1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups rolled oats
2 cups whole wheat flake cereal
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the baking powder, baking soda and oats; stir into the sugar mixture. Fold in the wheat cereal, and coconut. Drop dough by teaspoonfuls onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, or until light brown.

2 tablespoons Dijon mustard
8 pita pocket halves
8 lettuce leaves
16 thin slices bologna
8 thin slices fully cooked ham
16 thin slices tomato

Steps:

  • Combine the mayonnaise and mustard; spread about 1 tablespoon into each pita half. Stuff each with one lettuce leaf, two slices of bologna, one slice of ham and two slices of tomato.

  • Prepare creamed potatoes.
  • Real or boxed kind or use leftover.
  • Place bologna on plate and top with potatoes.
  • Then top with cheese.
  • Microwave it for about 15-30 seconds.
  • Or until cheese has melted.

Recipe from Los Angeles Unified School District. Served in school cafeterias. After making these the first time, I think some dried cranberries would be good in them.

1 c butter, room temperature
1 c granulated sugar
1 c brown sugar, firmly packed
2 eggs, well beaten
1 tsp vanilla extract
2 c all purpose flour, sifted
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 c rolled oats
2 c cornflakes
1/2 c coconut
1/2 c semi-sweet chocolate chips
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 350F (for larger cookies) or 375F (for smaller cookies)
  • 2. Cream butter with granulated sugar and brown sugar until light and fluffy.
  • 3. Beat in eggs, 1 at a time. Stir in vanilla extract.
  • 4. Sift flour with baking powder, salt and baking soda. Stir into butter mixture.
  • 5. Add oats, cornflakes, coconut, chocolate chips and nuts and stir until blended.
  • 6. Drop by tablespoons onto ungreased baking sheet. Flatten to 4-inch diameter. (Use square of wax paper to keep dough from sticking to fingers or whatever you're using to flatten dough.) For small cookies, drop by rounded teaspoon. Do not flatten.
  • 7. Bake larger cookies at 350 degrees F for 10 to 12 minutes. Cookies should be slightly soft when removed from oven. Bake smaller cookies at 375 degrees F for 8 to 10 minutes.

Yield Makes about twenty 4-inch cookies

2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1 cup (packed) dark brown sugar
2 large eggs
1 teaspoon vanilla extract
3/4 teaspoon fine salt
1/2 teaspoon baking soda
1 cup unbleached all-purpose flour
2/3 cup white whole-wheat flour
1 cup semisweet chocolate chips

Steps:

  • Arrange the oven racks in the upper and lower thirds of the oven and preheat to 375°F. Line 2 large baking sheets with parchment paper or silicone sheets.
  • In the bowl of an electric mixer, cream the butter and sugars, beating at medium-high speed until fluffy, about 5 minutes. Add the eggs, vanilla, salt and baking soda and beat at medium speed just until the eggs are incorporated, 1 to 2 minutes. Add the flours and mix at low speed just until blended, scraping down the bowl as necessary. Stir in the chocolate chips.
  • Drop 6 heaping tablespoons of dough on each cookie sheet, spacing the tablespoons of dough evenly apart. Bake for 7 minutes, switch and rotate the pans and bake 5 to 7 minutes more, until the cookies are evenly golden. Let the cookies cool on the pans for a minute or two and then transfer with a spatula to racks to cool completely. Repeat with the remaining dough.

1 pouch Idahoan instant potatoes (any flavor) or homemade mashed potatoes if preferred, prepared
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°F. Fry bologna in skillet on stovetop until the edges curl or desired color is reached.
  • Place fried bologna on cookie sheet and fill each rounded bologna bowl with mashed potatoes and then sprinkle with cheese.
  • Bake in oven for 15 min or until cheese is melted.

This is just a silly kid recipe. My grandma used to make these for us. Of course, we gobbled them up! My kids liked them too. (So do I!)

6 slice(s) thick bologna, slash edges to prevent curling
1 1/2-2 cup(s) prepared mashed potatoes, leftover
- sliced velveeta or american cheese

Steps:

  • Prehat oven to 350 degrees.
  • Place bologna slices on a cookie sheet.
  • Top with a rounded scoop of mashed potatoes. I use an ice cream scoop.
  • Cut cheese slices into about 1 inch squares and press into the sides of the mound of potatoes to look like windows.
  • Bake at 350 degrees for about 20 minutes or so until until heated through.
  • You could use any other round lunch meat. My grandsons prefer deli salami or what they refer to as "greasy meat"!

1 pat butter
1 tablespoon sesame seeds
cream or custard, to serve

Steps:

  • wash,dry and cut the apple in half horizontally.
  • remove the tough part of the core.
  • leave the outside intact.
  • stuff the hollow with the micemeat then pin the 2 halfs together with toothpicks.
  • rub the outside with butter & roll with the sesame seeds.
  • bake at 375 for 30 minuites until it "lifts off" nicely.
  • serve imediatly with the cream or custard.
