1/4 teaspoon plus 1/8 teaspoon celery salt, divided
1-1/2 to 2 cups ice cubes, divided
2 ounces vodka
1 cup tomato juice, chilled
1 tablespoon lemon juice
1-1/2 teaspoons lime juice
3/4 teaspoon Worcestershire sauce
1/2 teaspoon prepared horseradish, optional
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
OPTIONAL GARNISHES:
Celery rib, pickle spear, green and ripe olives, cucumber slice and/or cocktail shrimp

Steps:

  • Using water, moisten rim of a highball glass. Sprinkle 1/4 teaspoon celery salt on a small plate; dip rim into salt. Discard remaining celery salt from plate. Fill a shaker three-fourths full with ice. Place remaining ice in prepared glass. , Add vodka, juices, Worcestershire sauce, horseradish if desired, pepper, remaining celery salt and pepper sauce to shaker; cover and shake until condensation forms on exterior, 10-15 seconds. Strain into prepared glass. Garnish as desired.

This recipe was given to me by a girlfriend, who loves it on Salmon. It sounds like it would also work well with shellfish or chicken. After marinating, seafood (or poultry) can be grilled, pan-fried, or broiled.

1/4 cup peanut oil
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 tablespoons green onions, chopped
1 1/2 teaspoons brown sugar
1 garlic clove, minced
3/4 teaspoon grated ginger
1/2 teaspoon red chili pepper flakes (or more to taste)
1/2 teaspoon sesame oil
1 dash salt (1/8 tsp)

Steps:

  • Whisk all ingredients together in bowl; place in large resealable bag.
  • Add seafood (or poultry), seal bag, and turn several times to coat.
  • Marinate in refrigerator for 30 minutes.

1/2 cup apricot preserves
1 teaspoon canola oil
1 teaspoon soy sauce
1/2 teaspoon crushed red pepper flakes
1 pound uncooked large shrimp, peeled and deveined

Steps:

  • In a small bowl, combine the apricot preserves, oil, soy sauce and pepper flakes. Thread shrimp onto metal or soaked wooden skewers., Grill, uncovered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until shrimp turn pink, basting frequently with apricot mixture.

Mix up a pitcher of cocktails and you'll spend less time playing bartender. This sweet-tart combo of rose, sour cherries, and simple syrup starts the party off with a bang.

3/4 cup sugar
1 cup fresh or thawed frozen sour cherries, pitted
16 ounces London dry gin
1/2 cup fresh lemon juice (from about 4 lemons)
1 bottle (750 mL) chilled dry rose wine
Ice
Lemon slices, for garnish

Steps:

  • Bring sugar and 3/4 cup water to a boil in a small pot. Reduce heat, and simmer, stirring, until sugar dissolves. Remove from heat, and let cool. Simple syrup can be refrigerated up to 2 weeks.
  • Combine syrup, cherries, and gin in a 3-quart pitcher, and refrigerate until cold, at least 2 hours and up to 6 hours. Stir in lemon juice and wine. Serve over ice, and garnish with lemon slices.

2 pounds ground beef
1 onion, chopped
1 (15 ounce) can black beans, drained and rinsed
2 tablespoons chili powder
1 tablespoon ground cumin
½ teaspoon salt
4 (7 inch) flour tortillas
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (10.5 ounce) can cream of mushroom soup
1 cup shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir the ground beef with the onion in the hot skillet until completely browned, 7 to 10 minutes; drain any excess fat. Stir the black beans, chili powder, cumin, and salt to the beef mixture; cook and stir until hot, about 5 minutes. Pour the mixture into the prepared baking dish. Arrange the tortillas atop the beef mixture.
  • Mix the tomatoes with green chile peppers and cream of mushroom soup together in a bowl; spread over the tortillas. Top with the Cheddar cheese.
  • Bake in the preheated oven until cooked through and the cheese is melted completely, 25 to 30 minutes.
