Well everyone loves fish chowder down here in Old Cape Cod and we like to add extras in as well such as corn, green beans, peas, etc. But it is delish as is ! I use evaporated milk alot.

Number Of Ingredients 10

1/2 lb salt pork, cut into chunks ~ or bacon fat for frying
1 c diced potatoes
4 c of water or more if needed
1 c milk
2 Tbsp all purpose flour
1 large onion, cut up
1/4 lb butter
2 bay leaves
1 small haddock, cod or hake, cut into small pieces
paprika to taste

Steps:

  • 1. Fry out the onion in the salt pork or bacon fat until it is lightly colored. Remove salt pork.
  • 2. Add fish, potatoes, bay leaves, and enough water to cover. Cook until done, about 15 minutes.
  • 3. Mix flour in milk , stirring well to avoid lumps (or shake in a bottle until smooth). Add to fish carefully , stirring slowly. Simmer gently for 5 minutes. Sprinkle with paprika if desired.

You'll think you're on Cape Cod when you taste this thick, wholesome chowder made from a recipe I've treasured for many years. It's one of my husband's favorites. He likes it more and more because over the years I've "customized" the basic recipe by including ingredients he enjoys. -Linda Lazaroff, Hebron, Connecticut

Yield 10 servings (2-1/2 quarts).

Number Of Ingredients 12

1 cup chopped onion
4 bacon strips, chopped
3 cans (12 ounces each) evaporated milk
1 can (15-1/4 ounces) whole kernel corn, undrained
1 can (6-1/2 ounces) chopped clams, undrained
3 medium potatoes, peeled and cubed
3 tablespoons butter
1 teaspoon salt
3/4 teaspoon pepper
1 pound fish fillets (haddock, cod or flounder), cooked and broken into pieces
Crumbled cooked bacon, optional
Minced chives, optional

Steps:

  • In a large saucepan, cook onion and bacon over medium heat until bacon is crisp; drain. Add milk, corn, clams, potatoes, butter, salt and pepper. Cover and cook over medium heat, stirring occasionally, until potatoes are tender, about 20 minutes., Stir in fish and heat through. Ladle into bowls. If desired, top with bacon and chives.
