Steps:
- Rinse chicken wings and palce in a shallow pan.
- Place all the marinade ingredients in a blender or food processor and process until smooth.
- Pour marinade over chicken wings and marinate for 2 hours, turning often.
- Preheat oven to 400 degrees.
- Line a cookie sheet with aluminium foil.
- Remove chicken wings from marinade, place on lined cookie sheet.
- Bake for 20 to30 minutes, turning 3 or 4 times and basting frequently with the marinade, until cooked through and caramelised.

CHILLI CHICKEN WINGS

- Place your chicken wings into a large plastic bag or a large mixing bowl. Mix together all the marinade ingredients and stir in the oil to make a paste. Pour this over your wings and give them a good mix to make sure they are all evenly coated.I do this in a bag because you can really mix in the marinade and the wings get a really good coating.Place in the fridge for a couple of hours.
- Pre heat your oven to 200 degree C, line a baking tray with foil and then a layer of baking paper. Place a oven rack over your tray.
- Evenly spread the wings on the tray. Try not to overlap, so they cook evenly and get nice and crispy while cooking.Place into your preheated oven for 40 minutes and cook until golden and crisp.
- For your sauce.In a large fry pan, heat the oil on a high heat, add your chopped onion and fry until soften, but don't brown to much.
- Add the soy, ketchup, oyster and sriracha sauces, bring to a simmer, add in your sugar and then add the cooked wings and give a good mix to really coat the wings.
- Lastly add the sliced spring onion and red chilli, give a quick mix and serve.Happy burning lips, enjoy!
FRIED CHICKEN WINGS

- Season chicken wings lightly with seasoned salt.
- Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
- Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
- Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.
