BAKED BEAN CORN DOG CASSEROLE

This is easy, cheap, and delicious! Kids and adults alike both love it. Great for Potlucks, and only takes about 10 minutes to throw together!

4 (28 ounce) cans bushes baked beans (any flavor)
20 -25 hot dogs
2 (8 1/2 ounce) boxes Jiffy cornbread mix
3 cups shredded sharp cheddar cheese
2/3 cup milk (for cornbread mix)
2 eggs (for cornbread mix)
2 cups creamed corn (1 regular size can)

Steps:

  • Preheat oven to 350°F.
  • Put beans into large baking pan.
  • Slice hot dogs into 1/2 inch slices and add to beans.
  • Bake for 15-20 minutes.
  • While bean and hot dog mixture is in the oven,Mix cornbread mix, milk, eggs, creamed corn, and cheese in a large bowl.
  • Once bean and hot dog mixture has baked for 15-20 minutes, spread cornbread mixture gently on top to cover.
  • Bake for 20-30 additional minutes or until cornbread is cooked through.
  • Cornbread will be moist because of corn, so don't overcook.

2 teaspoons margarine
3 tablespoons chopped onion
1 (16 ounce) can baked beans with pork
1 (16 ounce) package frankfurters, sliced
⅓ cup brown sugar
1 teaspoon prepared mustard
1 teaspoon celery salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Saute onions in butter until tender. Stir in the baked beans and sliced frankfurters. Season with brown sugar, mustard and celery salt. Transfer to a 2 quart casserole dish.
  • Bake for 40 minutes, stirring occasionally.

In Frank Stitt's 'Southern Table'. While I love sweet cornbread, my dad and his family think it is a travesty and not at all Southern. Here is a savory version, by a master Southern chef. My dad approves. Do not substitute lower fat ingredients.

2 cups self-rising yellow cornmeal (or 2 c.regular cornmeal plus 1 t. baking powder, 1 t.baking soda and 3/4 t. salt)
1/2 cup all-purpose flour
3/4 cup whole milk
3/4 cup buttermilk
1/2 cup rendered bacon fat (or 7 T. unsalted butter, melted, or if you must, 1/2 c. vegetable oil)
1 extra-large egg, lightly beaten

Steps:

  • Preheat the oven to 450°.
  • Preheat an 8-to9-inch cast-iron skillet in the hot oven.
  • Add cornmeal and flour to a large bowl; stir in the milks, a little at a time, mixing with a large wooden spoon; the batter will be quite loose.
  • Meanwhile, add the bacon fat to the preheated skillet, return it to the oven, and heat until the fat is very hot, about 5 minutes.
  • Remove the skillet from the oven; pour all but 1 tablespoon of the hot fat into the cornmeal mixture and stir to combine.
  • Add the egg and stir to combine.
  • Pour the cornmeal mixture into the hot skillet and immediately place it in the oven.
  • Bake for 20-30 minutes, until golden brown.
  • Remove from the oven and unmold; serve hot.

2 (8 1/2 ounce) packages cornbread mix
1 (28 ounce) can baked beans
4 hot dogs, halved lengthwise and sliced
1/2 lb sliced bacon, cooked and crumbled
1 cup ketchup
1/2 cup packed brown sugar
1/2 cup chopped onion
2 cups shredded part-skim mozzarella cheese

Steps:

  • Prepare corn bread batter according to package directions and set aside.
  • In a bowl, combine the beans, hot dogs, bacon, ketchup, brown sugar and onion.
  • Transfer to two greased 8-in. square baking dishes.
  • Sprinkle with cheese and top with corn bread batter.
  • Cover and freeze one casserole for up to 3 months.
  • Bake the second casserole, uncovered, at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean.
  • To use frozen casserole: Remove from the freezer 30 minutes before baking.
  • Cover and bake at 350° for 40 minutes.
  • Uncover and bake 15-20 minutes longer or until heated through.

1 package (8-1/2 ounces) cornbread/muffin mix
1 cup shredded cheddar cheese

Steps:
