SWISS CHEESE BREAD

Steps:
- Cut bread in half crosswise. Make diagonal cuts, 1 in. apart, through bread but not through bottom. Combine all remaining ingredients. Spread half the butter mixture between bread slices. Spread remaining mixture over top and sides of bread., Place bread on double thickness of foil; cover loosely with more foil. Bake at 425° for 20-30 minutes. For last 5 minutes, remove foil covering bread to allow it to brown.

MAKE-AHEAD CHEESY GARLIC BREAD
This was inspired by SaraFish's Recipe #18914 (highly recommended). I've adjusted a few ingredients and transformed it into a make-ahead recipe that you can keep on hand in your freezer for a quick side to spaghetti, etc.

Steps:
- Split sandwich rolls in half lengthwise and set aside.
- Place peeled garlic cloves into food processor and pulse a few times to mince.
- Add softened butter, garlic powder, black pepper, and half of the cheese. Process mixture until smooth and fluffy.
- Spread generously onto each sandwich roll. Place rolls face up on a large baking sheet. Sprinkle remaining cheese onto the rolls, pressing down to make it stick. (note: you can process all the cheese with the butter, if you want. It works either way.).
- Sprinkle rolls with dried parsley.
- Cover and freeze until firm, then store in sealable freezer bags.
- When ready to bake, take out the number of frozen rolls you want to serve, and bake at 450°F for about 7-10 minutes until cheese is melted and lightly browned around the edges.

- Combine water, 3 Tbs softened butter and yeast into Kitchen Aide fitted with paddle. Let sit for a minute to proof. In a separate bowl, mix flour, salt, sugar, italian seasoning and garlic powder. Turn mixer on low speed and gradually add the flour mixture. When thoroughly combined, switch to dough hook and process on low to medium for 5 minutes.
- Place dough in a bowl. Cover and let rise for 40-60 minutes. Turn out onto floured surface and divide in half. Cut each half into 12 pieces and roll each piece into 4-6" rope. Place 2" apart on greased baking sheet. Cover and let rise until doubled (about 20 minutes). Bake at 350 for 15 minutes or until golden brown. DO NOT OVERBAKE. Immediately brush with butter and sprinkle with parmesan.
- If you like, you can freeze some of the uncooked dough by placing it on a flat surface in the freezer until solid, then transferring to a freezer bag. When you're ready to serve, place dough on a greased baking sheet and allow to thaw for 60-90 minutes. Bake as usual.
