Fritattas and Omelets are life savers for the busy work-a-holic. :-) Despite the cholesterol, eggs are a very healthy food. (Since much of the blood-cholesterol levels doesn't come from dietary cholesterol anyway.) If you use frozen veggies this can be on the table in less then 20 minutes. I like serving this with a chunky tomato sauce and a glass of wine.

2 tablespoons olive oil, divided
1 1/2 cups frozen broccoli, chopped or 1 1/2 cups other frozen vegetables
1/2 onion, sliced
5 eggs, beaten
salt and pepper

Steps:

  • heat 1 tablespoon of the oil in a medium sized oven-proof skillet over medium heat. I use a 10-inch caste iron. When hot add the broccoli. Cook the broccoli until heated through.
  • Add 1 Tablespoon oil and the onions. Cook until the onions soften. About 5 minutes. Turn heat down to medium-low.
  • Pour the egg over the broccoli so that it is in an even layer. Cook undisturbed until the eggs just set. 5-10 minutes. (I like to cook on the stove 5 minutes and finish under the broiler for about 2-3 minutes. Both methods work just fine).

3 eggs
50 g cooked diced potatoes
50 g of grated dubliner cheese
40 g cooked shrimp
10 g chopped chives
20 g of kerrygold irish butter
salt and pepper
1 large tomatoes

Steps:

  • Chop the tomato into small cubes,.
  • Beat the eggs, season with pepper and salt.
  • In a large pan, melt the butter.
  • Add the Potato and Shrimp and cook for 2 minutes.
  • Add eggs and let cook for a few minutes.
  • Add tomato and grated cheese.
  • Finish under the grill or cover pan for a minute or two, until cheese melts and eggs are cooked to your liking.
  • Garnish with chives.
  • Serve with homemade brown bread and butter.
  • Finish breakfast with more brown bread, butter and Irish Marmalade!

Delicious omelette filled with cheese and an herb, mushroom and onion mix. The flavors go exceptionally well together and create a completely new flavor inside the egg. Omelette making technique is from Julia Child's "Mastering the Art of French Cooking."

4 white mushrooms
1/2 small white onion
1 teaspoon minced garlic
2 slices American cheese
3 eggs
1 1/4 tablespoons butter
1 teaspoon basil
1 pinch table salt
1 pinch black pepper

Steps:

  • Cut mushrooms into slices of desired size.
  • Chop small white onion into pieces.
  • Melt 1/4 tablespoon butter in a small pan over medium heat. When the melted butter has coated the pan, add the mushroom slices and onions. Sprinkle the basil over the ingredients in the pan and stir. Saute over medium heat until the mushrooms start to turn brown on the edges, about 10 minutes. When done, put to the side.
  • While the mushrooms and onions are cooking, break the eggs into a mixing bowl and add the pinches of salt and pepper. Using a fork, wisk the eggs until the yolk is just mixed with the whites.
  • THE NEXT STEPS MUST BE DONE AFTER PREPARATION IS COMPLETE, AS IT GOES VERY QUICKLY (< 1 MINUTE).
  • On high heat, melt a table spoon of butter in a pan that has a cooking surface of about 7 inches in diameter.
  • When the butter stops foaming and is about to turn brown, add the egg mixture into the pan.
  • Quickly, whisk the egg in the pan until it looks like a broken custard material. Add the cheese and mushroom/herb mixture from before and let cook for another 10 to 15 seconds.
  • Use the fork to make sure the omelette didn't stick to the pan.
  • Use the fork to flip the edge of the omelette up, and hold the pan at 45°. Use the fork and the pan itself to make the omelette roll down on itself. This technique is tricky and requires some practice, but if done right, the omelette can just roll onto a plate.
  • Garnish with parsley if desired.
  • *NOTE* - I use American cheese because it melts fast, but it is entirely possible to use other types of cheese, but take a grater to it first. Enjoy!

5 eggs
salt
pepper
3 tablespoons butter
4 button mushrooms, trimmed and sliced
1 tomatoes, peeled, seeded, and chopped
1 tablespoon chopped fresh parsley
2 tablespoons chopped mixed fresh herbs (sorrel, basil, oregano, and or or chives)

Steps:

  • In a bowl, whisk the eggs until frothy with salt and pepper and set aside.
  • Melt the butter in the 9-inch omelet pan over medium heat.
  • Add the mushrooms, season with salt and pepper, and saute until they are tender and all the liquid they released has evaporated, 2-3 minutes.
  • Stir in the tomato, parsley, and mixed herbs, increase the heat to high, and cook until very hot, about 1 minute.
  • Pour in the eggs and stir briskly with the flat of a large fork until the omelet is almost as thick as scrambled eggs.
  • Leave it to cook for 2--3 minutes.
  • It should be browned on the bottom and almost firm on top.
  • Take the pan from the heat, invert a heat-proof plate on top, and turn out the omelet onto the plate.
  • Slide the omelet back into the pan, browned side up, and quickly brown the bottom over medium heat, about 30 seconds.
  • Slide the omelet onto a warmed plate and serve hot or at room temperature, cut into wedges.
