Heat 3 tablespoons olive oil over medium heat in a large, deep pot. Add onions and toss to coat with oil. Cook, stirring often, until softened, about 15 minutes. Add 1 tablespoon butter. Cook and stir until onions start to brown, about 15 minutes more.
  • Stir sugar and 1/2 teaspoon salt into the onions in the pot. Continue to cook, stirring once halfway through, until onions are well-browned, 10 to 15 minutes more. Mix in garlic and cook for 1 minute more.
  • Stir 3 tablespoons of water into the pot, scraping bits from the bottom. Let simmer for 3 minutes; repeat with an additional 3 tablespoons water. Simmer for 3 minutes more and repeat. Add vermouth; scrape bits from the bottom and sides of the pot. Cook for 4 minutes more. Add stock, Worcestershire sauce, soy sauce, thyme, and bay leaf. Simmer for 10 minutes; do not boil. Add black pepper. Discard bay leaf. Remove pot from heat and allow soup to cool. Pour into the slow cooker, but don't turn it on.
  • Trim any excess fat from the rump roast. Sprinkle all sides with salt and pepper. Heat remaining 2 tablespoons olive oil in the pot over high heat. Cook the meat, holding it down with tongs, until browned on all sides, about 10 minutes. Transfer meat carefully to the slow cooker. Spoon the soup over the meat so that it is topped with a few onions. Cover and cook on Low for 4 hours.
  • Remove meat from the slow cooker. Slice it diagonally and return slices to the slow cooker. Continue to cook on Low for 2 hours more.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread rolls with remaining 2 tablespoons butter; place face-down on a baking sheet.
  • Bake rolls in the preheated oven until beginning to brown, 8 to 10 minutes. Remove from the oven, flip, and sprinkle with Gruyere cheese. Set oven rack about 6 inches from the heat source and turn on the oven's broiler. Broil rolls until cheese is slightly bubbly and lightly browned, 2 to 4 minutes.
  • Remove meat from the slow cooker using a slotted spoon. Place on the rolls. Serve soup on the side for dipping.

I reverse-engineered Old Dutch French Onion Dip and created an easy "Fresh" alternative that I personally think tastes far better than Old Dutch or Lays without all the unpronounceable additives and preservatives. I hesitated to refer to this as a Copycat recipe, as it is an insult with how fresh, flavorful, and tasty this amazing dip truly is. Once you try this, I'm sure you would regret ever needing to buy a store bought brand version ever again! This French Onion Dip makes a perfect chip or vegetable dip and you are sure to gobble it up!! The suggested number of servings may appear to be a little high, but according to Nutritional Data, 1 suggested serving size for dip from a commercial product is 2 Tbls.

2 tablespoons unsalted butter (or you may substitute the same amount of canola oil, olive oil, sunflower oil, etc.)
1 large yellow onion, chopped (select ones weighing approx. 12oz. or 340g)
1/4 teaspoon kosher salt (for onion mixture)
2 cups sour cream
1/2 cup mayonnaise
1/2 cup shredded romano cheese
1 tablespoon sugar
1 teaspoon Worcestershire sauce

Steps:

  • Heat Butter (or oil) in Large Skillet on Med-High Heat. Add onions and 1/4 teaspoon Kosher Salt, stir occasionally to caramelize for approximately 20 min until onions are golden brown.
  • Scrape all contents of pan into a bowl and let cool to room temperature before proceeding to the next step.

POTATO CHIPS WITH FRENCH ONION DIP

What could be better than homemade potato chips? If you're used to snacking from a bag, eating these crunchy, kettle-style treats will be like tasting potato chips for the first time. They're great with Michael Ruhlman's creamy French onion dip. (His secret for perfectly caramelized onions? A little butter and a lot of patience!)

2 medium yellow onions, about 2 cups diced
1 tablespoon unsalted butter
kosher salt
1 teaspoon lemon juice
8 ounces crème fraîche
cayenne pepper
1 tablespoon minced chives
2 large russet potatoes, about 1 lb
2 quarts peanut or canola oil, approximately, depending on size and shape of cooking vessel
kosher salt

Steps:

  • French Onion Dip: To dice onions, trim the top and bottom, slice in half lengthwise, and discard skin. Lay the flat sides down and make vertical cuts, just short of the root to keep the onion intact. Stand the onion up and make several slices perpendicular to your first cuts, creating a grid that will result in an even dice. Place the onion flat side down again and slice across into a uniform dice. Place diced onions into a bowl and set aside.
  • In a medium skillet over high heat, melt the butter. Then add diced onions and a generous pinch of salt. Stir and sauté until onions begin to sweat, about 3-5 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until onions are golden brown and caramelized, 20-30 minutes. Set aside to cool, 10-15 minutes. (Makes ½-⅔ cup caramelized onions.)Meanwhile, start the potato chips.
  • In a large, heavy pot or Dutch oven over medium-high heat, add enough oil to fill halfway. (You may not need all of the oil.) Clip a deep fry thermometer onto the side of the pot and heat oil to 350 F. Assemble the dip: Stir lemon juice into the cooled caramelized onions. Add ½ cup of the onions and a pinch of cayenne to the crème fraîche, then stir to combine; add a pinch of salt. Stir, taste, and adjust seasoning; finish with chives and set aside.
  • Potato chips: Line a large bowl with two layers of paper towel to drain the chips. Trim and discard the ends of each potato. Adjust mandoline setting to 1/16-inch thick (about the thickness of a dime), then carefully slice the potatoes. Quickly but gently place ⅓ of the potato slices into the oil, one by one; spreading them out will help them fry flat and prevent sticking. (Since the chips fry so quickly, it's useful to have a second person add slices at the same time, to encourage even cooking in larger batches.) Stir and flip the potatoes with the spider strainer to separate. Then let the potatoes fry, stirring, separating, and flipping the chips as needed, and adjusting the heat to keep the temperature at 350 degrees F. Chips are done when they're a deep golden color, 4-6 minutes.
  • Transfer the chips to the paper towel-lined bowl. While the chips are still hot, sprinkle with salt while shaking to bowl to season evenly. (Seasoning and tossing immediately after frying will help chips dry while absorbing salt.) Repeat in two batches with remaining potatoes. Serve with dip.

1 loaf French bread (18 to 20 inches)
8 ounces brie cheese, rind removed, thinly sliced

  • Preheat the oven to 400 degrees F. Heat the olive oil in a medium nonstick skillet over medium heat. Add the onion and thyme sprigs, season with salt and pepper and cook, stirring occasionally, until the onion is caramelized, 15 to 17 minutes (reduce the heat if the onion is getting too dark). Add the Worcestershire sauce and cook until the skillet is dry, about 1 minute. Add the beef broth and cook, stirring, until the mixture is slightly saucy, 2 to 3 minutes. 4 large onions, thinly sliced
2 to 3 leeks, trimmed, split lengthwise, sliced into 1/2-inch pieces, cleaned and dried
4 shallots, halved and sliced
4 cloves garlic, finely chopped
1 large fresh bay leaf
About 1/2 teaspoon ground thyme
Salt and coarse black pepper
1/4 cup dry sherry
2 tablespoons Worcestershire sauce
5 cups beef stock
1 cup creme fraiche
Crusty French bread (grocery-store, soft-center, wider than baguette, about 3 to 4 inches cut into 1-inch-thick rounds/slices)
Grainy mustard or spicy mustard, such as Gulden's
Sliced Gruyere cheese, for melting
Thinly sliced scallions, for garnish

Steps:

  • Heat a soup pot over medium heat; add the butter and melt. When the butter foams, add the onions, leeks, shallots, garlic, bay leaf, thyme and salt and pepper. Partially cover and cook, stirring occasionally, until caramelized, about 35 minutes. Deglaze the pot with sherry, then add the Worcestershire and stock. Taste for seasoning when it comes to a bubble. Cool and store for a make-ahead meal.

2 large onions, halved and thinly sliced
1 clove garlic, minced
1 tablespoon fresh thyme leaves

1 demi baguette, cut on the bias into 1/4-inch thick slices
1 tablespoon dry sherry
1/2 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
8 ounces (1 bar) cream cheese, at room temperature
1 cup shredded whole milk mozzarella
1/4 cup sour cream
2 tablespoons finely grated Parmesan
1 tablespoon chopped chives

Steps:

  • Preheat the oven to broil.
  • Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the onions, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very tender and caramelized, about 15 minutes.
  • Meanwhile, melt the remaining 2 tablespoons of butter in a small saucepan over medium heat, then brush butter on both sides of the bread. Transfer to a baking sheet. Broil until lightly toasted and golden, about 1 minute per side. Set aside for serving.
  • Once the onions are caramelized, add the sherry and continue to cook until the liquid has reduced completely, about 1 minute. Pour in the beef broth and Worcestershire and scrape any brown bits from the bottom of the skillet with a wooden spoon. Simmer until the broth has reduced by half, about 2 minutes more. Remove from the heat.
  • Stir in the cream cheese, 1/2 cup of the mozzarella, sour cream and Parmesan until smooth and creamy. Top with the remaining 1/2 cup mozzarella. 1 ½ cups shredded Gruyere cheese
1 (8 ounce) package cream cheese, softened
½ cup sour cream

1 ½ cups all-purpose flour
4 eggs
2 cups seasoned bread crumbs
1 quart vegetable oil for frying

Steps:

  • Combine mozzarella cheese, Gruyere cheese, cream cheese, sour cream, onion soup mix, and rosemary in the bowl of a food processor; process until smooth, about 30 seconds.
  • Line an 8-inch square baking dish with parchment paper. Spoon cheese mixture into the dish, smoothing with a spatula. Freeze until solid, at least 1 hour.
  • Pour flour into a shallow dish. Beat 4 eggs in a small bowl. Pour bread crumbs into a separate shallow dish.

2 large onions, chopped
salt and pepper
1 tablespoon olive oil
1 1/2 cups fat free sour cream
1 cup mayonnaise
1 tablespoon garlic powder
1 teaspoon cayenne pepper (red pepper)
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup parmesan cheese, optional

Steps:

  • In a medium saute' pan, heated over medium heat, add oil and onions.
  • Caramelize the onions in oil; they will be completely browned and be reduced in size by about half.
  • This will take about 30 minutes, stir occasionally Meanwhile, in a medium bowl, stir together all the rest of the ingriedents After the onions are caramelized, remove them from heat and cool them (I never can wait to cool them, but they really should be because the dip will not be as thick and creamy if they are not) Stir the onions into the sour cream mixture; let chill for atleast 8 hours before serving.

1 tablespoon olive oil
1 large red onion, cut into thin rounds, then quartered (about 2 cups)
1 clove garlic, finely chopped
Salt and freshly ground black pepper
1/4 cup reduced-fat sour cream or nonfat yogurt
1/2 teaspoon gluten-free reduced-sodium soy sauce
10 large white mushrooms (about 1 pound total), stems removed
1/2 cup crushed unsweetened rice cereal

Steps:

  • Line a baking sheet with parchment paper and preheat the oven to 400 degrees F. Heat a large skillet over medium-high heat. Add the olive oil, onion slices, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper and cook, stirring occasionally, until the onions are softened, about 10 minutes. Reduce the heat to medium-low and cook until golden, about 10 minutes more.
  • Using a blender, puree together 1/4 cup of the caramelized onions, sour cream, soy sauce and, if necessary, 1 tablespoon water for a dip consistency. Transfer to a bowl. Stir in 1/4 cup of the caramelized onions and season with salt and pepper.
  • Meanwhile, arrange the mushroom caps on the lined baking sheet, stem-sides down, and bake, 10 minutes. Flip the mushroom caps over, draining any liquid, and mound the dip into each one. Sprinkle evenly with the cereal crumbs and bake until the mushrooms are tender and the tops are golden, about 20 minutes. Top with the remaining caramelized onions and serve.

1 medium onion, halved and sliced into petals
1 teaspoon salt
8 ounces cream cheese, softened
1 cup sour cream
1 tablespoon Worcestershire sauce
1 teaspoon dried parsley flakes

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), and select Saute function. Add butter, onion, and salt. Cook until onions are soft and caramelized, about 8 minutes. Close and lock the lid. Select Manual; set timer for 5 minutes. Allow 5 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • Select Saute function again and cook for 5 minutes or until liquid has evaporated. Turn pressure cooker off and allow to cool for 5 minutes.
