ENGLISH MUFFIN BREAKFAST PIZZAS



English Muffin Breakfast Pizzas image

Toasted English muffins make a perfect crust for mini breakfast pizzas.

6 English muffins, split in half
PAM® Original No-Stick Cooking Spray
½ pound Odom's Tennessee Pride® Mild Country Sausage, thawed if frozen
½ cup chopped yellow onion
½ cup chopped green bell pepper
½ cup chopped fresh button mushrooms
8 eggs, beaten
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded part-skim mozzarella cheese

Steps:

  • Preheat broiler. Place English muffin halves on baking sheet; set aside. Spray large skillet with cooking spray. Heat over medium-high heat. Add sausage, onion, bell pepper and mushrooms; cook 5 minutes or until sausage is crumbled and vegetables are tender, stirring occasionally. Drain. Remove from skillet and keep warm.
  • Reduce heat to medium. Add eggs to same skillet; sprinkle with salt and black pepper. Cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
  • Broil English muffin halves 2 minutes or until toasted. Top halves evenly with sausage mixture, scrambled eggs and cheese. Broil 3 minutes more or until cheese melts. Serve immediately.

1/4 cup butter, softened
5 ounces cheddar cheese spread
1/2 lb spicy pork sausage
1 onion, chopped
12 English muffins, split

Steps:

  • Preheat oven to 350 degrees. In large bowl, combine the butter and cheese spread and blend well. Crumble the sausage into a large skillet and cook over medium heat together with the onion until sausage is cooked and onion is tender. Drain well on paper towels. Mix the cooked sausage mixture with the cheese mixture. Spread mixture generously on split side of muffin halves. Place on an ungreased cookie sheet and bake at 350 degrees for 10-15 minutes. Eat right away, if you like.
  • Cool the ones you want to freeze and freeze individually on trays. Wrap well and place in heavy duty ziplock freezer bags. To prepare, microwave each pizza for one to two minutes on high power until pizzas are hot and the cheese is melted. 24 pizzas.

1 pound ground breakfast sausage
1 (8 ounce) package refrigerated crescent rolls
1 cup frozen hash brown potatoes, thawed
1 cup shredded Cheddar cheese
5 eggs
¼ cup milk
½ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup grated Parmesan cheese

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 375 degrees F (190 degrees C).
  • Brown sausage and drain. Separate crescent roll dough into 8 triangles. Place in an ungreased 12 inch pizza pan with points toward the center. Press together to form a crust. Bottom of crust should be sealed and outside edge should be slightly raised. Spoon sausage over crust. Sprinkle with hash browns and top with cheddar cheese.
  • Beat together eggs, milk, salt and pepper; pour over crust. Sprinkle with parmesan cheese.
  • Bake in preheated oven until eggs are set, about 25 to 30 minutes.

My kids love these for a quick breakfast..my daughter thinks I should sell them! They're easy to make, and would be simple to modify to your taste.

Number Of Ingredients 4

6 English muffins
1 lb ground beef or 1 lb chorizo sausage
1 cup Cheese Whiz
1/4 cup margarine

Steps:

  • Split English muffins, place on baking sheet.
  • Cook and drain hamburg, then let cool.
  • Heat oven to 350.
  • Mix cheese whiz and margarine, then add to hamburg.
  • Spread evenly on English muffin halves.
  • Bake about 10 minutes.
  • Can be served immediately, or frozen.
  • To freeze, wrap individually in saran wrap, then combine in zip-type bag.
  • To reheat from frozen, remove saran wrap, wrap loosely in paper towel and zap in microwave on high about 2 minutes.
  • Note -- instead of the cheese whiz and margarine, sometimes I use a 30g envelope of cheese sauce mix, prepared as directed. Nacho cheese sauce mix is particularly good !
