PANNU KAKKU (FINNISH OVEN PANCAKE)
An eggy, buttery, oven pancake. This looks so good, I can't wait to try it. Putting the recipe hear for safe keeping. I got it off Erin's kitchen blog. Hope she doesn't mind. Update: Finally got to make this deliciously ooey, gooey pancake. I also added a dash of vanilla and would also recomend decreasing the butter to about 6 tbs from 8. I also preheated the oven to 400 degrees to melt the butter and then decreased the temp to 350 when I put the batter in. Oh so yummy! I will update the ingredients below so that the nutritional information is correct.

- Melt butter in oven in a 9x13 pan; should be sizzling when you take it out.
- Meanwhile, mix other ingredients like hell - till very frothy. Pour batter into pan with melted butter.

PANNUKAKKU (FINNISH OVEN PANCAKE)
I first ate pannukakku while living in Finland on a religious mission. It tastes something like a mix between a German pancake and custard. In Finland, it is usually served as a dessert with jam on top, but we like to eat it for breakfast with pancake syrup on top as well. It is now my kids' favorite breakfast and is requested regularly.

- Preheat the oven to 420 degrees F (215 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
- Mix flour, sugar, salt, and baking powder together in a large bowl. Add milk, eggs, margarine, and vanilla; mix thoroughly with an electric mixer. Batter will be fairly runny. Pour into the prepared baking dish.
- Bake in the preheated oven until edges are golden brown, about 30 minutes.

FINNISH OVEN PANCAKE (PANNUKAKKU)
Posted for ZWT6 Scandinavian Region - Finland. I posted a similar recipe to this but it called for making your own "cream of wheat" first and then the pancake. This is similar in that it bakes in the oven but seems a bit simpler. I want to try both methods and thought it worth posting this one too. There are 3 other recipes for this recipe but they do not include all the ingredients I found on scandinavianfoods.com recipe site. Prepare to let the batter rest 30 minutes prior to baking (I included it in the prep time). Use any seasonal fresh fruit to top this warm pancake for a lovely dessert.

- Whisk together the eggs, milk, sugar, and vanilla until creamy. Stir in grated lemon zest.
- Sift together flour, salt, and baking powder and stir into egg mixture. Allow batter to rest for 30 minutes.
- Preheat oven to 450º. When pancake batter has rested, place butter in a 12" (or close to) oven-proof frying pan. Place pan in oven and allow butter to melt without browning. Once your butter has melted, remove pan from oven and use pastry brush to coat surface and side of pan evenly with the melted butter.
- Pour pancake batter into the hot, buttered pan and return to oven. Bake for 15 minutes, or until puffed and golden.
- Serve with whipped cream and fresh fruit, fruit compote, or lightly sautéed apples.

- Preheat oven to 450 degrees. In a medium bowl, stir together sugar, flour and salt.
- Add eggs and milk. Beat with electric mixer (this works well in Kitchen Aid) until well blended.
- Melt butter in jelly roll pan (in oven).
- Pour batter in pan and bake for 30 minutes. Pancake will puff up and then flatten as it cools.

- 1. Heat oven to 400 degrees
- 2. Put all ingredents (EXCEPT the butter) into a blender. blend.
- 3. When oven reaches 400, put the butter into a 9x13 pan and put into the oven for the butter to melt.
- 4. When the butter is melted, pour the blended ingredients into the pan with the melted butter.
- 5. Bake for 30 to 40 minutes. (I like it crispy so I do 40 min). It will puff up while baking then fall when you take it from oven.
- 6. I serve it with butter, syrup, fresh fruit and fresh whipping cream! Very easy and yummy. Enjoy!
FINNISH CARROT PANCAKE WITH CRANBERRY SAUCE
Here is a recipe for a very tasty and colourful meal. Serve this for 'Brunch', or for a main meal serve with potatoes and coleslaw, or cucumbers in sour cream (try "Jolean's Cukes in Sour Cream Recipe #121834" by Stacky5LRC - it's very good). You can make the sauce in advance, or use store bought Cranberry sauce if you're pushed for time. The Finnish name for the carrot pancake is Porkkanapannukakku, for the Cranberry Sauce it's Karpalokastike. This Recipe was originally posted for Zaar World Tour 2005; and it's being dusted off again for Zaar World Tour 2006. I still haven't got round to making the sauce, but at least I can tell you the pancake works a treat!

- TO MAKE THE PANCAKE: Preheat the oven to 450 F, 230 C, gas mark 8.
- Wrap the carrot and onion in kitchen towel to remove excess moisture, then place them in a large bowl with the bread crumbs or wheat germ; mix them together thoroughly.
- Make the pancake batter by beating the eggs, milk, flour and seasonings together until smooth; add the batter to the carrot mixture and stir until all the ingredients are evenly mixed together.
- Heat the oil in a 10 inch cast iron skillet or heavy ovenproof baking dish; pour in the pancake mixture making sure the carrots are evenly distributed; place in the oven and bake for 20 minutes; lower the oven temperature to 350 F, 180 C /gas mark 4 and continue to bake for another 10-15 minutes, until the pancake is light brown, puffy and crisp.
- Slice and serve immediately with Cranberry Sauce.
- TO MAKE THE CRANBERRY SAUCE: Mix all sauce ingredients in a medium sized saucepan and cook over medium heat for 10 - 15 minutes, stirring, until the cranberries have popped and the sauce is thick.

ÅLAND ISLANDS PANCAKE (FINNISH PANCAKE)
There is only one other recipe like this on Food.com, but this one is a bit different in that there are no raisins and uses cardamom (very Finnish!) as flavoring. The Ålands Pancake starts off with a base of Semolina Porridge (prepared Cream of Wheat cereal), and is baked in a rectangular pan, then sliced and topped with cloudberry jam. Serving size is a guess, as the Scandi-Home source didn't provide the info.

- First make the semolina porridge by warming the milk in a saucepan and gradually adding the cream of wheat while whisking continuously. Let simmer for about 15 minutes stirring continuously. This will take less time if you are using the "1 minute Cream of Wheat". Leave to cool completely.
- Whisk eggs and sugar until foamy. Add all other ingredients, including the cooled down porridge and stir well to combine.
- Pour the pancake mixture in to a greased oven proof dish and bake in 400F oven for 20-25 minutes until firm. Serve with a dollop of cloudberry jam (available at IKEA).
ÅLAND PANCAKE - FINNISH PANCAKE
Posted for ZWT6 - Scandinavian Region - From Finland. The Finnish recipe site I found this recipe on actually categorizes this as a "dessert" recipe and not a breakfast recipe. This is not the normal round pancake Americans first think of when using the word pancake! Served with fresh strawberries and whipped cream. You will make what they call a "Cream of Wheat" first and let it cool and then prepare the "pancake".

- To make the cream of wheat: Bring the milk to a boil and add the semolina and salt. Cook at a low heat for approximately 10 minutes while occasionally stirring. Set aside to cool.
- When cooled, pour the cream of wheat into a mixing bowl. Add the eggs, sugar, flour, cardamom, vanilla and raisins if using, and stir into a smooth batter.
- Cover a 8" square or 9" round baking dish (with edges) with parchment paper. Brush the greaseproof paper with 3 tbls of melted butter.
- Pour the batter onto the baking tray and cook at 392F (or 200Celsius) for 30 to 45 minutes, until golden brown.
- Serve warm and top with freshly sliced strawberries and a dollop of whipped cream if desired. You can also use strawberry jam or your favorite fresh fruit in season.

- 1. Preheat oven to 375 degrees. Beat eggs & add 1/2 cup of the milk. Gradually add the milk, flour and salt. Beat until thick & smooth.
- 2. Melt the margarine in a glass bowl and pour into your 9 X 13 pan. Pour the batter over the melted margarine.
- 3. Bake at 375 for one hour. Sprinkle sugar & cinnamon on top when it comes out of the oven. It will be very "puffy" when you take it out of the oven and it will "cave in" after awhile....but it is supposed to do that. Serve with jam, syrup, honey, berries ... you can use your imagination what to put on top. Yum.

- Place a 10 1/2" oven proof frying pan with at least 3" sides in a 450F oven for 10 minutes.
- While the pan is heating, beat together the first 4 ingredients.
- Add flour and beat until smooth.
- Melt butter in heated pan and swirl the butter up the sides to coat the pan.
- Pour in the batter and bake for 25 minutes or until set. The mixture will puff while cooking and fall when removed from the oven forming a dish.
- This can be served plain or with a heated fruit topping and whipped cream.
