BANANA PUDDING image

I got this recipe from my mom many years ago...My younger son loves banana pudding and requests it all the time. You can't get in a hurry though, it takes time for the custard to cook, but well worth it~

1/2 c granulated sugar
2 Tbsp all purpose flour
1/4 tsp salt
2 c milk
3 large eggs-separated
1 tsp vanilla extract
1 box vanilla wafers
5-6 medium banana's
1/4 c granulated sugar

Steps:

  • 1. Combine 1/2 cup sugar, flour & salt in a double boiler pot. Stir in milk, whisk to blend well. Cook over boiling water until begins to thicken. Stirring constantly.
  • 2. Remove from boiling water. Beat 3 egg yolks, adding slowly to the thickened milk. Whisk well, Return top of boiler to boiling water. Cook about 10 minutes or until thickened as custard should be; stirring constantly.
  • 3. Remove from heat; Add vanilla. Stir well.
  • 4. Preheat oven to 425 degrees.
  • 5. Line a 2 quart dish with vanilla wafers. Then add a layer of sliced banana's, and a layer of the pudding. I continue layering until out of custard.
  • 6. Beat egg whites with the 1/4 cup sugar until stiff peaks form.
  • 7. Spread on top of pudding. Bake for 5 minutes or until evenly browned.
  • 8. Cool. Refrigerate until ready to serve~
