BARBARA BUSH'S BARBECUED CHICKEN

2 1/2-3 lbs broiler-fryer chickens, quartered
3 tablespoons lemon juice
1 tablespoon cooking oil
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 clove garlic, minced
2 1/2 cups water
1 cup coarsely chopped onion
1/2-3/4 cup sugar
1/2 cup butter or 1/2 cup margarine
1/3 cup prepared yellow mustard
1/4 cup cider vinegar
1/2 teaspoon fresh ground black pepper
2 1/2 cups catsup
1/2 cup Worcestershire sauce
6 -8 tablespoons lemon juice
1/2 teaspoon ground red pepper

Steps:

  • Place chicken in a plastic bag set in a shallow dish.
  • For marinade, stir together 3 tablespoons lemon juice, cooking oil, salt, 1/2 teaspoon black pepper, and garlic.
  • Pour over chicken.
  • Close bag.
  • Marinate in the refrigerator for up to 24 hours, turning often.
  • In a saucepan, combine water, onion, sugar, butter, mustard, vinegar, and 1/2 teaspoon pepper.
  • Bring to boiling, reduce heat.
  • simmer, uncovered for 20 minutes.
  • Stir in catsup, Worcestershire, 6 to 8 tablespoons lemon juice, and red pepper.
  • Return to boiling, reduce heat.
  • Simmer, uncovered for 50 to 60 minutes or until reduced to about 4 cups.
  • Meanwhile, drain, chicken, disacrding marinade.
  • In a grill with a cover, arrange preheated coals around a drip pan.
  • Test for medium heat above the pan.
  • Place chicken, bone side down, on grill rack over drip pan.
  • cover and grill for 50 to 60 minutes or until chicken is done (170 degrees for breast meat and 180 degrees for thighs and legs), brushing often with barbecue sauce the last 10 minutes of grilling.
  • To serve, pass additional barbecue sauce with chicken.

Butter is a traditional ingredient in old Southern-style barbecue sauces and it's responsible for a lot of flavor here. This is a thin, tasty sauce that both goves over the meat while it's being grilled and gets passed at the table, warm.

4 tablespoons butter
1/4 cup apple cider vinegar (preferably organic)
1/4 cup ketchup
1/4 cup lemon juice, fresh
1/4 cup Worcestershire sauce
Tabasco sauce, to taste
1 tablespoon garlic, minced (optional)
salt & freshly ground black pepper, to taste

Steps:

  • Melt the butter in a small saucepan. Stir in the remaining ingredients and bring to a boil. Serve warm.

When the Bush's were in office, they had a home in Kennebunkport Maine, which was near where my cousins lived. I was lucky enough to get a small pamphlet type cookbook from her with this recipe in it. Extremely yummy.

1/4 cup(s) cider vinegar
2 1/4 cup(s) water
3/4 cup(s) sugar
1 stick(s) butter , unsalted
1/3 cup(s) mustard
2 medium onions, chopped
1/2 teaspoon(s) each....salt and pepper
1/2 cup(s) worchestershire sauce
2 1/2 cup(s) ketchup
7 to 8 teaspoon(s) lemon juice
dash(es) cayenne pepper

Steps:

  • In a pott, combine first 7 ingredients. Bring to a boil, cook over low heat until onions are tender, about 20 minutes.
  • Add remaining ingredients, stir and simmer slowly for forty five minutes.
  • Freezes and cans well.
