1 cup butterscotch chips
1 cup creamy peanut butter
1 can (9 ounces) potato sticks (about 6 cups)

Steps:

  • In a large microwave-safe bowl in a microwave or in a large metal bowl over simmering water, melt butterscotch chips and peanut butter; stir until smooth. Gently stir in potato sticks., Drop mixture by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate 10-15 minutes or until set.

1 lb vanilla almond bark
12 oz peanut butter chips
12 1/2 oz peanuts, salted and without skins
2 can(s) potato sticks, i use one 15 oz can instead of two small cans.

Steps:

  • 1. Combine almond bark and peanut butter chips in a 2 quart microwave dish. Microwave at 50% power for 4 minutes or until melted. Stir in peanuts and potato sticks. Drop by teaspoonfuls onto waxed paper lined cookie sheets. Chill until set. Makes about 4 dozen.

This sweet and easy dessert treat is courtesy of my dear SiL...they are easy to make, and taste delicious. Good recipe for the kids to help with, and great for parties and gift giving if you put them in mini cupcake papers. The candy coating/almond bark is usually sold in packages of flat rectangles, not chips, but either could be used - 1 package is all that's required for the recipe. Unfortunately, I don't know the exact size in ounces, so this is an estimate.

1 (8 -12 ounce) package vanilla candy coating (almond bark or white chocolate coating)
1 cup creamy peanut butter
4 cups toasted rice cereal (such as Rice Krispies)
2 cups unsalted peanuts
2 cups mini marshmallows

Steps:

  • In a large stockpot, slowly melt candy coating over low heat.
  • When melted add peanut butter, stirring to mix well.
  • Add rice cereal and peanuts; stir to mix well.
  • Add marshmallows last. Once they get warm, the mixture gets very gooey.
  • Quickly drop by tablespoons onto wax paper or into muffin cups.
  • Refrigerate until hardened.
  • Enjoy!

This is one of many "NO BAKE" recipes that I keep in my recipe stash. Who doesn't love a recipe that is short, quick and resulting in something scrumptious? Really you can't go wrong by stirring something into melted chocolate or in this case a mixture of white chocolate and butterscotch.You can find me elsewhere too....

1 pkg almond bark or white chocolate waffers (12 oz.)
1 c butterscotch chips (6 oz.)
16 oz dry roasted peanuts
3 c potato stix (4 oz.)

Steps:

  • 1. In a microwave oven or in the top of a double boiler over simmering water, melt the bark and the chips together. Stir with a heatproof spatula or wooden spoon to combine.
  • 2. Mix in the nuts and potato sticks, adding additional potato sticks if desired.
  • 3. Drop by the spoonful onto waxed paper and cool completely.
  • 4. Store the in an airtight container.
  • 5. Options: You can use whatever flavor chocolates you like. Try swapping out the butterscotch for peanut butter. Or change from white chocolate to milk chocolate or dark chocolate. Try using a different nut. The possibilities are only limited by your imagination.
