4 tablespoons buckwheat honey, divided
1/4 cup fresh orange juice
12 fresh figs, halved
12-inch wooden skewers, soaked in water for 30 minutes
1 pint mascarpone
1/4 cup chopped pistachios

Steps:

  • Heat grill to medium. Whisk together 3 tablespoons honey and the orange juice in a small bowl. Brush the honey-orange mixture generously over the figs and then skewer figs. Grill, cut side down, until just starting to caramelize, about 30 seconds to 1 minute. Transfer to a serving plate and drizzle remaining tablespoon honey over top. Dollop with mascarpone and sprinkle with chopped pistachios. Serve.

This healthy dessert utilizes fresh figs -- a nutrient-rich fruit popular in Europe and brought to California in the late 18th Century by Spanish Franciscan missionaries.

8 small (or 4 large) fresh, ripe figs, stems trimmed, halved lengthwise
1/3 cup mascarpone, softened
1/3 cup mild honey
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground allspice
4 sprigs fresh mint

Steps:

  • Arrange the figs cut-side up among four plates. Use the back of a teaspoon to gently press into the center of the flesh and create a small indentation.
  • Add a dollop of mascarpone to the center of each fig half and set plates aside.
  • Place honey and spices in a small heat-proof bowl and set over a pan with simmering water. Cook over medium heat, whisking to blend, until the honey is liquefied and warm, 1 to 2 minutes. Drizzle honey over each fig, garnish plates with mint sprigs, and serve immediately.

1 pound fresh figs
1 teaspoon honey
8 ounces mascarpone
1/2 pound unsalted pistachios (shelled)
Ground cinnamon and grated dark chocolate, garnish

Steps:

  • Preheat oven to 350 degrees F.
  • For each fig, cut a cross over the stem end, just deep enough to gently squeeze the fig open. Place on a baking sheet and bake in the oven for 5 to 10 minutes. Meanwhile, combine the honey and mascarpone in a bowl. Coarsely chop the pistachio nuts, and then add them to the bowl. Remove figs from the oven. Place on a serving plate and top with mascarpone mixture. Garnish with cinnamon and grated dark chocolate.

1 refrigerated pie crust (half of 15-ounce package)
2 large navel oranges
1 8- to 8.8-ounce container chilled mascarpone cheese*
1/2 cup chilled heavy whipping cream
1/4 cup sugar
2 tablespoons honey, divided
1/4 teaspoon (generous) ground cardamom
2 tablespoons chopped pistachios
*Italian cream cheese; available at many supermarkets and Italian markets.

Steps:

  • To cool the crust quickly, place it on a rack, position a fan a few feet away (aiming toward the crust), and turn the fan on medium speed.
  • Preheat oven to 400°F. Press pie crust onto bottom and up sides of 9-inch-diameter tart pan with removable bottom; fold sides in and press to extend sides 1/4 inch above rim of pan. Pierce crust all over with fork. Bake until golden brown, about 24 minutes. Cool completely on rack.
  • Meanwhile, grate enough orange peel to measure 1 1/4 teaspoons. Cut off remaining peel and pith from oranges. Slice oranges into thin rounds, then cut rounds crosswise in half. Place orange slices on paper towels to drain slightly.
  • Combine mascarpone, cream, sugar, 1 tablespoon honey, cardamom, and orange peel in medium bowl. Using electric mixer, beat just until blended and peaks form (do not overbeat or mixture will curdle). Spread filling evenly in cooled crust. Arrange orange slices atop tart in concentric circles; sprinkle with pistachios. Drizzle with remaining 1 tablespoon honey and serve.

Pinch of coarse kosher salt
1/4 cup unsalted pistachios, toasted
1/2 cup mascarpone cheese
2 tablespoons heavy whipping cream
2 tablespoons orange blossom honey
1 teaspoon finely grated orange peel
12 fresh black Mission figs or other figs, stemmed, halved lengthwise

Steps:

  • Line baking sheet with foil. Stir sugar and 1 tablespoon water in small skillet over medium-low heat until sugar dissolves. Increase heat to medium-high; boil until syrup turns deep amber, occasionally swirling skillet and brushing down sides with wet pastry brush, about 5 minutes. Remove from heat; add salt and nuts. Stir to coat and transfer to prepared sheet. Cool.
  • Stir mascarpone, cream, honey, and orange peel in small bowl. Coarsely chop brittle. Arrange figs on plate. Spoon 1 teaspoonful mascarpone mixture atop cut side of each fig; garnish with brittle.
