LAVENDER GIN GOAT CHEESE COOKIES

3 sticks butter, at room temperature
1 cup sugar
1 teaspoon gin
3 1/2 cups all-purpose flour, plus more for dusting
3 teaspoons dried lavender
Pinch or 2 of salt
2 to 3 egg yolks, beaten
6 ounces goat cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the butter, sugar and gin together until thoroughly blended. Mix in the flour, lavender and salt until it gets doughy. Roll out the dough on a floured surface to 1/2 inch thick. Freeze for 10 minutes.
  • Roll the dough into about 24 little balls and dunk them in the beaten eggs. Put the balls on a silicone baking mat on a baking sheet and smash them with your thumb to make craters. Put some goat cheese in each crater. Bake until lightly golden on the edges, about 10 minutes.

This is an elegant and quick romantic dinner for two. Wonderful served with steamed asparagus and baby red potatoes.

2 (4 ounce) filet mignon steaks
½ teaspoon freshly ground black pepper to taste
salt to taste
¼ cup balsamic vinegar
¼ cup dry red wine

Steps:

  • Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
  • Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
  • Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.
