ROAST BEEF SANDWICHES

- In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
- In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
- Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. Top the meat with some of the onions and watercress and cover with the tops of the roll. Serve immediately.
HOT ROAST BEEF SANDWICH WITH HORSERADISH AND CHEDDAR CHEESE
Hot roast beef, mature cheddar cheese, and a buttery horseradish-dijon sauce combine for this delectable baked sandwich combination that is served on soft Kaiser rolls!! A classic! Perfect for luncheons or entertaining, or packed into picnic lunches; great served warm, or at room temperature. Use as much roast beef and cheddar cheese as you like! Sandwiches are easily made up in advance and individually wrapped in foil, then refrigerated or frozen (use a freezer bag) for later use. Defrost overnight in the fridge, then bake as directed. Or, if frozen, bake at 300 F for about 1/2 hour until warm. Enjoy!

- Preheat oven to 350F degrees.
- In a small bowl mix together the butter, Dijon, horseradish, Worcestershire sauce, and chopped onion.
- Spread generously onto both (inner) sides of the split kaiser rolls.
- Place two slices of roast beef and one slice of cheddar cheese into each kaiser roll, and replace tops.
- Wrap each sandwich in a square of foil, sealing carefully. At this point sandwiches may be baked right away, or refrigerate or freeze (use a freezer bag) for later use.
- Bake in a preheated 350 F oven for 15-20 minutes, until hot. If frozen, bake at 300 F for about 25-30 minutes, until heated through.
- Serve hot, or at room temperature. Good with a side of soup or salad, with fresh fruit for dessert.

- Place butter, olives, mustard and pepper in a food processor; pulse until chopped. Spread butter mixture over wheat bread; top with roast beef and white bread. Cut each sandwich crosswise into thirds.

Place the bread on a grill and grill for 2 minutes per side, until the bread becomes crunchy. Remove the bread from the grill and cut each slice in half. On 12 of the bread halves, spread some of the horseradish sauce. Top the sauce with 2 ounces of roast beef. Top the beef with 1 leaf of Romaine lettuce. Place the remaining bread halves on top of the Romaine.

- Preheat the oven to 350 degrees F.
- Mix together the mayo, mustard, poppy seeds, grated onion, horseradish mayo and Worcestershire. Taste the dressing and adjust the ingredients however you wish.
- To assemble, spread the dressing on the top and bottom buns. On the bottom bun, lay on some provolone, roast beef and American cheese, and place the top bun on top. Repeat with the next sandwich.
- Wrap each sandwich in a foil square, and either bake right away or keep in the fridge. To bake right away, put them on a baking sheet in the oven until the buns are slightly crusty and the cheese is melted, 15 to 20 minutes. Great for a crowd!
ROAST BEEF AND BLEU CHEESE TEA SANDWICHES
Steps:
- In a small bowl, stir together crumbled bleu cheese, mayonnaise, and lemon juice. Set aside.
- To make sandwiches, spread bleu cheese mayonnaise on bread slices. Add watercress and roast beef. Place another slice of bread on top. Cut into quarters and serve.

It is a simple recipe that can be eaten as is or taken to another level by adding cheese, tomatoes and/or avocado. You can also use mini sourdough rolls. It seems intimidating to grill the bread. Steps:
- Whisk mayonnaise, horseradish and rosemary in small bowl to blend.
- Season dressing with salt and pepper.
- Spread bottom piece of bread with half of dressing.
- Top with roast beef, tomatoes and arugula.
- Sprinkle with salt and pepper.
- Spread remaining dressing on top piece of bread.
- Press bread, dressing side down, onto arugula.
- Cut into 4 pieces and serve.
