FIESTA ROLL UPS
They're fun, easy and make a quick disappearing act. Refrigerate overnight for easier cutting. They freeze well too and are nice to have on hand for unexpected guests. Times are a guess as are servings. NOTE: I used Monterrey Jack because we prefer it over cheddar.

Steps:
- In a small mixing bowl beat cream cheese until smooth. Stir in sour cream, salsa, taco seasoning and garlic powder until well blended. Add in the olives, chilies, cheese and scallions.
- Spread 1/2 cup cheese mixture on each tortilla. Roll up jelly roll style. Wrap in cling wrap. Refrigerate 2 hours (overnight is best).
- Slice in 3/41-in pieces. Secure with toothpick. Serve with additional salsa.
- Pinwheels may be prepared ahead of time and frozen. Thaw in refrigerator.

A friend gave me this recipe, and whenever I serve these tortilla pinwheel sandwiches, people ask me for the recipe, too! - Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

- In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
- To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

These tortilla roll-ups are filled with cream cheese, ranch dressing, olives and red pepper. Serve them as an appetizer or at teatime along with scones and finger sandwiches.

Steps:
- Using medium speed of an electric mixer, beat together cream cheese and dressing mix until fluffy. Add onions, olives, roasted peppers and chilies; stir until blended. Spread mixture evenly over one side of each tortilla, leaving a 1/2 inch border. Tightly roll up each tortilla jelly-roll fashion. Wrap rolls individually in plastic wrap. Refrigerate for at least 4 hours or up to 24 hours. Rolls may also be frozen for up to 1 month. Thaw in refrigerator.
- To serve, trim ends off each roll. Cut each roll into 8 pieces.
