HALIBUT WITH CRAB SAUCE

A thick and creamy crab sauce tops tender halibut in this delightful dish. "It's one of our favorite fish recipes," shares Shirley West of Lynnwood, Washington.

4 halibut fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons plus 2 tablespoons butter, divided
3 tablespoons all-purpose flour
3/4 cup reduced-sodium chicken broth
1/3 cup fat-free milk
1/2 cup crabmeat, drained, flaked and cartilage removed
1/4 cup shredded Swiss cheese

Steps:

  • Place each fillet in an individual broiler-proof serving dish. Sprinkle with salt and pepper. Melt 2 teaspoons butter; drizzle over fillets. Bake, uncovered, at 350° for 15-20 minutes or until fish flakes easily with a fork. , Meanwhile, in a small saucepan coated with cooking spray, melt remaining butter. Stir in flour until smooth; gradually stir in the broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in crab. Remove from the heat; stir in cheese until melted. Pour over halibut. Broil 4-6 in. from the heat for 3-4 minutes or until lightly browned.

CRAB AND ANDOUILLE JAMBALAYA

1/4 cup extra virgin olive oil
12 ounces andouille sausages, quartered lengthwise and cut into 3/4 inch pieces
1 large onion, coarsely chopped
1 red bell pepper, finely chopped
1 celery rib, finely chopped
2 large garlic cloves, very finely chopped
1 teaspoon Old Bay Seasoning
1 1/4 cups jasmine rice, rinsed
1 1/2 cups chicken stock or 1 1/2 cups low-sodium broth
1 1/2 cups water
1 sprig thyme
kosher salt & freshly ground black pepper, to taste
8 ounces lump crabmeat
3 scallions, finely chopped
hot sauce, for serving

Steps:

  • In a medium to large enameled cast-iron pot (or any thick, good quality cookware), heat the olive oil.
  • Add the andouille and cook over med-high to high heat, stirring occasionally, until lightly browned, about 3 minutes. Transfer to a bowl.
  • Add the onion, bell pepper, celery and garlic to the same pot.
  • Cover and cook over med-high heat, stirring occasionally, until the veggies are soft, about 3 minutes.
  • Add the Old Bay, rice, andouille and cook, stirring occasionally, until the rice is opaque, about 2 minutes.
  • Add the chicken stock, water and thyme, season lightly with salt and pepper and bring to a boil - then turn heat to very low.
  • Cover and cook over very low heat until the rice is tender and the liquid is absorbed, about 15 minutes.
  • Fluff the rice with a fork and stir in the crab and scallions.
  • Cover and let stand for 2-3 minutes, just until the crab is hot.
  • Discard the thyme sprig.
  • Serve the jambalaya in bowls, passing the hot sauce at the table.

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

6 tablespoons butter, divided
1 celery rib, finely chopped
1 small onion, finely chopped
1/4 cup chopped parsley
1 (4 1/2 ounce) can crabmeat, drained & flaked
1/2 cup dry Italian breadcrumbs
1 tablespoon lemon juice
1/8 tablespoon crushed red pepper flakes
6 fish fillets (about 2 pounds total)
paprika, to taste

Steps:

  • Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
  • In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
  • Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
  • Bake for 20 -25 minutes, or until fish flakes easily with a fork.

2 ounces lump crabmeat, picked over (1/4 cup)
2 ounces andouille sausage, thinly sliced (1/4 cup)
1/2 cup dry white wine
3 tablespoons Louisiana Gold Pepper Sauce
1 tablespoon fresh lemon juice
1 scallion, thinly sliced
1 garlic clove, minced
1 1/2 sticks (6 ounces) unsalted butter, cut into tablespoons
Salt and freshly ground pepper
2 cups white rice flour or all-purpose flour, for dredging
1 large egg, lightly beaten
1/2 cup milk
1/2 cup water
Six 7-ounce red snapper fillets
1/2 cup vegetable oil

Steps:

  • In a medium skillet, combine the crab, andouille, wine, Louisiana Gold Pepper Sauce, lemon juice, scallion and garlic and simmer over moderate heat until the liquid has reduced by half, about 4 minutes. Reduce the heat to moderately low and add 3 or 4 tablespoons of the butter, shaking and swirling the pan until it is melted. Continue adding the butter a few tablespoons at a time, shaking and swirling the pan until all of the butter is incorporated and the sauce is thick and creamy; do not let the sauce boil. Season with salt and pepper and keep warm over very low heat. Put the rice flour in a shallow bowl and season it with salt and pepper. In another shallow bowl, whisk the egg with the milk and water. Dip the snapper fillets in the egg wash, then dredge them in the rice flour, pressing to help it adhere. In each of 2 very large skillets, heat 1/4 cup of the oil until shimmering. Add the snapper fillets to the skillets and fry over high heat, turning once, until golden and crisp, about 6 minutes. Spoon the sauce over the fillets.
