8 ounces baby shrimp (cooked)
1 egg (slightly beaten)
1/2 cup skim milk
1 tablespoon butter
1 teaspoon chives
2 teaspoons flour
16 ounces flounder fillets
2 tablespoons dry sherry
1 dash salt
1 dash white pepper

Steps:

  • Preheat oven to 300.
  • Mix shrimp, egg, and 1/4 cup milk.
  • Melt butter skillet.
  • Saute chives for 1 minute.
  • Add flour and cook until bubbly.
  • Add shrimp mixture and cook until thickened. Split flounder, either by making a pocket or cutting them in half.
  • Fill pocket with shrimp mixture; close with toothpicks.
  • Pour remaining milk and sherry over fish. Sprinkle with seasonings.
  • Bake at 300 for 30 minutes or until fish flakes easily when tested with a fork.

I created this recipe that is great served with rice pilaf and steamed vegetables. While this recipe is shown for 4 servings, it is easily halved for two servings, or doubled or tripled, etc. for larger gatherings.

1 tablespoon olive oil
2 tablespoons butter
1 small onion, chopped fine
2 garlic cloves, minced
2 stalks celery, chopped fine
1/2 red bell pepper, chopped fine
4 ounces shrimp, chopped fine (1/2 cup)
1/2 teaspoon salt (to taste)
1 teaspoon Old Bay Seasoning, to taste or 1/2 teaspoon cayenne
6 ounces lump crabmeat (or more if desired)
3 -4 tablespoons Italian seasoned breadcrumbs, more as needed
1 lb flounder (8 large fillets)
4 tablespoons butter, melted
3 tablespoons lemon juice
kosher salt, to taste
black pepper, to taste
2 teaspoons paprika
1 lemon, cut into wedges for garnish

Steps:

  • Preheat the oven to 400°F In a sauté pan, heat the olive oil and butter. Add the onions, garlic, celery, and peppers. Sauté for 2 minutes, or until the vegetables are wilted.
  • Add the shrimp and season with salt and Old Bay (to taste). Sauté for 2 minutes. Remove from the heat and place mixture into a bowl. Gently stir in the crabmeat, then the bread crumbs a little at a time, adding more as needed to gently bind. Set aside to cool.
  • Place equal amounts of filling onto each fillet and roll up. (alternatively, you can place one fillet on the baking sheet, place filling atop the fillet, then place another on top, off to the side, to resemble a pocket of stuffing).
  • Place the fish on a baking dish (seam side down if rolled). Drizzle the fish with the butter and sprinkle with lemon juice. Sprinkle top of fish with salt, black pepper and paprika.
  • Place the pan in the oven and bake for 20-25 minutes until fish is cooked thru. Remove the fish from the oven and serve with lemon wedges.

2 tablespoons unsalted butter
1 medium onion, chopped
1/2 teaspoon kosher salt, plus extra for the sweat and for seasoning fillets
1 clove garlic, minced
1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.
  • Place the heavy cream and wine into a saucepan over medium heat. Once the mixture begins to simmer, gradually add the cheese and stir until melted. Set aside and keep warm.
  • If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place the rice into a 2 1/2-quart casserole dish and spread evenly. Place each roll on top of the rice, seam side down. Pour over the cheese sauce and place in the oven for 25 minutes. Allow to cool for 5 minutes before serving.

This is a recipe I have perfected over the years. Many dinner guests have enjoyed this delectable recipe. Can substitute White fish, Talapia, Orange roughy or Mahi Mahi instead.

6 flounder fillets, washed and patted dry
2 Tbsp margarine
2 Tbsp lemon juice
2 Tbsp cooking wine
1/4 c cooking wine
1/3 c dried bread crumbs
1/8 c sour cream
1 pkg sour cream, small
1 can(s) crab meat, small
1 can(s) salad shrimp, small
2 Tbsp fresh parsley
1 tsp dijon mustard
1/4 c shallots, diced
1 clove garlic, crushed
1/4 c water
1 tsp salt
paprika
1/4 c cooking wine, for sauce
1 tsp pepper

Steps:

  • 1. Saute shallots and garlic in margarine. when shallots look glossy they are done. Spoon in bowl. Add crab, bread crumbs, 1/8 cup sour cream, 1 T. fresh parsley, salt and pepper, and mustard. Combine thoroughly. Spoon mixture on fillets and roll up end to end. Spray casserole dish with cooking spray. Place fillets seam side down in dish. pour water and 1/4 cup cooking wine over fish. Add 1 T. lemon juice. Sprinkle with paprika. Bake at 350 degrees for 20-25 minutes. While baking make cream sauce.
  • 2. Cream sauce: In small saucepan, put sour cream and 1/4 cup cooking wine. Stir in salad shrimp. Heat thoroughly. When serving the fillets, pour over the top of fillets and sprinkle with fresh parsley. Serve with rice.

FLOUNDER (OR OTHER WHITE FISH) STUFFED WITH SHRIMP

1 1/2 cups water
1/2 lb shrimp, medium size, unpeeled
1/2 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 cup blue cheese, crumbled
1 tablespoon lemon juice
2 tablespoons onions, minced
1 1/2 teaspoons fresh cilantro, minced
1/8 teaspoon pepper
24 ounces flounder fillets (you can use any thin white fish)
1/4 cup dry white wine
lemon twist, fresh cilantro sprigs, whole cooked shrimp

Steps:

  • Bring water to a boil; add 1/2 lb shrimp, and cook for 3 to 5 minutes or until shrimp turn pink. Drain well and immediately rinse with cold water. Chill. When cool, peel and devein. Chop shrimp.
  • Combine the chopped shrimp, butter, cream cheese, blue cheese, lemon juice, minced onion, cilantro, and pepper; mix well. Spread 1/4 of the shrimp mixture evenly over each fillet; roll up fillets, and place seam side down, in a lightly greased 8-inch baking dish. Pour wine over the fillets. Bake at 375 degrees for 20 minutes or until the fish flakes easily with a fork.
  • Place stuffed fillets on individual serving plates. Spoon pan juices over fillets. Garnish, if desired.

1/2 lb peeled and deveined shrimp, cut up
1/2 teaspoon minced garlic
1/3-1/2 cup unseasoned dried breadcrumbs
2 tablespoons grated parmesan cheese
1 lb flounder fillets
1/4 cup white wine or 1/4 cup nonalcoholic white wine
1/2 tablespoon parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the shrimp and garlic and cook, stirring frequently, for 5 minutes, or until the shrimp is opaque.
  • Remove to a large bowl.
  • Add the bread crumbs and cheese and stir to combine.
  • Place the flounder on a work surface.
  • Evenly divide the shrimp mixture among the fillets, spreading almost to the edge.
  • Roll the fillets from a short end to enclose the filling.
  • Secure with wooden picks.
  • Place the rolls in a 13" x 9" baking dish.
  • Pour the wine into the dish.
  • Sprinkle with the parsley.

1 tablespoon lemon juice

2-1/2 to 3 pounds fish fillets (cod, whitefish, haddock, etc.)

Steps:

  • In a large bowl, combine the first 11 ingredients and mix well. In a greased 13-in. x 9-in. microwave-safe dish, arrange the fillets with stuffing between them. I live in Florida so fish is often on the menu. You don't have to use flounder for this, any mild white fish will work.

SHRIMP STUFFING
1/2 lb peeled and deveined shrimp, roughly chopped
1 stalk(s) celery, finely diced
1/4 c onion, finely diced
1/2 Tbsp chopped parsley
few dashes tobassco to taste
1 tsp dijon mustard
few dashes worcestershire
1/2 tsp old bay seasoning
1 egg, beaten with a fork
2 Tbsp heavy cream
salt and pepper
1/2 c bread crumbs
THE FISH
4 flounder fillets
salt and pepper
butter
paprika
lemon for serving

Steps:

  • 1. Preheat oven to 350
  • 2. Spray baking pan with oil. Lay two of the fillets in the pan. Sprinkle with salt and pepper.
  • 3. Mix all the stuffing ingredients together. Divide and place on top of the fish.
  • 4. Split the remaining 2 fillets in half LENGTHWISE. Using 2 pieces, wrap them on the sides of the stuffing.
  • 5. Sprinkle with salt and pepper and paprika. Dot with butter.
  • 6. Bake for 20-25 minutes, internal temp of the stuffing should be 165.
  • 7. Serve with fresh lemon wedges.
