Macadamia-Crusted Sea Bass with Mango Cream Sauce image

My husband and I fell in love with sea bass after we made this recipe.

½ mango - peeled, seeded and diced
½ cup heavy cream
1 teaspoon lemon juice
½ cup chopped macadamia nuts
¼ cup seasoned bread crumbs
1 teaspoon olive oil
½ teaspoon black pepper
1 pinch red pepper flakes
1 pound fresh sea bass
salt and ground black pepper to taste
2 cloves minced garlic
1 tablespoon extra virgin olive oil

Steps:

  • In a food processor, combine macadamia nuts, bread crumbs, 1 teaspoon olive oil, black pepper, and red pepper flakes. Process until smooth. Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over medium heat, combine mango, cream, and lemon juice. Bring to a boil, reduce heat, and simmer until thickened.
  • Season fish with salt and black pepper. Heat 1 tablespoon olive oil and crushed garlic in a large skillet over medium heat. Sear the sea bass on both sides, and remove from heat.
  • Transfer fish to preheated oven, and roast until cooked through. Cover the sea bass with macadamia crust, and return to the oven until crust browns. Top with the mango cream sauce.

2 (6-ounce) barramundi or swordfish steaks
White peppercorns, salt
1 egg yolk
4 tablespoons clarified butter
Juice of 1/4 lemon plus extra for sauce at the end
2 ounces Macadamia nuts, grated
1/8 cup dry sherry, warmed
1 tablespoon fresh parsley stalks, finely chopped
1 tablespoon butter

Steps:

  • Season fish with peppercorns and salt. Mix egg yolk, 2 tablespoons clarified butter and juice of 1/4 lemon together. Brush yolk mixture onto fish and press nuts into each side. Place 2 tablespoons clarified butter in frypan. When hot add fish and fry 3 minutes each side, add heated sherry and set alight. Add chopped parsley stalks. Place fish on serving dish. Add 1 tablespoon butter and extra lemon juice to frypan, pour sauce over the fish.

4 fish fillets, 180 grams each
4 teaspoons olive oil
60 g butter
1/2 cup macadamia nuts, roughy chopped
1/4 cup flat leaf parsley, roughly chopped
sea salt
fresh ground black pepper
1 lemon, cut into 4 wedges

Steps:

  • Heat the olive oil in a pan over medium heat.
  • Add the fish fillets and cook 2- 3 minuts each side( cooking time depends on the thickness of the fillets). Transfer to a warmed plate and cover with foil to keep warm.
  • Reduce heat to medium low. Add the butter and chopped macadamias. Cook, stirring, for about a minute- until the butter and nuts are light golden brown. Watch carefully as you dont want the butter to burn.
  • Remove from the heat. Season with salt and pepper. Stir in the parsley.
  • Serve the fish and spoon over the macadamin and butter sauce. Serve with lemon wedges.

MACADAMIA NUT BREADED FISH

2 1/2 cups flour
2 cups water
2 cups panko bread crumbs
1/2 cup macadamia nuts, chopped finely
6 fish fillets, boneless and skinless
Salt and pepper, to taste
Flour, to dust fillets
1/4 cup oil, to fry
Guava lime sauce, recipe follows
3/4 cup guava puree (available in fancy food shops -- substitute mango puree if needed)
1 lime, juiced
1/4 cup white wine
3/4 cup heavy cream
1 cup butter
Salt and pepper, to taste

Steps:

  • In a bowl, mix together 2 cups flour and water until smooth with the consistency of pancake batter. Mix bread crumbs and macadamia nuts together. Season fillets with salt and pepper. Lightly dust with flour. Dip fillet in batter and roll into the bread crumb/nut mixture. Reserve in the refrigerator until ready to cook.
  • Fry fillet in enough oil to coat the bottom of the skillet. Fry until golden brown and turn to cook other side. Cook through until done. Serve with Guava Lime sauce on the side or drizzle on plate before adding chicken.
  • In a saucepan, add guava puree, lime juice and white wine. Reduce by half. Add heavy cream and reduce again by half. Whisk in butter a little at a time, stirring constantly over low heat. As soon as all the butter is incorporated, remove from heat and season with salt and pepper. Strain through a fine sieve. Keep sauce warm until needed.

SEARED TOASTED MACADAMIA NUT MAHI CITRUS AKA-MISO SAUCE



Seared Toasted Macadamia Nut Mahi Citrus Aka-Miso Sauce image

Four 6-ounce mahi mahi fillets
Salt and pepper
1/2 cup unsalted butter, softened
1/2 cup macadamia nuts, toasted, ground fine
1/4 cup panko
2 tablespoons olive oil
1/2 cup dry white wine
1/4 cup heavy whipping cream
1 tablespoon aka-miso paste
1 cup unsalted butter, cut into cubes, softened
1 teaspoon lime juice
Salt and white pepper

Steps:

  • Season each fillet with salt and pepper. Mix the toasted macadamia nut into soft butter, add in panko, salt and pepper. Spread top of fish with the crust and sear quickly in 2 tablespoons of olive oil in a hot saute pan on both sides.
  • For the sauce: Reduce wine by a third. Add cream and reduce by another third. Over low heat stir in miso paste, then slowly add in butter incorporating each cube. Be careful not to heat the sauce to high, sauce will break. Finish seasoning with lime juice, salt and pepper. Be careful with the salt because the miso paste is salty too.
  • Serve the mahi mahi topped with some sauce.

Macademia Crusted Halibut with Quick Lemon Butter Cream Sauce Recipe - (4/5) image

For the sauce:
1 cup roasted salted macadamia nuts
2 cups panko breadcrumbs
1 tsp minced garlic
1 tbsp. dried parsley
2 tbsp. melted butter
1 cup all-purpose flour
3 egg whites, lightly beaten
4-6 boneless skinless halibut filets
8tbsp butter (1 stick)
1/4 cup heavy cream
Juice of 1 large lemon

Steps:

  • 1. Chop the macadamia nuts in a food process until minced. In a medium bowl, combine the nuts, breadcrumbs, garlic, parsley, a pinch of salt & pepper, and the melted butter. Gently toss with a fork until everything is evenly coated in butter. 2. Line 3 pie plates or flat open dishes in a row on your working space. Place the flour in dish #1. Place the beaten egg whites in dish #2. Place the nut/breadcrumb mixture in dish #3. Place a large cookie sheet at the end of the line. 3. Dip each halibut filet one at a time into the flour. Shake off the excess flour and gently turn over inside the egg whites to coat. Let the excess egg drip off and then place into the breadcrumb mixture. Use a spoon to cover and coat the fish with the breadcrumbs. Be sure to coat the top, bottom, and all sides. Gently transfer the coated fish to the baking sheet. Repeat with remaining fillets. 4. Store the fish in the fridge until you are ready to cook dinner. Up to 8 hours ahead of time. FOR A CRISPY COATING: Remove the fish from the fridge when you start to preheat the oven to 425 degrees. Let it slowly come to room temperature while the oven heats. 5. Transfer the fish to a clean room-temperature baking sheet just before placing it in the oven. (If the pan is chilled, the fish will steam and the bottoms will be soggy.) 6. Bake the halibut for 15 - 20 minutes until opaque and flaky. TO PREPARE THE SAUCE: 1. While the fish bakes, melt the butter over medium heat in a medium-sized sauce pan. Add the cream and lemon juice and whisk to combine. Add a pinch of salt & pepper to taste. Heat until slightly thickened and keep warm over low heat until the fish is ready. 2. Serve the lemon butter cream sauce in a small pitcher for drizzling over the fish at the table or the crust on the fish will get soggy.
