1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
2 cans (20 ounces) pineapple tidbits, drained
1-1/2 cups multicolored miniature marshmallows, divided
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup chopped nuts
1/3 cup maraschino cherries, chopped

Steps:

  • In a large bowl, beat the cream cheese, milk and lemon juice until smooth. Add pineapple and 1 cup marshmallows; fold in whipped topping. Sprinkle with the nuts, cherries and remaining marshmallows. Refrigerate leftovers.

1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple tidbits, drained
6 ounces (1/2 jar) of Maraschino Cherries, drained and chopped
1 cup miniature marshmallows
1 (8 ounce) tub Cool Whip (or less) (or 2 cups real whipped cream)

Steps:

  • In a serving bowl combine drained oranges, drained pineapple, drained and chopped maraschino cherries & marshmallows. Gently mix. Add Cool Whip and gently fold until combined. Serve immediately.

I grew up eating this simple fruit dish as a side to many meals. It is quick and easy to prepare and adds a light touch to any meal. The toppings are easily adjusted to your own personal tastes. I use mayo and have tried Miracle Whip, but did not care for the Miracle Whip (my personal preference). Servings depend on the pieces of fruit in the can. Hope you enjoy!

1 (15 ounce) can pear halves or 1 (15 ounce) can pineapple rings
1/4 cup mayonnaise
1/2 cup cheddar cheese, grated or 1/2 cup cheese, of your choice
1 (6 ounce) jar whole cherries, with stems, they make it a bit more festive. (optional)

Steps:

  • Drain the fruit.
  • If using pear halves, place the fruit inside up on a fruit plate.
  • If using pineapple rings, place the ring on a fruit plate.
  • Place a dollop of mayo in the middle.
  • Sprinkle with cheese.
  • Place a cherry on top and serve.

1 can (20 ounces) unsweetened pineapple tidbits
1 can (15 ounces) pear halves in juice, drained and cubed
2 tablespoons sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 egg, beaten
1 tablespoon white vinegar
1 cup reduced-fat whipped topping

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup. Add enough water to measure 1 cup; set aside. Combine pineapple and pears in an 8-in. square dish; cover and refrigerate. , In a small saucepan, combine the sugar, flour and salt. Stir in the pineapple juice mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. , Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes., Remove from the heat. Gently stir in vinegar. Cool to room temperature without stirring. Fold in whipped topping. Spread over fruit. Cover and refrigerate for 1 hour or until chilled.
