ONE-POT BROCCOLI CHEESE BROWN RICE
This warm and cheesy one-pot broccoli cheese brown rice is an easy, healthy, delicious side dish with both veggies and whole grains! Kids love it too!

Steps:
- Melt the butter in a medium sauce pan over medium heat. Add onion and saute for 2-3 minutes, until translucent. Add garlic and saute an additional 30 seconds.
- Add brown rice and stir to coat the rice in the butter and onions for about 1 minute.
- Add 1/2 teaspoon salt and the water and bring to a simmer. Cover the pan, reduce the heat to low and cook the brown rice for 25 minutes.
- After 25 minutes, add the chopped broccoli to the pot (right on top of the rice; no need to stir it in yet).
- Cover and cook for an additional 5 minutes. Then turn off heat and let it sit, covered, for 5-10 minutes.
- Remove lid and stir broccoli into the rice. Add the cheddar cheese and stir to get everything well mixed and let the cheese melt.
- Season to taste with salt and pepper and serve with extra cheddar cheese sprinkled on top.

- Heat the oil in a saucepan over medium heat. Stir in the onion, and cook until almost tender. Stir in rice, and continue cooking until coated with oil. When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.

FLAVOURED ONION RICE WITH BROCCOLI
Another one of my bizzare originals, that actually turned out wonderfully! This makes a light main dish along with a salad/raita, or a side dish with anything else! Steam the broccoli beforehand if you like to it more cooked. I like it crunchy! Oh, and I didn't make a spelling error; "FlavoUr" is right :)

Steps:
- Wash the rice well.
- In a saucepan, cover the rice with 1 cup water, add a little salt (around 1/4 to 1/2 teaspoon), and bring to a boil.
- Now lower the flame, cover the saucepan with a lid, leaving a small gap for the steam to escape, and cook for about 15 minutes or until the rice is cooked.
- While the rice is cooking, melt butter in a skillet and saute the onions on medium-high heat until browned.
- Remove onions from the skillet and reduce the flame to low.
- Add 1/3 cup water to the same skillet, salt to taste, and cook the broccoli in it for about 5 minutes.
- Now add the tomato paste, mix well, and cook for another minute or so.
- When all the water has evaporated, add the browned onions and the cooked rice to the skillet and mix well.
- Heat through for a minute, add salt to taste, and turn off the burner.
- Add a dash of pepper and serve hot!

- Cook onion in butter 2 to 3 minutes or until tender. Add broth; heat to boiling. Stir in rice. Heat to boiling; reduce heat.
- Cover and simmer 5 minutes. Remove from heat; stir. Cover and let stand 5 minutes. Fluff rice lightly with fork.
