1 medium onion, sliced
3/4 cup white vinegar
6 tablespoons sugar
1/4 cup water
3 teaspoons mustard seed

1 large cucumber, sliced

Steps:

  • Place tomatoes and onion in a large heatproof nonreactive bowl. In a small saucepan, combine vinegar, sugar, water, mustard seed and cayenne; bring to a boil. Cook 1 minute, stirring to dissolve sugar; pour carefully over tomato mixture. Cool completely., Stir in cucumber. Refrigerate, covered, overnight.

6 large tomatoes, peeled and quartered
1 green bell pepper, sliced in rings
1 red onion, sliced in rings
¾ cup white wine vinegar
1 ½ teaspoons celery salt
1 ½ teaspoons mustard seed
4 ½ teaspoons white sugar
⅛ teaspoon cayenne pepper
⅛ teaspoon ground black pepper
¼ cup water
1 large cucumber

Steps:

  • In a large bowl, combine the tomatoes, bell peppers and onions.
  • Prepare the dressing in a saucepan by combining the vinegar, celery salt, mustard seed, sugar, cayenne pepper, black pepper and water. Boil for 1 minute and pour hot dressing over vegetables. Refrigerate until chilled.
  • Before serving, peel and slice cucumber; add to vegetables and toss.

4 cups sugar
1 tablespoon hot pepper sauce
1/2 teaspoon crushed red pepper flakes
3 garlic cloves, peeled

Steps:

  • Drain and discard juice from pickles. In a large bowl, combine pickles, sugar, pepper sauce and pepper flakes; mix well. Cover and let stand 2 hours, stirring occasionally. Spoon pickle mixture into 3 pint-size jars; add a garlic clove to each. Cover and refrigerate 1 week before serving. Store in the refrigerator up to 1 month.

1 medium green pepper, julienned
1 small jalapeno, minced
1 medium onion, thinly sliced
3/4 cup cider vinegar
1/4 cup sugar
1-1/2 teaspoons mustard seed
1-1/2 teaspoons celery seed
1-1/2 teaspoons prepared horseradish
1 teaspoon salt
7 drops hot pepper sauce, optional
2 medium cucumbers, peeled and thinly sliced

Steps:

  • In a large bowl, combine tomatoes, green pepper, jalapeno and onion; set aside. Combine the next seven ingredients in a saucepan; bring to a boil and boil for 1 minute. Pour over vegetables. 3 roasted habanero peppers
2 tablespoons sugar
Vanilla ice cream, softened
Baked chocolate cake, sliced horizontally in 3 layers
Lime sorbet
Powdered sugar, whipped cream or sprinkles, for garnish

Steps:

  • The habanero peppers can be roasted on a gas stove top or in an oven. Before roasting the peppers, turn on the kitchen or stove exhaust fan.
  • To roast the peppers on a gas stove top, soak 3 wooden skewers in water until saturated. Skewer 1 pepper and hold over a medium-high flame. Slowly rotate the pepper over the flame until the skin is blackened and blistered. Repeat with the remaining peppers and skewers. After each pepper is roasted place in plastic bag covered with a dish towel to steam, which will help to remove the skins.
  • To roast the peppers in the oven, place an oven rack in the highest position and preheat the broiler. Put the peppers on a cookie sheet and place under the broiler. Using long handled metal tongs to rotate the peppers and broil until the skin is blackened and blistered. After each pepper is roasted place in plastic bag covered with a dish towel to steam, which will help to remove the skins.
  • Wearing gloves, remove skin, the veins, and the seeds from the habaneros. (When removing the skins, it's important to wear double layer of latex gloves or else your hands burn.)
  • To make the paste, blend the habaneros with the sugar using a mortar and pestle or a food processor (the latter is much faster).
  • Combine the habanero paste into the softened vanilla ice cream and refreeze until firm but still spreadable
  • Assemble cake in springform pan by alternating cake, lime sorbet, cake, habanero ice cream, cake and freeze until firm (8 hours or overnight).
  • Garnish with powered sugar or whipped cream and sprinkles.

2 papayas, peeled and diced
1 cup spicy picante sauce, your favorite
2 -3 tablespoons honey, to taste
3 tablespoons pineapple juice
4 tablespoons fresh lime juice
1/2 teaspoon dried ancho chile powder
1/4 teaspoon ground cumin
2 tablespoons minced fresh basil
2 tablespoons olive oil
16 butter lettuce leaves

Steps:

  • In a ceramic bowl, combine the cooked rice, shrimp, and papaya.
  • In a separate small bowl, combine the picante sauce, honey, pineapple juice, lime juice, ancho, cumin, basil, and olive oil; whisk together well to make the dressing.
  • Pour the dressing over the rice mixture and toss well to coat.
  • Chill for 1 hour.
  • To serve, place butter lettuce leaves decoratively on a platter, place salad on the leaves, and serve.
  • Note: the spicy-ness of this salad depends completely on the picante/salsa that you choose, because otherwise it does not contain any particularly spicy ingredients. Ancho chile powder is not very spicy at all - rather, it's smokey - so if you don't want it spicy, don't use picante/salsa that's too spicy for you.

2 cups half-and-half
1 cup sugar
1/4 teaspoon kosher salt
1 1/2 teaspoons vanilla extract
1/4 teaspoon cinnamon oil or cinnamon extract

  • Whisk the cream, half-and-half, sugar and salt in a bowl until the sugar dissolves. Stir in the vanilla extract and cinnamon oil. Churn in an ice cream maker. Transfer to an airtight container and freeze until firm, at least 2 hours.

I added black olives and used white onions instead of the chives. This would be better with fresh herbs. It's spicy, so serve it with some chewy bread and a mixed green salad.

2 cups sugar
2 tablespoons hot sauce, can adjust to your own taste
1/2 teaspoon red pepper flakes
2 garlic cloves, chopped
1 medium onion, thinly sliced

Steps:

  • Drain pickles, but save the juice.
  • Cut pickles into 1/4 inch slices.
  • In a large bowl mix pickle slices with all other ingredients.
  • Stir well.
  • Cover bowl and let stand for 2 hours.
  • Stir occasionally.
  • Spoon pickle mixture back into original jar.
  • Cover and refrigerate for 1 week before eating.

1/4 cup cream cheese
1/4 cup light sour cream
1/4 cup apricot jam
1/4 teaspoon crushed red pepper flakes
2 tablespoons finely chopped red bell peppers

Steps:

  • In a small mixing bowl, beat cream cheese and sour cream with an electric mixer until well blended.
  • Spoon mixture into a small bowl lined with plastic wrap or a 6-ounce ramekin.
  • Press mixture slightly to get rid of any air pockets; smooth evenly with rubber scraper.
  • Refrigerate for at least 30 minutes to firm slightly.
  • Meanwhile, in a small saucepan, heat fruit spread and red pepper flakes over medium heat until spread just begins to melt, about 3 minutes, stirring occasionally.
  • Remove from heat and stir in bell pepper.
  • Let cool to room temperature.
  • To serve, if using bowl, invert mixture onto a serving plate, remove plastic wrap, and spoon apricot mixture on top.
  • If using ramekin, top cream cheese mixture with apricot mixture.

2 tablespoons salt
2 tablespoons crushed red pepper flakes, or to taste
½ cup finely chopped fresh mint leaves
¼ cup brandy, or to taste
1 (4 pound) salmon side, bones removed with pliers
2 cups alder wood chips, soaked in water, or as needed

Steps:

  • In a bowl, mix together the brown sugar, salt, crushed red pepper flakes, mint leaves, and brandy to make a paste. Rub the paste all over the salmon, wrap in plastic wrap, and refrigerate 4 hours to overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Place soaked alder chips in a small disposable aluminum pie pan or piece of aluminum foil at the back of the grill, under the grate. Allow the wood chips to begin smoking, then turn the heat to the lowest setting, position the salmon on the grate, and close the lid. Cook and smoke the salmon until it has turned a red-brown color and flakes easily, about 45 minutes.

4 cups water
4 ancho chiles (dried poblanos), stems and seeds removed
3 cloves garlic
2 tablespoons chile soaking water, or more as needed
1 1/2 cups sour cream
Kosher salt and freshly ground black pepper

Steps:

  • Add 4 cups of water to a medium pot over high heat and bring to a boil. Put the ancho chiles in a medium bowl and pour in the boiling water. Use a plate to weigh down the chiles so they remain submerged. Soak until softened, about 20 minutes. Add the chiles, garlic, 2 tablespoons of the chile soaking water, and the sour cream to a blender and blitz until smooth. Add more of the soaking water, if needed, for consistency. Season with salt and pepper, to taste. Transfer to a bowl or jar and store covered in the refrigerator.

4 lbs granulated sugar
2 tablespoons mustard seeds
10 bay leaves
10 peeled garlic cloves
1 (2 ounce) bottle Tabasco sauce

Steps:

  • Empty gallon jar of pickles into a large bowl, throwing away the juice.
  • Cut the pickles into 1-inch chunks.
  • Return the pickles into the jar, alternating with all other ingredients listed above.
  • Put lid on jar and leave sitting out on kitchen counter until sugar has turned into liquid (about three days).
  • Refrigerate.
  • If giving as a gift, distribute evenly into smaller jars.
  • This is great with bland turkey sandwiches at Thanksgiving and Christmas!
