Number Of Ingredients 5

1/2 cup washed and dried fresh herb leaves: rosemary, thyme or oregano, etc., or dried bay leaf Or
2 tablespoons whole spice: star anise, peppercorns, cloves, allspice, nutmeg, dried chilies, etc. Or
4 garlic cloves, lightly crushed; or 4 tablespoons fresh ginger slices, roughly chopped shallot or scallion, etc. Or A combination of your choice
Pinch salt
1 cup extra virgin olive oil

Steps:

  • Combine ingredients in a saucepan over low heat. Gently warm mixture until it bubbles, then continue to cook until oil is very fragrant, another minute or two.
  • Cool, then use a funnel to pour oil into a clean bottle or other container. Refrigerate and use within a month or so.

I just tried this cake for the first time at funeral in Chicago. After the first bite, I went in search of the cook and talked her out of the recipe. All those different extracts may sound strange, but trust me it is wonderful! At the bottom I have included Six Flavor Pound Cake and Seven Flavor Pound Cake variations. Also, you can make a 5 flavor cake with a 6 flavor glaze or any other combination.

Number Of Ingredients 20

1 cup butter, softened
1/2 cup shortening
3 cups granulated sugar
5 eggs, beaten
3 cups all-purpose flour
1/2 teaspoon baking powder
1 pinch salt
1 cup milk
1 teaspoon coconut extract
1 teaspoon lemon extract
1 teaspoon rum extract
1 teaspoon butter flavor extract
1 teaspoon vanilla extract
1/2 cup white sugar
1/4 cup water
1/2 teaspoon coconut extract
1/2 teaspoon rum extract
1/2 teaspoon butter flavor extract
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325°F.
  • Grease a 10-inch tube or Bundt cake pan.
  • In small bowl, combine flour, baking powder and salt; set aside.
  • In a measuring cup, combine the milk and 1 teaspoon of each of the 5 extracts; set aside.
  • In mixing bowl, cream butter, shortening and 3 cups of sugar until light and fluffy.
  • Add eggs one at a time and beat until smooth.
  • Beat in flour mixture alternately with milk mixture, beginning and ending with flour mixture.
  • Spoon mixture into prepared pan.
  • Bake for 1 1/2 hours, or until cake tests done.
  • Let cake cool for 5 minutes and then pour 1/2 of glaze over cake (while still in pan).
  • Let sit for another 5 minutes and then turn cake out of pan onto wire rack (with waxed paper under rack to catch drippings).
  • Slowly spoon remaining glaze onto top of hot cake.
  • Cool completely before serving.
  • To make the Five Flavor Glaze: In saucepan, combine 1/2 cup sugar, water and 1/2 teaspoon of each of the 5 extracts.
  • Bring to a boil, stirring until sugar is dissolved.
  • Variations: Six Flavor Cake/Glaze: Add 1 teaspoon of almond extract to Five Flavor Cake ingredients and 1/2 teaspoon almond extract to Five Flavor Glaze ingredients.
  • Seven Flavor Cake/Glaze: Add 1 teaspoon pineapple flavored extract to Six Flavor Cake and 1/2 teaspoon pineapple flavored extract to Six Flavor Glaze.

A light and lovely seasoned oil that works great in Asian dishes. Adapted from the China Moon Cookbook by Barbara Tropp. Wonderful for pouring over noodles and salads! It will also make a great match for fish! The oil may cloud but will not be impaired.

Number Of Ingredients 6

1 1/3 cups light olive oil (or corn oil)
1/2 cup toasted sesame oil
4 scallions, cut into 1/2-inch rings
10 slices fresh ginger, smashed (1/4-inch)
1 1/2 teaspoons crushed red pepper flakes
2 teaspoons szechwan pepper

Steps:

  • Combine all of the ingredients in a heavy 1 quart saucepan(NOT aluminum!). Rest a deep-fry thermometer on the rim of the pot. Over medium low heat, bring mixture to a bubbly 225*F, stirring occasionally. Set simmer for 15 minute, checking to make sure the temperature does not rise. Remove from heat and let stand until cool or overnight.
  • Strain the oil without pressing the solieds; discard solids.
  • Store oil in a clean glass jar at cool room temperature.

1 (9 ounce) package cream cheese
3 cups sugar
8 large eggs
3 cups cake flour (divided)
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
1/4 teaspoon rum flavoring
1/4 teaspoon butter flavoring
1/4 teaspoon coconut flavoring

Steps:

  • Cream butter, cream cheese and sugar in a large mixing bowl.
  • Add eggs alternately with flour ending with eggs; beat until fluffy.
  • Fold in extracts and flavorings.
  • Pour into well greased and floured tube or bundt pan.
  • Bake at 325°F for 1 hr 25 min (do not preheat oven).
  • When done, cool on baking rack glaze or sprinkle with powder sugar.

Steps:

  • 1. 1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a tube pan. 2. Sift the flour with the baking powder and salt. 3. Cream butter or margarine, oil, and sugar until fluffy. Add eggs one at a time, beating well after each addition. Mix in flour mixture alternately with milk, beginning and ending with flour. Mix well. Stir in 1 teaspoon each coconut flavoring, butter flavoring, rum extract, lemon extract, and vanilla extract. Pour batter into prepared pan. 4. Bake for 1 1/2 hours or until cake tests done. 5. In a small saucepan, combine water, sugar, and 1 teaspoon each coconut flavoring, butter flavoring, rum extract, vanilla extract, and almond extract. Boil until the sugar has dissolved completely.
