FRENCH FRY BREAKFAST CASSEROLE

16 oz frozen French fries
6 eggs
½ cup half and half
½ tsp salt
Pepper to taste
½ tsp garlic powder
½ pound beef sausage (sliced)
¼ cup bacon bits (or to taste)
1 Roma tomato diced
¼ cup green onions (chopped)
¼ cup shredded cheddar cheese
¼ cup shredded mozzarella cheese
Parsley as desired

Steps:

  • Begin by warming your French fries in your casserole dish until they are hot to the touch. If using frozen fries, bake them according to the package instructions. The fries work best when slightly crispy to start, so spray them with butter or toss with oil as they bake.
  • In a mixing bowl, combine eggs, half and half, salt, pepper, and garlic powder. Whisk to combine. Pour on top of your warmed French fries.
  • On top of your French fry and egg mixture, add your desired meats, tomato, and onion, etc. Bake at 400°F for 20 minutes, or until the center of your casserole appears to be done. Remove from the oven and add cheese to the top. Place back into the oven, and bake for an additional 10 minutes, or until cheese is melted and appears to start to turn golden in color. Remove from the oven, serve, and enjoy.

A friend gave me this recipe a few years ago and it's still a family favorite. Try the recipe as is, or use cream of chicken soup for a different taste.

1 tablespoon vegetable oil
1 ½ pounds lean ground beef
½ onion, diced
½ green bell pepper, diced
salt and black pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup processed cheese sauce (such as Cheez Whiz®)
½ (28 ounce) package frozen shoestring potato fries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C), and grease a 9x13 inch baking dish.
  • Heat the oil in a skillet, and cook and stir the ground beef, onion, and green pepper over medium heat for about 15 minutes, until the meat is crumbly and no longer pink and the onion is translucent. Season with salt and pepper to taste, and stir in the condensed mushroom soup. Bring the mixture to a simmer over medium-low heat.
  • Scoop the cheese sauce into a microwaveable bowl, and melt on low power for about 30 seconds.
  • Place the ground beef mixture into the bottom of the prepared baking dish, and spread an even layer of the melted cheese sauce over the ground beef. Top with frozen shoestring fries. Bake in the preheated oven for about 20 minutes, until the fries are starting to turn golden.

This is the most crazy good breakfast casserole using the the overnight french toast concept but with french fries as the the bread and protein powder for a more healthy base!

Number Of Ingredients 5

6 ounces baked French fries
1 scoop vanilla protein powder
1/4 cup egg substitute
1/2 teaspoon cinnamon
1/2 teaspoon stevia

Steps:

  • Bake french fries as directed. Let cool and then cut up into small pieces.
  • Mix egg substitute, protein powder, cinnamon, stevia and water if needed.
  • Put fries in a greased pie pan and cover with egg mixture.
  • Bake for 15 minutes.
