Steps:
- Place fillets in a shallow dish. Combine lemon juice and 1 Tablespoon wine; pour over fillets. Cover and chill at least 1 hour.
- Bring water to a boil; add shrimp, and return to a boil. Reduce heat and simmer, uncovered, 3 to 5 minutes or until shrimp are pink. Drain well and rinse with cold water. Peel and devein shrimp; set aside.
- Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in next 6 ingredients and the shrimp.
- Drain fillets; roll up. Place seam side down in a lightly greased baking dish; pour sauce over top. Bake, uncovered, at 375°F for 25 minutes or until fish flakes easily, basting occasionally with sauce. Yield: 2 servings.

Steps:
- Place the flounder on a parchment paper-lined cookie sheet.
- Drizzle a splash of olive oil on top of each piece.
- Top each piece of fish with shrimp, seasoned bread crumbs, and sliced garlic.
- Season to taste.
- Drizzle butter over the top of the fish onto the bread crumbs.
- Pour wine on the cookie sheet not touching the fish. Top with slices of fresh lemons. Sprinkle with dill.
- Bake on 400 degrees preheated oven until the fish is set around 20 to 25 minutes or until the fish flakes with a fork.
- For crispier breading, you would need to broil it on high for two minutes.
- Garnish with fresh parsley and fresh lemons and lemon juice if desired.
- Optional: You can pan fry the fish with just the bread crumbs then add the seafood at the end and broil it for 3 minutes on high using cooked shrimp.

- Mix shrimp, egg, and 1/4 cup milk.
- Melt butter skillet.
- Saute chives for 1 minute.
- Add flour and cook until bubbly.
- Add shrimp mixture and cook until thickened. Split flounder, either by making a pocket or cutting them in half.
- Fill pocket with shrimp mixture; close with toothpicks.

STUFFED FLOUNDER WITH SHRIMP CREAM SAUCE
This is a recipe I have perfected over the years. Many dinner guests have enjoyed this delectable recipe. Can substitute White fish, Talapia, Orange roughy or Mahi Mahi instead.

- 1. Saute shallots and garlic in margarine. when shallots look glossy they are done. Spoon in bowl. Add crab, bread crumbs, 1/8 cup sour cream, 1 T. fresh parsley, salt and pepper, and mustard. Combine thoroughly. Spoon mixture on fillets and roll up end to end. Spray casserole dish with cooking spray. Place fillets seam side down in dish. pour water and 1/4 cup cooking wine over fish. Add 1 T. lemon juice. Sprinkle with paprika. Bake at 350 degrees for 20-25 minutes. While baking make cream sauce.
- 2. Cream sauce: In small saucepan, put sour cream and 1/4 cup cooking wine. Stir in salad shrimp. Heat thoroughly. When serving the fillets, pour over the top of fillets and sprinkle with fresh parsley. Serve with rice.
CREOLE FLOUNDER WITH SEAFOOD SAUCE
This is one of my family's favorite Creole dishes. The recipe can be made with flounder or sole fillets, but I sometimes use locally caught kingfish bass.

- In a large skillet, saute the onion, green pepper, garlic and parsley in butter until tender. Stir in flour until blended. Gradually add the cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; Stir in cheese and lemon juice; cook and stir until cheese is melted. Add crab. Cover and keep warm. , Spread mustard on both sides of fillets. Sprinkle with Creole seasoning. Place on a greased broiler pan. Broil 4-6 in. from the heat for 3-5 minutes on each side or until fish flakes easily with a fork. Top each fillet with four to five shrimp; serve over crab sauce.
