A simple recipe/method, which my very elderly French neighbour gave to me when I lived in the Poitou region of France - she had about a dozen cherry trees. The French drink this herbal "Tisane" regularly, especially ladies who diet, as the cherry stalk is known to help elimination and reduce water retention! The cherry stalks/stems contain potassium, salts and tannin, and it is known as a powerful diuretic. It is also used for preventing urinary tract infections. It is drunk by steeping the cherry stems in boiling water, and can be drunk hot or cold - with or without sugar. It has a fruity-woody flavour, and is a very refreshing drink.

2 -3 kg fresh cherry stems
1/2 liter boiling water
sugar

Steps:

  • This is a very pleasurable and easy method, whilst you are enjoying your fresh cherries, simply discard the stems/stalks and keep to one side!
  • Spread out on a drying rack - or on some newspaper in a dark, dry & airy room - cover if necessary, and allow to dry naturally for about 4 days to one week.
  • Store the dried cherry stems/stalks in an airtight jar or container.
  • When you wish to make a batch of tisane up, take a large handful of cherry stems/stalks & add to 1/2 litre boiling water; Boil for about 5 minutes and then turn the heat off and allow to steep for about 4 hours or overnight.
  • Drain well, and either drink the tisane cold or reheat and add sugar if desired.
  • Makes about 100g to 150g of cherry stalk infusion.

1 cup sugar
1 cup unsweetened instant tea
1/2 cup lemonade mix
1 ounce cherry drink mix, package
2 teaspoons cinnamon
1 teaspoon nutmeg

  • Blend all ingredients together well.and store in an airtight container.
  • Makes 5 cups of dry mix.for tea.
  • Stir in 1-2 tbls of tea mix and 1 cup hot or cold water.

Cherry stems make an enjoyable infusion, so save the stems! In France, this infusion is often taken for its detox/diuretic properties. Make a good amount of the dried cherry stems at one time, then make small amounts of tea from this when you want.

8 ounces cherries
80 cherry stems

Steps:

  • When you pit cherries, put the cherries in a bowl, and put the stems aside on some newspaper.
  • Dry the stems on the newspaper for several days in normal heat, until dry.
  • For this recipe, I gave the figure of 8 ounces, but that is arbitrary. '80 stems' is also arbitrary. I couldn't continue with the recipe any other way according to the given formats. Any amount can be done.
  • To make a reasonable amount of tea, take a small handful of cherry stems and boil them in a small saucepan of water, about 1 liter, or 2 pints. Let it all boil for 5 minutes, then remove from the heat and allow to infuse for 10 minutes or so. You will get almost 5 teacups per liter.
  • Drink 3 cups a day, at intervals away from the meal, to promote elimination.

This is my elderly French neighbour's recipe for a refreshing and popular French tisane, she drinks it almost daily as a digestif, using dried lemon verbena and mint leaves in the winter. Tisanes are popular in France, and most salons de thé serve all manner of wonderful natural tisanes and teas, with exotic herbs and spices, as well as fruit and berries. Nearly all French gardens have Lemon Verbena growing, it also grows wild on the hedgerows this far South in France, and it is added to all manner of things in the kitchen - from soups to sauces, and of course it makes a refreshing and easy drink. This can be served warm or chilled with ice. Garnish with fresh lemon verbena leaves.

10 -12 fresh lemon verbena leaves or 1 tablespoon dried lemon verbena
3 -4 fresh mint leaves or 1 teaspoon dried mint
1 strip lemon peel (optional)
boiling water

lemon slice, to serve
lemon verbena and mint leaf, to garnish

Steps:

  • Put the fresh herbs (and lemon peel if using) in to a warm teapot. Add the boiling water.
  • Allow to infuse for 5 minutes and serve warm, with sugar to taste and a slice of lemon.
  • To serve chilled, remove the mint and lemon verbena sprigs and refrigerate before serving with ice cubes and fresh sprigs of lemon verbena and mint.
