These easy-to-make rolled out spicy ginger cookies was originally printed in The Finnish Cookbook. Although the recipe specifies to cut them in 3-inch rounds, they are also great cut in different shapes for the holiday season.

1/2 cup molasses or 1/2 cup dark corn syrup
1/2 cup brown sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup heavy cream
1 tablespoon ginger
1 tablespoon cinnamon
3 -3 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt (optional)

Steps:

  • In a large bowl, beat together molasses, brown sugar and butter until mixture is smooth.
  • Add cream, ginger, cinnamon, flour, baking powder, salt (if using).
  • Continue beating until dough is stiff.
  • Chill dough.
  • Roll out small portions of dough to 1/4-inch thickness.
  • Cut into 3-inch rounds (or if you prefer other shapes).
  • Bake in 375-degree F oven for 8-10 minutes.
  • Be careful--do not overbrown these cookies.

3/4 cup flour
1/4 teaspoon salt
1 teaspoon baking soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon fresh ground pepper
7 tablespoons unsalted butter
1/4 cup sugar, plus 1/2 cup for dusting
1/4 cup brown sugar
1 egg, lightly beaten
2 tablespoons molasses
1 tablespoon grated lemon rind

Steps:

  • Preheat the oven to 350 degrees. Sift the flour, salt, baking soda and spices together. Set aside. Grease 2 large cookie sheets with 1 tablespoon of the butter. Set aside.
  • In a large bowl, cream the butter and both sugars until smooth. Add the egg, molasses and lemon zest. Beat well. Gradually add the dry ingredients. Beat until smooth. Dust teaspoonfuls of dough with the sugar. Drop them onto the cookie sheets, spaced 2 inches apart. Flatten each piece into a disc. Bake until lightly golden, about 10 to 15 minutes. Set aside to cool.

They remind me of the ginger snaps I used to buy when I was a child. They are a little crunchy and a little chewy at the same time, spicy but not too spicy for children.

3/4 cup Crisco (plain)
1 cup white sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
2 teaspoons ginger
1/4 teaspoon ground cloves
1/4 teaspoon allspice
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • 1. Preheat oven to 350 and line cookie sheet with parchment or a silicone baking liner.
  • 2. Cream the Crisco and sugar together with a hand or stand mixer until creamy.
  • 3. Add egg and molasses, mix until all are combined.
  • 4. Sift the remaining ingredients together, then stir into wet mixture until all are combined and the mixture is uniformed.
  • 5. Use a measuring tablespoon and scoop out dough, roll into a ball and place on cookie sheet. Use 2 fingers to flatten them a little.
  • 6. Bake 12 -14 minutes, then let cool slightly (about 2 minutes) before placing on wire rack for remaining cool down time. ( about 5 minutes).

An old family favorite out of my grandmother's recipe book. I haven't made this recipe yet myself, but a reviewer suggests to add more spice :) they used 1.5 times the amount stated. Enjoy!

1 1/2 teaspoons ginger
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup shortening (or a little less)

  • Cream shortening, sugar together then egg.
  • Add molasses, stir.
  • Sift in dry ingredients (Double Spices if you like).
  • Roll into balls.
  • Drop in sugar.
  • Bake in 350 F oven for 10-12 minutes.
