A beef stir-fry that has wonderful flavors without using a ton of spices. Fresh ginger mixes will with the soy sauce and makes a quick and easy sauce. Lots of veggies add color and crunch.

2 cups brown rice
4 cups water
2 tablespoons cornstarch
2 teaspoons white sugar
6 tablespoons soy sauce
ΒΌ cup white wine
1 tablespoon minced fresh ginger
1 pound boneless beef round steak, cut into thin strips
1 tablespoon vegetable oil
3 cups broccoli florets
2 carrots, thinly sliced
1 (6 ounce) package frozen pea pods, thawed
2 tablespoons chopped onion
1 (8 ounce) can sliced water chestnuts, undrained
1 cup Chinese cabbage
2 large heads bok choy, chopped
1 tablespoon vegetable oil

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 45 to 50 minutes.
  • Combine cornstarch, sugar, soy sauce, and wine in a small bowl until smooth. Stir in ginger; toss beef in sauce to coat.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir broccoli, carrots, pea pods, and onion for 1 minute. Stir in water chestnuts, Chinese cabbage, and bok choy; cover and simmer until vegetables are tender, about 4 minutes. Remove from skillet and keep warm.
  • In same skillet, heat 1 tablespoon oil over medium-high heat. Cook and stir beef until desired degree of doneness, about 2 minutes per side for medium. Return vegetables to skillet; cook and stir until heated through, about 3 minutes. Serve over rice.

2 tablespoons cornstarch
2 teaspoons sugar
6 tablespoons soy sauce
1/4 cup white wine,apple juice or water
1 pound beef top round steak, cut into thin strips
3 cups fresh broccoli florets
2 medium carrots, thinly sliced
1 package (6 ounces) frozen pea pods, thawed
2 tablespoons chopped onion
2 tablespoons canola oil, divided
1 can (8 ounces) sliced water chestnuts, undrained
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine the cornstarch, sugar, soy sauce and wine, apple juice or water until smooth; add beef. Seal bag and turn to coat; set aside. , In a large skillet, stir-fry the broccoli, carrots, pea pods and onion in 1 tablespoon oil for 1 minute. Stir in water chestnuts. Cover and simmer for 4 minutes; remove and keep warm. , In the same skillet, stir-fry beef in remaining oil until meat reaches desired doneness. Return vegetables to pan; toss. Serve with rice.

1 lb sirloin steaks or 1 lb beef tenderloin steak, sliced thin
assorted chopped vegetables (bell peppers, carrots, celery, bean sprouts, mushrooms, bamboo, broccoli, etc.)
tofu, cubed (optional)
3 tablespoons sherry wine or 3 tablespoons apple juice
1 1/2 tablespoons soy sauce
2 teaspoons oyster sauce
1 teaspoon cornstarch
1/2 teaspoon baking soda
1/4 teaspoon salt
1 clove garlic, crushed
1 inch fresh ginger, peeled and sliced or grated
1/2 cup water
2 teaspoons cornstarch
1 tablespoon oyster sauce
1 tablespoon ketchup
1 tablespoon soy sauce
1/2 teaspoon five-spice powder (optional)

Steps:

  • Combine beef and marinade in zipper-type plastic bag.
  • Marinate in refrigerator at least 3 hours.
  • Heat 2 T oil in wok.
  • Stir-fry/pan-fry the meat in 2 batches until cooked through.
  • Remove meat to a warm dish.
  • Add chopped vegetables and a bit of oil to wok.
  • Stir-fry until crisp-tender.
  • Return meat to wok.
  • Add tofu if desired.
  • Stir-fry until heated through.
  • Add sauce; cook to desired thickness.
  • Serve with steamed jasmine rice, if desired.
