This is a delicious cake and it looks nice, too. You can bake your own or pick up an angel food cake at your local supermarket.

1 angel food cake
1 (12 ounce) container frozen whipped topping, thawed
1 1/2 cups milk
1 (3 ounce) package instant chocolate pudding mix (4-serving size)

Steps:

  • Place cake on a serving platter, slice a 1 inch layer from top of cake and set aside.
  • Cut around cake 1 inch from outer edge down to 1 inch from the bottom.
  • Then cut around cake 1 inch from inner edge down to 1 inch layer on bottom.
  • Create a tunnel in middle of cake by removing the tunneled out cake pieces and set aside.
  • In a medium bowl, combine milk and pudding mix.
  • Beat on low for 2 minutes.
  • Fold cake pieces and 1-3/4 cups of whipped topping into pudding.
  • Fill trench with pudding mixture.
  • Replace top of cake.
  • Spread remaining whipped topping over top and sides of cake.
  • (AT this point I dust top of cake with a mixture of cocoa that has been mixed with a little powdered sugar) Refrigerate.

12 large egg whites (about 1-2/3 cups)
1 cup cake flour
1-1/2 cups sugar, divided
1 vanilla bean or 1 teaspoon vanilla extract
1/2 teaspoon cream of tartar
1/4 teaspoon salt
FILLING:
1/2 cup heavy whipping cream
1/2 cup mascarpone cheese
2 tablespoons confectioners' sugar
1 jar (10 ounces) lemon curd, divided
1 cup sliced fresh strawberries, patted dry
GLAZE:
2 cups confectioners' sugar
1 teaspoon grated lemon zest
3 to 4 tablespoons lemon juice

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes., Preheat oven to 325°. In a small bowl, mix flour and 3/4 cup sugar until blended., Add seeds from vanilla bean (or extract if using), cream of tartar and salt to egg whites. Beat on medium speed until soft peaks form. Gradually add remaining 3/4 cup sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. Gradually fold in flour mixture, about 1/2 cup at a time., Gently transfer batter to an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on lowest oven rack 45-55 minutes or until top springs back when lightly touched. 3/4 cup confectioners' sugar
14 egg whites, at room temperature
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
3/4 cup granulated sugar
2 teaspoons pure vanilla extract
1 teaspoon lemon extract
1 1/2 cups lemon curd (Lemon Curd (Stove Top or Microwave Method) Lime or Orange Curd)
1 pint fresh raspberry
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 1/2 teaspoons finely grated lemon zest
1 pinch salt

Steps:

  • Preheat the oven to 375 degrees.
  • Place an oven rack in the center of the oven.
  • Have ready an ungreased 10- inch tube pan.
  • Sift the flour and the confectioners' sugar together into a medium bowl.
  • Beat the egg whites with an electric mixer on medium speed in a large bowl until foamy.
  • Increase the speed to medium-high, add the cream of tartar and salt, and beat just until the egg whites form soft peaks.
  • Add the granulated sugar, about 1 tablespoon at a time, beating well after each addition, and beat just until the whites form stiff, glossy peaks.
  • Add the vanilla and lemon oil and beat until well combined Sift one-fourth of the flour mixture over the egg whites and fold in with a whisk or a rubber spatula.
  • Continue gently folding, one quarter at a time, until all the flour mixture has been added, being careful not to over mix.
  • Transfer the batter to the pan.
  • Run a table knife through the batter to remove any large air pockets, and smooth the top.
  • Bake for 35 to 40 minutes, until the top is golden brown and the cake pulls away from the side of the pan.
  • Turn the pan upside down, and balance it on its elongated neck or pan legs (if it if has them), or hang the tube upside down from the neck of a tall wine bottle.
  • Let cool to room temperature.
  • Turn the pan right side up.
  • Run a knife around the edge of the cake and between the cake and the tube.
  • Top the cake with a flat plate, invert it, give a sharp downward rap to the pan to dislodge the cake and lift off the pan.
  • If the pan bottom is removable, slide a knife between the pan bottom and the cake to release it.
  • Stir the lemon glaze ingredients together in a small bowl.
  • Let stand for 10 minutes before using.
  • Cut cake in half.
  • Once completely cooled fill with lemon curd (SEE my recipe posted).
  • Top Curd with Raspberries.
  • Put top half of cake on raspberries then top with Glaze.
  • Pouring over the cake and let stand for at least 10 outside minutes, or until the glaze is set.
  • Use a sharp serrated knife to cut the cake.

1--3oz pkg strawberry jello
1 pkg frozen strawberries
1 pt whipping cream, whipped or cool whip
1 c water, boiling hot

  • 1. The cake can be homemade or bought. --I prefer homemade. Dissolve jello in the boiling water stir in the frozen strawberries and stir until the berries are thawed---chill Cut the top off of the cake and set aside. Hollow out center of rest of cake leaving 1" all around including the bottom. Add the jello and the parts of the cake you hollowed out, fold together and put into the cake. Replace top of cake and frost the whole cake with the whip cream. Chill for 4 hours.

1 large angel food cake, store bought or homemade from box
3 oz package lemon jello, divided
8 oz tub thawed cool whip
12 maraschino cherries, diced
25 mini marshmallows
5 macaroon cookies, broken
1 small can tidbit pineapple, drained juice reserved for another day
1 c hot water
FROSTING:
1/2 c butter, softened
remaining 1/2 package of jell-o powder
3 c powdered sugar or more
1/4 c evaporated milk

Steps:

  • 1. Cut 1 inch off top of store bought or prepared baked cake. Hollow out remaining cake, leaving a 1/2 inch shell. Dissolve 1/2 package of the jello in water then refrigerate. When jell-O begins to set up, beat until fluffy. Fold in Cool Whip until blended. In another bowl, combine fruit, macaroons, marshmallows and pieces of cake that were removed. Combine both mixtures and place in the hollowed out cake. Replace top of cake and frost with fluffy frosting. --- Frosting: Place butter in mixing bowl and beat on medium speed until creamy. Add evaporated milk, and 1 cup of the powdered sugar and Jell-O powder mix; mix for 1 minute on low then on medium about 2 minutes. Add remaining powdered sugar, 1 cup at a time, until all sugar is incorporated- if it's too thick to spread, add a little more milk one teaspoon at a time, and beat until smooth. If too thin add a little more powdered sugar.
