SLOW-COOKER FRENCH ONION SOUP(COOK'S COUNTRY)

After quartering, slice the onions pole to pole for substantial slices that will hold up to long cooking. Beef bones are stocked in the freezer or meat section of supermarkets.

2 lbs beef bones (see note)
4 tablespoons unsalted butter
6 large yellow onions, quartered and cut into 1/4-inch-thick slices (about 4 pounds)
salt and pepper
1 tablespoon brown sugar
1 teaspoon fresh thyme, minced
5 tablespoons all-purpose flour
3/4 cup apple butter
3/4 cup dry sherry
1/4 cup soy sauce
2 cups low sodium chicken broth
2 cups low sodium beef broth
1 loaf French bread, cut into 1/2-inch slices
2 1/2 cups gruyere cheese, shredded

Steps:

  • COOK ONIONS Arrange beef bones on paper towel-lined plate. Microwave until well browned, 8 to 10 minutes. Meanwhile, set slow cooker to high. Add butter, cover, and cook until melted. Add onions, 2 teaspoons salt, 1 teaspoon pepper, brown sugar, and thyme. Stir flour, apple butter, sherry, and soy sauce together in small bowl until smooth. Pour over onions and toss to coat. Tuck bones under onions around edge of slow cooker. Cover and cook on high heat until onions are softened and deep golden brown, 10 to 12 hours. (Cooked onions can be refrigerated in airtight container for 1 day.).
  • 2. FINISH SOUP Remove bones from slow cooker. Heat chicken and beef broth in microwave until beginning to boil. Stir into slow cooker. Season with salt and pepper.
  • 3. MAKE CROUTONS Adjust oven rack to upper-middle position (about 6 inches from broiler element) and heat oven to 400 degrees. Arrange bread slices in single layer on baking sheet and bake until bread is golden at edges, about 10 minutes. Heat broiler. Divide cheese evenly among croutons and broil until melted and bubbly, 3 to 5 minutes.
  • 4. SERVE SOUP Ladle soup into bowls and top each with 2 croutons. Serve.
  • **Most soup recipes start by chopping or mincing onions. For this recipe, we wanted slices that would retain their shape through 10 to 12 hours of gentle simmering. We found that cutting onions with the grain (rather than across it) yielded slices durable enough for the slow cooker.

1/2 teaspoon salt
1/4 teaspoon pepper
8 medium potatoes, peeled and diced
4 medium onions, diced
1 white leek, sliced
2 tablespoons chopped parsley
1/2 cup cream or 1/2 cup half-and-half
2 tablespoons butter

Steps:

  • Heat chicken broth.
  • Add salt, pepper, potatoes, onions and leek.
  • Cover and simmer until potatoes are tender.
  • Remove from heat and using a potato masher, mash potatoes leaving them in pieces.
  • Add parsley, cream and butter.
  • Enjoy!

I enjoy looking through older recipe books for hidden gems. Here is one from Woman's Day: Famous French Cookery (1969) that is sure to please.

3 tablespoons butter
2 carrots, peeled and sliced into 1/4-inch rounds
3 leeks, white part only, cleaned and chopped
2 cups cabbage, chopped
2 stalks celery, cut into 1-inch lengths
1 teaspoon salt
1/2 teaspoon sugar
1 quart water
3 cups beef broth
1 cup white beans, cooked
2 medium potatoes, peeled and cubed
salt, to taste
pepper, to taste
2 tablespoons butter
6 slices French bread
swiss cheese, grated

Steps:

  • Melt 3 Tablespoons butter in a soup kettle.
  • Add carrots, leeks, cabbage and celery.
  • Saute over low heat, stirring occasionally, about 20 minutes.
  • Add salt, sugar, water and beef broth; bring to a boil.
  • Add beans and potatoes.
  • Cover, reduce heat and simmer 45 minutes or until vegetables are tender.
  • Strain vegetables, reserving the liquid.
  • With a food mill, blender or food processor, puree vegetables.
  • Return cooking liquid and puree to the soup kettle, stir to combine and reheat.
  • Season with salt and pepper if desired.
  • Meanwhile, melt 2 Tablespoons butter in a skillet.
  • Saute bread slices in butter, turning to saute both sides, until golden.
  • Place one slice of bread into each of 6 soup bowls; cover with soup.
  • Sprinkle with grated cheese.

1 sm. onion, diced
4 cloves garlic, minced
1 red bell pepper, diced
2 sm. zucchini, diced
2 sm. cans mushrooms, rinsed & drained
1 15 oz can navy beans, rinsed & drained
1 15 oz. can diced tomatoes
OR 2 fresh tomatoes, diced
2 Tbsp. tomato paste
1/2 c. long grain red rice
6 c. vegetable broth (I used bouillon)
1 heaping Tbsp. French seasoning, such as Herbs de Provence (can also use rosemary, thyme, basil & oregano - 1 tsp. each)
Olive oil for sautéing
Dash or two of paprika
Salt & Pepper to taste

Steps:

  • Saute onions and garlic with the French seasoning until the onions are translucent and the spices are fragrant. Add red bell pepper and zucchini. Saute another minute or two, then add mushrooms. (If using fresh tomatoes, sauté those for a bit before adding remaining ingredients.) Add remaining ingredients and bring to a boil. Simmer for 35-45 min. or until rice is tender. Add salt & pepper to taste. (You may need to add an additional bouillon cube when using fresh tomatoes.)

4 cups onions, sliced 1/8-inch
1/2 teaspoon fresh garlic, minced
1/4 cup fresh parsley, chopped
2 cups water
1 (10 3/4 ounce) can chicken broth
2 tablespoons Dijon mustard
1 teaspoon basil leaves
1/4 teaspoon thyme leaves
1/4 teaspoon black pepper
1/4 cup butter or 1/4 cup margarine
1 teaspoon basil leaves
1/2 teaspoon fresh garlic, minced
3 cups rye bread, cubed 1-inch
6 slices mozzarella cheese

Steps:

  • heat oven to 400 *F.
  • in a 3qt saucepan melt 2 tablespoons butter, add onion and 1/2 teaspoon garlic. cook over medium heat, stirring often, until onions are tender.
  • add remaining soup ingredients, continue cooking until heated through.
  • meanwhile in 13x9 baking pan, melt 1/4 cup butter in oven. stir in basil and 1/2 teaspoon garlic.
  • add bread cubes, toss to coat. bake 10 to 15 minutes, stirring often until toasted.
  • pour soup in oven proof bowls, place 1 cheese slice in each bowl. bake 7 to 10 minutes or until cheese is lightly browned.
  • serve with rye croutons.

1/2 lb dried navy beans or 1/2 lb dried great northern beans
6 cups water
1 lb lamb or 1 lb beef stew meat, cut into 1 inch cubes
2 medium carrots, cut into 1 inch pieces
2 stalks celery, cut into 1 inch pieces
1 large onion, cut into wedges
6 cloves garlic, minced
4 cups ready-to-serve low sodium chicken broth
1 cup dry white wine
3 bay leaves
1 1/2 teaspoons dried rosemary
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Rinse the beans, then drain.
  • ADd the beans and water to a large soup pot.
  • Bring to a boil; lower the heat and simmer for 10 minutes.
  • Take off the stove and let set for 1 hour.
  • Drain beans and rinse.
  • Transfer beans to a 6-quart slow-cooker along with stew meat, and the rest of the ingredients; stir to combine.
  • Cover and cook on LOW for 8-10 hours.
  • Take out bay leaves and adjust seasonings to taste;.
  • Serve.
