Another dip mix from "Gifts in a Bag" recipe book. Don't forget the gift tag. You can make this one as hot as you like by adding crushed red pepper. Gift tag should read: Combine the Mexican Fiesta Dip Mix with the mayonnaise and sour cream. Stir until well blended. Cover and refrigerate. Dip is better if made 8 hours before serving. Serve with chips, crackers, or fresh vegetables. Cook time is chill time.

1 tablespoon chili powder
2 teaspoons dried parsley
1 teaspoon sugar
1/2 teaspoon garlic powder, plus
1/8 teaspoon garlic powder
1/4 teaspoon onion powder, plus
1/8 teaspoon onion powder
1/4 teaspoon dried cilantro, plus
1/8 teaspoon dried cilantro
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
1/8 teaspoon salt
1 cup mayonnaise
1 cup sour cream

Steps:

  • Combine the dry ingredients and stir until well blended.
  • Place in a 3x4-inch ziplock bag and seal.
  • Attach a gift tag with the directions on how to prepare the dip.
  • To prepare dip:.
  • Combine the Mexican Fiesta Dip Mix with mayonnaise and sour cream.
  • Stir until well blended.
  • Cover and refrigerate.
  • Dip is better if made 8 hours before serving.

Another great mix that makes life easier (see also "my" Hot Mexican Rub recipe #132796). I included this as part of a gift basket for my friend and of course I had to try it before giving it away. Too bad I din't read the whole recipe before making it. When not only the mix but also the dip was finished, I realised it should go in the fridge for two hours or so. I couldn't wait that long and ate it immediately. Loved it and prepared a second batch. This time I had some leftovers and I put it in the fridge. The next day it tasted even better! Yes, chilling does improve the dip! As I wanted to prepare the dip just for myself, I mixed 2 tablespoons sour cream with 2 tabelspoons low fat mayonnaise and 2 teaspoons Mexican Fiesta Dip Mix. I am considering to prepare the next batch without the dry herbs but add fresh herbs to the mix when preparing the dip. I love fresh herbs and I grow so many on my balcony. When typing this recipe I realised that I forgot to add the salt into my mix. I didn't even miss it! That's why I wrote optional next to the salt. Serve this dip with tortilla chips or fresh vegetables.

1/2 cup dried parsley
1/3 cup dried onion, minced
1/4 cup dried chives
1/3 cup chili powder
1/4 cup ground cumin
1/4 cup salt (optional)
1 cup mayonnaise or 1 cup low-fat mayonnaise
1 cup sour cream or 1 cup low-fat yogurt

Steps:

  • In a large bowl, combine the spices and store in an airtight container.
  • Attach this to the jar: Mexican Fiesta Dip. Makes two cups. In a medium mixing bowl combine 3 tablespoons of the Dip Mix with the mayonnaise and sour cream. Whisk the mixture until smooth. (Check if you want to add more of the Dip Mix or more mayo/sour cream.).
  • Refrigerate for 2-4 hours or overnight (best).
  • If you do this at home and you have some fresh herbs around then add some. I like to add fresh chives, parsley or coriander.
  • Serve with tortilla chips (works best!)or fresh vegetables.

1/3 cup butter or 1/3 cup margarine
6 ounces unsweetened chocolate
1 (14 ounce) can sweetened condensed milk (not evaporated)
17 1/2 ounces sugar cookie mix
1 teaspoon ground cinnamon
60 Hershey's Hugs chocolates (white and chocolate-striped candy, unwrapped)

Steps:

  • Heat oven to 350°F.
  • In large microwavable bowl, microwave butter and chocolate on High 1 minute. Stir; microwave on High 1 minute longer or until butter is melted and chocolate can be stirred smooth.
  • Stir condensed milk into chocolate mixture. Stir in cookie mix and cinnamon until well blended.
  • Using 1 level tablespoonful of dough for each cookie, shape into 60 balls. Place 2 inches apart on ungreased cookie sheets.
  • Bake 6 to 7 minutes or until edges lose their shiny look (do not overbake).
  • Immediately press 1 kiss into center of each cookie. Cool cookies on cookie sheet 5 minutes; remove from cookie sheets.
  • To get kiss to spread slightly on top of cookie, tap edge of each cookie lightly.
  • Cool completely. Store covered at room temperature.

This is a simple, healthy, cheap, and versatile recipe that is great for parties and brown-bag lunches. Can be made entirely from food you probably already have in your pantry.

1 cup dry brown rice (white is fine too)
14 ounces canned corn
14 ounces salsa (more to taste)
14 1/2 ounces diced tomatoes
1 1/4 ounces taco seasoning
32 ounces beans (more to taste)
4 ounces diced green chilies (optional)
2 -4 teaspoons Worcestershire sauce or 2 -4 teaspoons vegetarian worcestershire sauce

Steps:

  • Cook brown rice according to package directions (~30 minutes).
  • Add remaining ingredients in a large saucepan and cook on medium heat until warmed through.
  • Eat wrapped in a burrito shell, as a dip for tortilla chips, or by itself. Good cold or hot.
