Number Of Ingredients 15

2 tablespoons butter
1 tablespoon olive oil
1 medium onion, coarsely chopped
6 -8 scallions, chopped
1 garlic clove, minced
2 stalks celery, chopped
2 medium cauliflower, cored and coarsely chopped
1/2 teaspoon sea salt
1/2 teaspoon curry powder (optional, I don't use it)
1/8 teaspoon fresh ground black pepper
1/2 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried savory or 1 teaspoon marjoram
6 cups chicken broth
1/2 teaspoon fresh ground nutmeg (optional, I don't use it)

Steps:

  • In a heavy soup kettle, melt butter. Add oil. Add onion, scallions, and garlic. Add celery and cauliflower. Add seasonings. Mix well and cook, uncovered, over medium heat for several minutes, stirring frequently.
  • Add chicken broth. Bring to a boil. Simmer, covered, over medium heat for 15 minutes or until cauliflower is tender. Remove cover and cool slightly.
  • Puree in small increments in blender until smooth and creamy. I leave small chunks of cauliflower.
  • Reheat adding fresh ground nutmeg, if desired.

8 cups broccoli florets
3 cooked skinless, boneless chicken breast halves, cubed
1 cup chopped walnuts
6 green onions, chopped
1 cup mayonnaise
¼ cup apple cider vinegar
¼ cup white sugar
¼ cup crumbled cooked bacon

Steps:

  • Combine broccoli, chicken, walnuts, and green onions in a large bowl.
  • Whisk mayonnaise, vinegar, and sugar together in a bowl until well blended.
  • Pour mayonnaise dressing over broccoli mixture; toss to coat.
  • Cover and refrigerate until chilled, if desired. Sprinkle with crumbled bacon to serve.

2 - chicken breasts boneless and skinless
2 cup(s) small broccoli floretes
1 clove(s) garlic, diced
1/2 cup(s) fresh parsley or 3 tablespoons dry
1/2 cup(s) chicken stock, light
SEVEN HERB DRESSINGDRESSING
1 clove(s) garlic
5 tablespoon(s) olive oil, extra virgin
2 tablespoon(s) fresh lemon juice
1/2 teaspoon(s) each of: savory, coriander. sage. sea salt, dried chervil, basil, thyme, oregano
1 teaspoon(s) mustard
1 tablespoon(s) mayonnaise or almonaise

Steps:

  • Cook chicken in broth with everything before the dressing except the broccoli. Cut into cubes and discard the broth or use elsewhere (They say disgard)
  • Put broccoli in sauce pan with water and a tsp olive oil and bring to boil and turn off hear. Let sit 15 minutes, drain.
  • In the meantime mix the dressing. Just combine it all together.
  • Toss warm broccoli and chicken with the dressing and serve on a bed of lettuce.
  • Note: I didn't have all the right herbs so I used these 1/2 tsp of each of these thyme, ameth, oregano, sage, cilantro, schwans/weber gormet bbq grill spice 1 tsp crushed garlic 1/4 tsp each celery seed and mustard seed and I used grapeseed oil in place of olive oil (To strong a taste for me... and grapeseed oil is better for you)
