SAUSAGE & BUTTER BEAN STEW

Use butter beans to soak up the flavour of spicy sausages in this comforting stew. It's ideal for winter evenings and it takes less than an hour to cook

1 tbsp sunflower oil
16 chipolatas (try chorizo ones for a bit of chilli heat)
2 onions, sliced
2 celery sticks, sliced
8 garlic cloves, sliced
1 rosemary sprig
600ml chicken stock
2 x 400g cans butter beans, drained
75g butter, cubed
small pack parsley, leaves picked and chopped
2 lemons, zested
crusty bread, to serve

Steps:

  • Gently heat the oil in a large pan. Fry the sausages all over until brown, then remove and set aside. Add the onion to the pan and fry for 5-10 mins until golden and soft, then add the celery, garlic and rosemary, and cook for 2 mins more. Pour over the stock and bring to the boil.
  • Reduce the heat and simmer for 20 mins, then add the sausages back to the pan along with the butter beans. Simmer for 8 mins, then stir in the butter, parsley and lemon zest. Ladle into bowls and serve piping hot with lots of chunky bread.

1 tbsp vegetable oil
8 pork sausages
2 celery sticks , chopped
2 carrots , chopped
1 onion , chopped
1 tbsp tomato purée
400g can butter beans
400g can baked beans in tomato sauce
½ small bunch thyme
200ml hot chicken or vegetable stock
2 slices white bread , whizzed to crumbs

Steps:

  • Heat half the oil in a large casserole dish, then brown the sausages all over. Remove from the pan and set aside. Add the remaining oil, tip the veg into the dish and fry for 10 mins. Stir in the tomato purée and cook for 1 min more.
  • Heat oven to 200C/180C fan/gas 6. Return the sausages to the pan with the beans, thyme and some seasoning, then pour in the stock and bring to a simmer. Remove from the heat, sprinkle over the breadcrumbs, then bake in the oven for 25-30 mins until the crumbs are golden and the stew is bubbling.

1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. 18 ounces favorite barbecue sauce
1 small onion (minced finely)
6 ounces bacon bits

Steps:

  • In large Crockpot combine baked beans, brown sugar, barbeque sauce, and onion.
  • Set crockpot on high for 1 hour. At end of first hour dip off excess liquid before stiring.
  • Set Crockpot to med and continue cooking for 5 more hours (at end of each hour dip off excess liquid before stirring).
  • Add bacon bits before last hour of cooking.

4 tablespoons butter, divided

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups 4% cottage cheese

1 envelope onion soup mix
1 envelope leek soup mix
2 teaspoons garlic powder
1 teaspoon Creole seasoning
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, bring broth to a boil. Stir in rice; cover and remove from heat. Let stand 5 minutes. Stir in 2 tablespoons butter; set aside., Meanwhile, in a large skillet, cook beef and sausage over medium heat until no longer pink; drain. 2 cups water
1 (16 ounce) package frozen butter beans
1/2 teaspoon sea salt
1/2 cup Dijon mustard
1 tablespoon butter
1 tablespoon milk 12 links breakfast sausage
1 medium vidalia onion, diced
2 green apples, peeled and diced
1/2 cup brown sugar

Steps:

  • heat water to boiling in a saucepan an add butter beans. cover and let simmer for 25 minutes.
  • fry sausage links until just brown. remove from skillet and cut into bite sized chunks.
  • remove from skillet while leaving drippings in pan.
  • add onion over low heat , stir apples in and add brown sugar over top.
  • turn up heat to medium and let sugar thicken.
  • when sugar gets syrupy, remove from heat.
  • when beans are cooked, drain and add butter, milk, salt, and mustard and mix well.
  • turn into a buttered baking dish and lay sausage over top the spread apples, onion mixture over top.
  • bake at 350 for 30 minutes.

3 tbsp olive oil
4 pork & herb sausages
8 spring onions , finely sliced
2 x 400g cans butter beans , drained and rinsed
1 fat garlic clove , finely grated
1 large lemon , zested and juiced
wilted greens , to serve

Steps:

  • Heat grill to high. Brush 1 tbsp oil over the sausages, and grill on a tray for 20 mins, turning regularly.
  • Meanwhile, heat the rest of the oil in a saucepan over a low heat. Add most of the spring onion and cook for 5 mins until softened. Add the beans, garlic, and lemon zest and juice, cook for a few mins more, then gently mash with a potato masher to get a thick, creamy consistency. Season and cook for 5 mins more until warmed through. Scatter over the remaining spring onion and serve with the sausages and wilted greens.
