4 tablespoons unsalted butter
1 cup sweet or yellow onion (diced)
1 1/2 cups celery (finely diced (roughly 3 large stalks))
3 tablespoons all-purpose flour
2 cups seafood stock
1 cup heavy whipping cream
1 cup whole milk
1 pound white crabmeat
1/4 cup sherry
1/2 teaspoon mace
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon hot sauce
1/2 cup freshly grated Parmesan cheese (for garnish, optional)
1/2 cup chives cut in 1/2 inch lengths (for garnish)
dash of paprika (for garnish)

Steps:

  • In a large heavy-bottomed pot, melt the butter over high medium heat, then reduce heat to medium. Saute the onion and celery until soft while stirring with a wooden spoon, about 5 minutes.
  • Whisk in the flour, and cook for 2 minutes.
  • Slowly pour in the seafood stock, whisking continuously so the crab soup remains smooth. Add the heavy cream while whisking, then repeat with the whole milk.
  • Stir in the white crab meat, sherry, and spices.
  • Turn the heat down to medium low to allow it to simmer for 5 to 8 minutes, then taste and adjust seasonings if needed.
  • Serve hot, and garnish each bowl with paprika, chives, freshly grated Parmesan cheese, or oyster crackers.
  • To warm up leftovers, pour soup into a pot set over medium heat, stirring frequently so the bottom doesn't burn.

6 tablespoons butter
2 small potatoes, peeled and cut into medium dice
1 small onion, finely diced
1 tablespoon dry mustard
1 teaspoon salt
2 tablespoons Old Bay Seasoning
1/4 cup flour
1/4 teaspoon pepper
4 cups half-and-half
2 cups milk
1 lb crabmeat (picked over for shells)
2 tablespoons dry sherry (optional)
1 tablespoon parsley

Steps:

  • In soup pot, melt the butter over medium heat.
  • Add onion, saute for 2-3 minutes.
  • Add potatoes, old bay, and mustard.
  • Decrease heat to low, cook, stirring often until potatoes are barely tender (30 minutes). Remove from heat.
  • Whisk in flour, salt and pepper. Return to medium heat and stir constantly about 2 minutes.
  • Slowly pour in half and half and milk, stirring constantly.
  • Cook over med-low heat, stirring often until thickened.
  • Add the crabmeat, simmer about 15-20 minutes.
  • When ready to serve, stir in sherry and parsley.

4 cups half-and-half, divided
¼ cup butter
3 tablespoons Old Bay Seasoning TM
½ teaspoon dry mustard
¼ teaspoon celery seed
1 cup whipping cream
1 tablespoon cooking sherry
1 pound fresh crabmeat

Steps:

  • In a medium bowl, blend flour and hollandaise sauce mix with 2 cups half-and-half.
  • Melt butter in a medium, heavy saucepan over medium heat. Slowly add hollandaise mixture, stirring constantly until thickened. Add remaining half-and-half, Old Bay, dry mustard, celery seed, and whipping cream. Bring to a simmer and reduce heat to low. Add crabmeat and sherry, stirring gently until warmed through. 1 to 2 tablespoons seafood seasoning
1 teaspoon salt
1/2 teaspoon curry powder
4 cups milk
1 pound fresh crabmeat or 3 cans (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons minced fresh parsley
Additional milk and parsley, optional

Steps:

  • Melt butter in a 3-qt. saucepan; stir in flour, seafood seasoning, salt and curry powder. Cook until thickened and bubbly. 1 medium green pepper, finely chopped
2 tablespoons butter
2 garlic cloves, minced
3 pints half-and-half cream
2 cups frozen shredded hash brown potatoes, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of asparagus soup, undiluted

1 lb maryland jumbo limp crab meat
1 Tbsp fresh parsley
3 tsp old bay seasoning
1/4 c butter
2 pt heavy whipping cream
1 qt half and half
cornstarch or flour
1/2 tsp salt
1/8 tsp pepper
1 pt milk

Steps:

  • 1. Bring milk, half and half, and heavy whipping cream to a boil.
  • 2. Add crab meat, fresh parsley, Old Bay Seasoning, butter, salt and pepper.
  • 3. When it starts to boil, make a paste of the cornstarch and water to thicken soup.
