Balsamic-Marinated Mushroom Salad image

A fresh vegetarian dish that's easy to make. Keeps the true flavor of the mushrooms, as they are only "cooked" by the vinegar in the marinade. Serve heaped in the center of a platter surrounded with thin slices of fresh tomato and mozzarella cheese. Or on a bed of shredded lettuce. For non-vegetarians this can also be garnished with crumbled bacon for an extra bit of flavor.

¼ cup good quality balsamic vinegar
2 tablespoons olive oil
1 clove garlic, minced
salt and ground black pepper to taste
1 pound sliced fresh mushrooms
1 medium sweet onion, minced
2 tablespoons minced fresh parsley

Steps:

  • Mix balsamic vinegar, olive oil, garlic, salt, and pepper in a small bowl.
  • Place mushrooms in a large bowl with onion. Pour balsamic mixture over top; stir gently until well coated. Cover and place in the refrigerator to marinate for 6 to 8 hours, stirring once or twice during that time.
  • Sprinkle with fresh parsley just before serving.

6 medium button mushrooms, thickly sliced
1 red onion, finely sliced
12 walnut halves, roughly chopped
3 tablespoons balsamic vinegar
2 large figs, cut into thick slices
1 pinch black pepper (to season)
1 1/2 tablespoons carob syrup
1 tablespoon balsamic vinegar
mixed greens
stuffed green olive
2 slices of your favourite bread
hummus, on the side

Steps:

  • Heat 2 tbsp water in a non stick saute pan and add the mushrooms and cook for 2 minutes before adding in the balsamic vinegar, keep the heat on medium/high and cook for a further 6 minutes, then toss in the red onion and walnuts, add a pinch of black pepper, mix everything together and turn off the heat.
  • Prepare your mixed leaves in your serving bowl, make it into a nest, then spoon the mushroom mixture into the centre, arrange your sliced figs around the side and add the green olives on top.
  • For the dressing, mix together the carob and balsamic vinegar in a small cup and give it a quick whisk and drizzle over the salad and you're done!

For many years, we have been blessed with an asparagus bed that has grown the most sweet and savory asparagus we have ever tasted. The only problem, is that we usually have it every day while it continues to grow and prosper. I use this salad on a warmish night, when all you can smell is the freshness of Spring.

10 fresh asparagus spears (or 3 oz. frozen spears)
1 tablespoon coarse grain mustard (or Dijon)
1/4 cup orange juice
2 tablespoons lemon juice
2 tablespoons lime juice
1 teaspoon orange zest
1 teaspoon lime zest
1 garlic clove, crushed
1/4 cup honey
1/4 teaspoon pepper
1/2 teaspoon kosher salt (or 1/4 teaspoon fine salt)
13 ounces button mushrooms, quartered
1 small red onion, sliced thin
5 ounces fresh spinach (can use romaine)
1 red pepper, cut in strips

Steps:

  • Snap woody end from asparagus spears, and cut in half on the diagonal. Blanch in boiling water for one minute. Drain, and plunge into cold water. Set aside.
  • Place mustard, citrus juice, zest, garlic, pepper and honey in a saucepan over medium high heat. Bring to boil, then reduce the heat to low, adding mushrooms, and toss. Cool, take off heat.
  • Remove mushrooms from sauce with slotted spoon and set aside.
  • Return the sauce to heat, bring to boil then reduce the heat and simmer for 3-5 minutes, or until reduce and syrupy. Cool slightly.
  • To serve, toss the mushrooms, spinach leaves, red pepper, red onion, and asparagus. Plate this salad mix, and drizzle with the citrus sauce.

4 large fresh figs (Black Mission or Calimyrna)
2 tablespoons balsamic vinegar
6 teaspoons dark brown sugar
1/8 teaspoon cinnamon
1/4 cup extra virgin olive oil
6 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
sea salt, to taste
ground pepper, to taste
8 cups mixed salad greens

Steps:

  • Snip the tiny stem end off each fig and cut in half lengthwise.
  • Mix vinegar, brown sugar, and cinnamon together in a medium bowl.
  • Add the figs and gently toss to coat.
  • Let sit while you heat a grill (indoor or outdoor).
  • If necessary, coat your grill with a little olive oil.
  • When ready, grill the figs (reserving all of the marinade in the bowl) for about 2 to 3 minutes per side or until grill marks appear -- don't overcook as the figs will become too mushy. Remove figs to a plate.
  • To the reserved marinade, add olive oil, lemon juice, mustard, salt and pepper, whisking well to completely incorporate.
  • Place greens in a large salad bowl; toss with dressing, then mound equal amounts on 4 individual serving plates.
  • Place 2 fig halves decoratively over each plate of greens and serve.

1/4 teaspoon granulated garlic
2 tablespoons Braggs liquid aminos
2 tablespoons tamari soy sauce
1/2 cup mushrooms, and or 1/2 cup walnuts, chopped
3 1/2 tablespoons cornstarch mixed in with 1/4 cup water

Steps:

  • In a large saucepan, combine water, onions, garlic, aminos, tamari mushrooms and walnuts. Bring this mixture to a boil.
  • Seperately mix the cornstarch and the 1/4 cup water and slowly add this mixture to the sauce.
  • Cook over low heat, stirring frequently, until the sauce thickens. About 10 minutes.
  • Serve this with the mushroom walnut loaf or over steamed brown rice.
