Easy and delicious flat iron steak done in the slow cooker with portobello mushrooms and potatoes,

2-3 pounds of flat iron steak
1 pound of sliced portobello mushrooms
1 cup beef broth
1 large white onion sliced into large rings
3-4 large red potatoes washed and chopped into 1 pieces with skin still on
butter for greasing crockpot

Steps:

  • Grease the interior of your crockpot with a generous amount of butter.
  • Place the flat iron in the bottom of the crockpot.
  • Place the vegetables on top, then pour the beef broth over the top.
  • Cook on low for 6-8 hours, until the potatoes are tender.
  • Serve and enjoy!

two flatiron steaks, about 2 1/2 pounds total
big bold steak spice, as needed, recipe follows
sautéed mushroom:
2 tablespoons olive oil
1 pound baby portobellos, quartered
one half medium red onion, finely chopped
three cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoons finely ground black pepper
1/4 teaspoon dried thyme leaves
1/2 cup red wine, you should be drinking the rest of the bottle

Steps:

  • 1. in a large skillet over medium-high heat, heat the oil. Add the mushrooms, onion, and garlic and cook for about eight minutes, stirring often, until the onion is soft. Add the salt, pepper, and thyme and mix well. Add the red wine and mix well. Cook for another 6 to 7 minutes, until the liquid is mostly evaporated and the mushrooms are tender. If more liquid is needed, add more wine. Keep warm on the stove.
  • 2. Prepare the grill for cooking over direct high heat. Place the steaks directly on the cooking grate. Cook for four minutes. Flip and cook for another 3 to 4 minutes for medium rare or to your desired degree of doneness. Remove to a platter and let rest for three minutes. To serve, spoon the mushrooms over the steaks. Serves four.
  • 3. big bold steak spice: 3 tablespoon salt 1 tablespoon onion powder 1 tablespoon finely ground black pepper 1 teaspoon smoked paprika 1 teaspoon ground coriander 1 teaspoon good-quality chili powder 1 teaspoon sugar in the raw 1/2 teaspoon dry mustard mix together and keep in an airtight container. Makes about 1/2 cup.

Flat Iron Steak is a well kept secret. Full of Beef flavor, it's is one of the "perfect for the grill" steaks as it is uniform in shape and thickness. It is also a great cut for marinating. You will want a grill safe skillet for this recipe-I use cast iron.

2 flat iron steaks, 8 oz each
2 tablespoons olive oil
12 ounces cremini mushrooms, quartered
3 garlic cloves, minced
1/4 cup fresh chives, rough chop
3 tablespoons peppercorns, coarse grind
1 tablespoon Dijon mustard
1/2 cup beef broth
1/3 cup whipping cream
1 teaspoon salt
1/2 teaspoon ground cumin
1 teaspoon ground black pepper

Steps:

  • Combine the salt, ground cumin and 1 teaspoon ground black pepper.
  • Press into steaks and set aside for 30 minutes at room temperature.
  • Heat grill to medium, or if using coals until white.
  • Cook steaks 6 minutes on first side, 5 minutes on second side.
  • Remove to a plate and cover with foil.
  • In a grill safe skillet heat olive oil.
  • Add mushrooms, garlic and chives.
  • Cook for 5 minutes, remove mushroom mixture to a bowl, set aside.
  • To skillet add the coarse peppercorns, Dijon, beef broth and whipping cream.
  • Whisk well and cook for about 3 minutes, you will want this sauce more on the thick side than thin.
  • Add the cooked mushroom mixture and cook until heated through.
  • Slice steaks and top with sauce.

1 (1 pound) flat iron steak
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon vegetable oil, divided
½ pound cremini mushrooms
½ cup Burgundy wine
1 cup beef stock
1 tablespoon butter, softened
1 tablespoon all-purpose flour
½ cup heavy whipping cream
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Sprinkle both sides of flat iron steak with salt, black pepper, garlic powder, and onion powder. Heat a heavy, oven-proof skillet over medium-high heat, pour 2 teaspoons vegetable oil into the hot skillet, and heat until oil shimmers. Sear steak in the hot oil until well browned, about 3 minutes per side. Remove steak from pan and reduce heat to medium.
  • Pour 1 more teaspoon vegetable oil into skillet; cook and stir cremini mushrooms in hot oil until wilted and browned, about 10 minutes. Lower heat to medium-low; pour wine into mushrooms and bring to a boil. Cook until wine is slightly reduced, 3 to 5 minutes; add beef stock to vegetable mixture. Bring mixture to a simmer.
  • Stir butter and flour into a paste in a small bowl, using a fork. Stir flour paste into mushroom mixture and simmer until sauce is thickened, about 5 minutes. Place flat iron steak into skillet with mushroom sauce.
  • Place skillet in preheated oven and cook until steak is barely pink inside, about 10 minutes. Cut steak into thin slices on the diagonal and place meat on a platter.
  • Stir cream into mushroom sauce until heated through, 1 to 2 minutes; pour over steak and garnish with chives.
