250g jumbo porridge oats
125g butter, plus extra for the tin
125g light brown sugar
2-3 tbsp golden syrup (depending on how gooey you want it)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the oats, butter, sugar and golden syrup in a food processor and pulse until mixed - be careful not to overmix or the oats may lose their texture.
  • Lightly butter a 20 x 20cm baking tin and add the mixture. Press into the corners with the back of a spoon so the mixture is flat and score into 12 squares. Bake for around 15 mins until golden brown.

1 3/4 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon fine salt
1/8 teaspoon freshly ground nutmeg
3 tablespoons unsalted butter, plus more as needed
2 large eggs, room temperature
1 1/4 cups milk, at room temperature
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast-iron skillet or griddle over medium to medium-low heat.
  • Whisk the butter into the milk mixture, add to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium to medium low heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make one or two more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.

OLD FASHIONED FLAPJACKS

Been using this recipe for many years. It came from one of McCalls oldest cookbooks. ALWAYS use real maple syrup.

2 cups all-purpose flour (wheat can be used also or a combination of the two)
4 tablespoons sugar
2 teaspoons baking powder
6 tablespoons butter, melted
1 1/2 cups milk
1/2 teaspoon salt
2 eggs

Steps:

  • Preheat griddle so that a drop of water beads when dropped on it.
  • Combine dry ingredients.
  • Combine wet ingredients and beat well. (Do this quickly as the butter will tend to set up when it hits the cold milk).
  • Add wet ingredients to dry ingredients.
  • Mix but not too much. Batter will be slightly lumpy.
  • Drop a couple tablespoons for each pancake onto hot griddle and cook until bubbles appear in batter and bottom is golden brown.
  • Serve with real butter and real maple syrup.

1/2 cup (1 stick) unsalted butter, cut into 8 pieces
1/2 cup (packed) golden brown sugar
1/4 cup golden syrup*
2 1/3 cups quick-cooking oats (not instant or old-fashioned)
Pinch of salt

Steps:

  • Preheat oven to 350°F. Butter 8 x 8 x 2-inch metal baking pan. Combine first 3 ingredients in heavy medium saucepan. Stir constantly over medium-low heat until butter melts, sugar dissolves, and mixture is smooth. Remove from heat. Add oats and salt; stir until coated. Transfer mixture to prepared pan and spread out in even layer.
  • Bake until top is golden (edges will be darker), about 25 minutes. Cool in pan on rack 5 minutes. Cut into 4 squares; cut each into 4 triangles (mixture will still be soft). Cool completely in pan before serving.
  • A type of syrup popular in Great Britain; available at some supermarkets, specialty foods stores, and British import shops.

150g butter
75g light brown sugar
3 tbsp golden syrup
250g porridge oats

Steps:

  • Preheat the oven to 180C/160C fan oven
  • Grease the bottom of a 20cm square tin then line it with baking parchment
  • Put the butter, sugar and golden syrup into a medium pan and then leave so that the butter melts and stirring regularly
  • Once the butter is melted, bring the pan off the heat and pour in the oats, making sure to cover each oat in the mixture
  • Turn it all into the tin and make sure to spread it out evenly by using a spoon or a knife
  • Bake for 25 minutes or until brown around the sides
  • Remove from the oven and leave to cool down for 2-3 minutes in the tray then remove from the tray and leave a further 5 minutes
  • Cut the flapjack so you have four lines down and three line across, giving you lovely rectangle flapjacks

375g unsalted butter or baking margarine
225g golden syrup
200g soft brown sugar
500g porridge oats

Steps:

  • Set oven to gas mark 3, 160 C.
  • Grease a 20x30cm baking tray and line the bottom with baking parchment.
  • In a large saucepan melt butter, sugar and syrup until all mixed and runny.
  • Take the saucepan off the heat and stir in the oats until all combined.
  • Pour the mixture into the prepared baking tray and smooth even with a spatula.
  • Place in the centre of the pre-heated oven and bake for 20 - 25 minutes, until golden. (If you prefer a more chewy flapjack, it should still have a slight wobble when you take it out of the oven).
  • Allow to cool in the tin for 15 minutes, then mark lightly where you want to cut into squares. Cover with a clean tea towel until completely cooled.
  • Cut into squares and turn out.

2 cups warmed milk, 110 degrees
1 1/2 tablespoons melted butter
2 eggs, lightly beaten
1 1/2 tablespoons sugar
1 1/4 cups bread or 1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • THE NIGHT BEFORE your pancake meal, in small saucepan warm the milk to 110F (it should be baby-bottle warm), remove from heat.
  • Dissolve in yeast.
  • Let mixture stand 5 minutes.
  • Meanwhile, combine salt, sugar, and flour in a large mixing bowl.
  • Add melted butter to milk mixture.
  • Mix wet ingredients into dry and whisk until fully combined.
  • Let stand at room temperature for 1 hour , then whisk down to deflate.
  • Let stand overnight in the refrigerator or at room temperature.
  • In the morning, deflate again, whisk in beaten eggs and vanilla.
  • Batter should be runny and spread easily on the griddle.
  • Use a 12 inch skillet on medium high heat.
  • Make one large flapjack at a time by lifting the skillet off the heat while you pour ½ cup of batter, tilt the pan to cover the bottom surface completely.
  • Do not turn until all bubbles pop and the top is basically dry.
  • This will ensure a uniform golden brown color and correct texture.
  • Serve on a pre-warmed plate in stacks of 2 or 3, they cool off very fast.
  • Serves 3-4.
  • Tangy, soft and chewy.
  • Store the batter one more day for a tangier taste.

300g roughly chopped dates
220g oats (whatever kind you have to hand - I use regular rolled oats)
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
A generous handful of blueberries
A dash of cinnamon or nutmeg (optional)
4 tbsp light brown sugar (or whatever kind you have to hand)
2 tablespoons golden syrup
1 tablespoon honey
100g unsalted butter

Steps:

  • Preheat your oven to 180C/160C fan Gas 4 and grease a shallow 7" square tin/pan.
  • Put the dates in a small pan with about 4 tablespoons of water and heat gently, stirring, until they form a stiff paste. If it's looking a little dry add more water and heat a bit more.
  • Whilst that's happening you can measure out your oats in a separate bowl and add the pumpkin seeds, sunflower seeds, blueberries, spices and roughly mix them all together.
  • Put the sugar, syrup, honey and butter into another large saucepan and heat gently, stirring to melt it all together. Add the oat mix and date paste then mix well.
  • Press into your tin/pan and bake for about 25 minutes or until set and light golden brown. Cut into squares when warm but leave to cool in the tin.
  • Store in an airtight container and use within a week, although I seriously doubt they'll last that long!

9 tablespoons porridge oats (chopped rolled oats)
9 tablespoons rolled oats (or you can use all porridge oats)
10 tablespoons margarine
5 tablespoons golden syrup
5 tablespoons sugar

Steps:

  • Put the margarine, sugar & golden syrup in saucepan (or microwaveable bowl if using a microwave oven) and heat until it is all liquid.
  • Meanwhile line the a square shallow baking tin with greaseproof paper. (about 8-inch tin).
  • Mix all the oats into the liquid.
  • Put the mixture into the baking tin & press flat.
  • Bake at 175 deg C (Gas Mark 4 or about 350 F) for 25 to 30 minutes.
  • Warning: the timing is tolerant but accuracy in temperature is critical.
  • Slice into 8 fingers before it sets but leave in place in tin.
  • Leave to cool and set.
  • Crunchy Flapjack:.
  • The recipe is identical to chewy version but cook at 15 deg (one Gas Mark) hotter.
  • Fruit Flapjack:.
  • The recipe is identical to above but mix in some raisins and/or sultanas before baking.

BASIC FLAPJACKS

A simple and easy way to make lovely flapjacks and you and add in whatever you want.

110g of Butter
40g of Sugar (Caster Sugar or any sugar is fine)
2 Tablespoons of Golden Syrup
175g of Porridge Oats
As much as you want of extra Ingredient of your choice: Chopped Fruits, nuts, chocolate chips..ect

Steps:

  • Line the bottom and sides of a square 20cm baking tin with baking parchment and preheat oven to 180 C/ Gas mark 4.
  • Place the butter, sugar and golden syrup into a saucepan, then with a wooden spoon stir them together on a low heat for a few minutes until melted. The sugar should be completley dissolved. If mixture starts to burn too quickly, lower your heat.
  • When melted, turn off the heat and pour your porridge oats into your pan of melted butter/sugar/ syrup mixture and stir well, next add your cherries and pecans or whatever extra ingredient you desire (marshmallows, chocolate chips, any type of nuts or fruit ect...) into your mixture then stir around until your oats and fruit/nuts/extras/ are well mixed and coated into your syrup/sugar/butter mixture. After stirring well it should have all come together to make a sticky flapjack mixture.
  • Now using a spoon, pour your flapjack mixture onto your lined baking tin, then carefully flatten down the mixture with the back of a spoon (you can also use a fork, or spatula) so your flapjack is nice and evenly spread out covering all of the bottom of your tray. Make sure you get it right into the tray corners so you get a nice square shaped flapjack.
  • When you have finished setting your flapjack into your tray, place your flapjack into the oven for 10-20 minutes. Keep checking until your flapjack is golden brown, then remove from the oven and leave to cool for at least 45 minutes or more.
  • When moderately cool, lift flapjack from tray and remove baking parchment then using a knife cut into 9 (or how ever many pieces you want) equal square pieces
  • And there you should have your own homemade tasty and yummy flapjacks! Enjoy :)

RASPBERRY HONEY FLAPJACKS

2 ripe bananas, mashed
1 apple, peeled and grated
250g rolled oats
85g dried apricot, chopped
100g raisin
85g mixed seed (we used pumpkin and sunflower)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.
  • Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days.

  • Put 3 tbsp each of the peanut butter and jam in separate small bowls and set aside. Good old American fluffy flapjacks, dotted with blueberries and drizzled with maple syrup, are sweetly enticing for their flavor and their familiarity.

Number Of Ingredients 11

1 3/4 cups all-purpose flour
3 1/2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon coarse salt
1 1/2 cups buttermilk
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 tablespoon butter, melted, plus more, softened, for skillet and serving
2 tablespoons plus 2 teaspoons vegetable oil
1 cup blueberries, plus more for garnish
Pure maple syrup, for serving

Steps:

  • Sift together flour, sugar, baking powder, and salt. Whisk together buttermilk, eggs, vanilla, 1 tablespoon butter, and 2 tablespoons oil; whisk into flour mixture. Fold in blueberries. Set batter aside.
  • Heat 1/2 teaspoon butter and remaining 2 teaspoons oil in a large nonstick skillet over medium heat. Pour in 1/3 cup batter. Cook until small bubbles form, about 3 minutes. Flip; cook until golden brown, about 3 minutes. Repeat with remaining batter, adding butter as needed. Serve with butter and syrup; garnish with berries.
