1 cup lukewarm water
2 1/2 teaspoons, or 1 package, dry yeast
2 1/4 to 2 1/2 cups unbleached flour
1 teaspoon salt
2 medium onions, sliced into thin rounds
1 cup cottage cheese or ricotta
1 cup creme fraiche or sour cream
Salt and freshly ground black pepper to taste
12 ounces slab bacon, rind removed, cut into matchstick-size pieces

Steps:

  • Combine the water, yeast and one cup of the flour in a large mixing bowl. Stir until thoroughly blended and set aside to proof the yeast, about five minutes.
  • Once proofed, add the salt, then begin adding the remaining flour, little by little, until the dough is too stiff to stir. Place the dough on a lightly floured work surface and begin kneading, adding additional flour if the dough is too sticky. Knead until the dough is smooth and satiny, about 10 minutes.
  • Once kneaded, place the dough in a bowl, cover, and let rise at room temperature until double in bulk, about one hour.
  • Punch down and let rise again, covered, until double in bulk, about one hour.
  • Preheat the oven to 450 degrees.
  • Combine the onions, cheese, creme fraiche, salt and pepper and let sit for 15 minutes to soften the onions.
  • Roll the dough on a lightly floured surface into a rectangle to fit a large baking sheet, measuring about 12 1/2 by 15 inches. Place the dough on the baking sheet.
  • Spread the onion mixture over the dough right to the edge. Sprinkle the bacon evenly over the top, then sprinkle generously with pepper.
  • Bake just until the dough is crisp, 15 to 20 minutes. Serve immediately.

Tarte flambée is an Alsatian dish composed of thin bread dough rolled out in a circle or a rectangle, which is covered by crème fraîche, onions and bacon. It is one of the most famous gastronomical specialties of the region. Depending on the area of the region, this dish can be called in Alsatian: flammekueche, in German: Flammkuchen, or, in French: tarte flambée. Flammekueche dates back to the fifteenth or sixteenth century. Legend says that the creators of this dish were those Alsatian farmers who used to bake bread once a week. A tarte flambée would be used to test the heat of their wood-fired ovens. At the peak of its temperature, the oven would also have the ideal conditions in which to bake a tarte flambée. The embers would be pushed aside to make room for the tarte in the middle of the oven, and the intense heat would be able to bake it in 1 or 2 minutes. The crust that forms the border of the tarte flambée would be nearly burned by the flames. The name itself comes from this method of baking, the English translation of the original Alsatian name meaning "baked in the flames".

1/4 cup flour
1/4 cup moderately hot water, about 110 degrees
1 tablespoon sugar
1 (1/4 ounce) package yeast
2 cups all-purpose flour
1 teaspoon salt
1/4 cup beer
6 tablespoons milk
2 tablespoons oil
1 medium onion, finely chopped (3 ounces)
1 cup creme fraiche
6 ounces soft white cheese (fromage blanc)
1/4 teaspoon pepper
1/2 teaspoon salt
4 pinches nutmeg
3 ounces bacon, chopped
arugula
lemon vinaigrette
shaved gruyere or shaved parmesan cheese
good quality olive, sliced (or chopped)
sliced grape tomatoes or chopped roma tomato

Steps:

  • Dough:.
  • Mix the starter ingredients together in a small bowl, cover tightly, and set aside in a warm place for 30 minutes.
  • When the starter is light and bubbly, mix the beer and milk into the mixture.
  • Put the flour and salt into a food processor, then, with the motor running, add the yeast mixture through the feeding tube. Process the dough until it forms a ball. Add very small amounts of additional flour or milk if necessary.
  • Process the ball until it is smooth, elastic, and warm, about 45 seconds to 1 minute.
  • Butter a medium-sized bowl, roll the ball around in the butter, then cover and let rise in a warm place until doubled. Punch down and let rise a second time.
  • Heat the oven to 450 degrees.
  • Oil a 14 x 16 inch baking sheet. Roll the dough until slightly smaller than the baking sheet. Place it on the sheet.
  • Alsatian Tarte Flambee:.
  • Heat 1 tablespoon of the oil in a nonstick skillet. Add the onion and cook, stirring, over low heat for 5 minutes or until golden brown. Let cool.
  • Combine the crème fraîche, fromage blanc, salt, pepper, and nutmeg. Add the cooled onion.
  • Heat the remaining oil in the skillet and fry the bacon until lightly browned, stirring constantly. Remove and drain through a strainer.
  • Spread the onion mixture over the dough, leaving a very small raised rim all the way around, then dot with the bacon.
  • Baking:.
  • Bake for 20 minutes, or until the tart is lightly browned.
  • Variation - Arugula Tarte Flambee:.
  • Instead of preparing the traditional Alsatian topping, proceed with baking the crust. Once the crust is baked, toss 2-3 handfuls of arugula with lemon vinaigrette. Top with shaved gruyere, olives and tomato.

My wife and I had this entree in Paris, France. It was so good that we had to order another one. The French people sure know how to cook. It is like a pizza, but 1 million times better!

18 ounces refrigerated French bread dough
1 tablespoon olive oil, or as needed
1 medium potato, thinly sliced
3 slices smoked bacon
¼ cup butter
½ cup chopped onion
¾ cup light cream
1 pinch ground nutmeg
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Roll out the bread dough into a rectangle, and spread out on a baking sheet greased with olive oil. Set aside.
  • Place potato slices in a saucepan with enough water to cover. Bring to a boil, and cook for about 5 minutes. Add bacon slices to the water, and cook for an additional 5 minutes. Drain. Remove bacon, then dice.
  • While the potatoes and bacon cook, melt the butter in a skillet over medium heat. Add the onion, and cook, stirring until tender. Remove from heat and stir in cream; season with salt, pepper and nutmeg.
  • Spread the onion mixture over the bread dough. Arrange potato slices evenly, and sprinkle with bacon.
  • Bake for 10 minutes in the preheated oven, until crust is golden on the bottom. Let stand for a few minutes before slicing.

2 1/2 cups flour
1 cup cold water
1/4 teaspoon salt
1 tablespoon instant dry yeast
1 cup Fromage Blanc
1/3 cup sour cream
1/3 cup heavy cream
Pinch nutmeg
Pinch white pepper
Pinch salt
1 tablespoon vegetable oil
1 egg yolk
1 1/2 cups thinly sliced caramelized onions
12 slices hickory smoked bacon

Steps:

  • Combine all ingredients in bowl of a large mixer. Mix with a dough hook for 5 to 7 minutes, scraping the bowl occasionally, until dough forms a sticky ball on the end of the hook. Transfer dough to a greased bowl and cover with plastic wrap. Let rise in a warm place until doubled, approximately 1 hour. Punch down and divide into 6 equal pieces. Place 1 piece of dough on a floured board and coat with flour. With a floured rolling pin, roll out dough into a rough rectangle, approximately 10 inches to 12 inches across and 1/8-inch thick using plenty of flour on both sides of dough at all times. Repeat with remaining dough. Place on parchment-lined cookie sheets. Cover and refrigerate while you prepare the topping. Dough can be prepared 1 day in advance, wrapped and refrigerated, until ready to roll.
  • For the topping: In large bowl whisk together first 8 ingredients.
  • Preheat oven to 500 degrees F. and place racks close to bottom of oven. Spread 1/2 cup topping on each piece of rolled dough. Sprinkle with onions and then bacon. Bake until brown and crisp, approximately 10 minutes, rotating sheets midway through to brown evenly. Repeat with remaining dough and topping. Cut into squares and serve immediately.

7 oz. Pate a Pain Ordinaire (bread dough) - or use puff pastry, which is simpler to do
2 tbsp peanut oil
1/2 cup fromage blanc, or cottage cheese
1 tbsp all purpose flour
salt
pepper, fresh ground
1/2 cup creme fraiche
1/4 pound smoked back, cut crosswise in 1/4 inch strips
1 small onion (about 4 oz) sliced very thin.

Steps:

  • Divide the pate a pain ordinaire into 4 equal parts, and pat the parts out into 4 rounds, each 8 inches in diameter. The circles will be quite thin. Oil a pastry sheet, using very little oil. Put the pastries on the baking sheet. Pinch up a very small edge of each pastry circle. Refrigerate Put the fromage blanc (or cottage cheese) in a food processor and process until smooth - about 30 seconds. Add the flour, salt and pepper to taste, 1 tbsp of oil and the creme fraiche. Process again until smooth - about 30 second more. Preheat the oven to 425. In a skillet, saute the bacon and onion in the remaining oil, until the onion is barely tender. Take the pastries from the refrigerator, and spread the cheese mixture over them, leaving a 1/4 inch uncovered path between the mixture and the edges of the pastries. Sprinkle the bacon and onions on top. Put the baking sheet, with the pastries, in the preheated oven and bake for 12 to 15 minutes - until the pastry is golden brown and the topping is also a little brown. Serve immediately.
