FIX-IT AND FORGET-IT CROCKPOT WHITE CHILI
I got this recipe out of "Fix-It and Forget-It Cookbook Feasting with your slow cooker" by Dawn J. Ranck and Phyllis Pellman Good. I absolutely love this in the winter. It seems to come out as more of a soup than a chili, and I highly recommend putting in at least one jalapeno because it adds to the flavor.

Steps:
- Combine all ingredients except sour cream, cheddar cheese, and chips in slow cooker.
- Cover. Cook on Low 8-10 hours, or High 4-5 hours.
- Ladle into bowls and top individual servings with sour cream, cheddar cheese, and chips.
FIX AND FORGET WHITE CHILI
Steps:
- 1. In a large skillet, cook chicken in hot oil just until lightly brown. Place beans in a slow cooker; mash slightly with a potato masher. 2. Add chicken to beans in the slow cooker. Stir in the chicken broth, undrained chile peppers, onion, cumin, garlic, cayenne pepper and salt. Cover and cook on low heat setting for 7-8 hours or on high for 3-4 hours. 3. If desired, serve with sour cream and avocado.
FIX-AND-FORGET WHITE CHILI
You thicken this slow cooker chicken chili recipe by slightly mashing the beans. If you like a thin broth, you could skip this step.

- Add chicken to slow cooker. Stir undrained chile peppers, onion, chicken broth, cumin seeds, cayenne pepper, salt, and garlic into mixture in slow cooker. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours.
- If desired, serve with sour cream and avocado. If desired, garnish with thyme sprigs. Makes 6 servings.
