2 ounces (4 tablespoons) vodka
1 ounce (2 tablespoons) pineapple juice
1/2 ounce (1 tablespoon) Chambord* or other raspberry liqueur
For the garnish: raspberry (optional)

Steps:

  • Add the vodka, pineapple juice, and Chambord to a cocktail shaker. Fill it with ice and shake it until cold.
  • Strain into a cocktail glass. If desired, garnish with a raspberry.

1/4 cup chocolate ice cream, melted
1/4 cup chocolate liqueur
3/4 cup vodka
3/4 cup water
1/4 cup vanilla ice cream, melted
1/4 cup vanilla liqueur
1/4 cup strawberry ice cream, melted
1/4 cup strawberry schnapps
3 envelopes unflavored gelatin (recommended: Knox)

Steps:

  • In a medium saucepan over low heat, combine the chocolate ice cream, chocolate liqueur, 1/4 cup vodka, and 1/4 cup water. Add one envelope unflavored gelatin, stirring constantly until fully dissolved, about 4 minutes. Pour into an 8 by 4-inch loaf pan and chill until set, about 1 hour.
  • In a medium saucepan over low heat, combine the vanilla ice cream, vanilla liqueur, 1/4 cup vodka, and 1/4 cup water. Add one envelope unflavored gelatin, stirring constantly until fully dissolved, about 4 minutes. Remove from heat. Cool slightly. Pour the slightly cooled mixture over the chocolate layer and chill until set, about 30 minutes.
  • Repeat this process with the strawberry ice cream, strawberry schnapps, remaining 1/4 cup vodka, 1/4 cup water, and envelope of gelatin. Heating for 4 minutes, stirring until dissolved, then pouring it over the vanilla layer once cooled. Chill until set completely.
  • To serve, cut into 1 by 1-inch squares.

Make this jelly shot version of a classic dirty martini with your preferred spirit: vodka or gin.

2/3 cup seltzer water
12 pimento-stuffed martini olives, plus 3 tablespoons olive juice
One 1/4-ounce package unflavored gelatin (about 2 1/2 teaspoons)
1 cup vodka or gin
1/3 cup dry vermouth

Steps:

  • Combine the seltzer water and olive juice in a medium microwave-safe bowl. Sprinkle the gelatin on top and leave it to bloom for 5 minutes.
  • Microwave the bloomed gelatin mixture until dissolved, about 30 seconds. Stir in the vodka or gin and dry vermouth. Divide the mixture among twelve 2-ounce glasses and place an olive in each glass. Refrigerate until set, at least 3 hours.

10 1/2 ounces Stoli Blueberry vodka
2 ounces simple syrup, or to taste
3 1/2 (0.25-ounce) packets gelatin powder
60 About 60 fresh blueberries (more if the blueberries are small)

Steps:

  • To make simple syrup, combine equal parts sugar and water in a saucepan, and stir over medium heat until the sugar is dissolved. Off heat, combine the vodka and simple syrup in a small saucepan. Add gelatin powder to the vodka mixture. Heat the saucepan over low heat, stirring, until the gelatin is dissolved and incorporated into the vodka mixture, about 5 minutes. Remove the pan from the heat. Place a few blueberries in the bottom of each individual ice cube mold, and carefully pour the vodka mixture into each. Refrigerate the ice cube tray until set, preferably overnight. These cocktails will keep, refrigerated, for as long as 2 days.

ice cubes
2 fluid ounces vodka
2 fluid ounces fresh pineapple juice
½ fluid ounce raspberry-flavored liqueur (such as Chambord®)
1 slice fresh pineapple
1 (3 inch) lemon peel

Steps:

  • Fill a cocktail shaker halfway with ice cubes. Pour in vodka, pineapple juice, and raspberry-flavored liqueur. Cover and shake until the outside of the shaker has frosted.
  • Strain cocktail into a chilled martini glass and garnish with pineapple slice and lemon peel.
