Steps:
- Preheat oven to 375*F
- Grease a baking pan.
- Combine ground beef, 1/2 cup picante sauce , oats, taco seasoning, black pepper, garlic powder.
- mix well.
- Press into prepared baking pan.
- Combine remaining 1 1/2 cups picante sauce, cheese, olives and chiles. Mix well.
- Pour sauce mixture over top.
- Bake for 30 to 40 minutes or until center is no longer pink.

FIESTA MEATLOAF
This is a zingy version. My family loves it! I got the orginal recipe from a magazine back in the early 90's. I've changed a few things.

Steps:
- Saute onion, celery and green pepper in butter until veggies are tender.
- Stir in the two bottles.
- Combine 1/2 of this mixture (I use a little bit more) with the ground beef, bread crumbs, egg, salt and pepper.
- Form into a loaf pan.
- Set aside remaining sauce.
- Bake in 350 oven, 1 hour.
- Let stand 5 minutes before slicing.
- Warm up the remaining sauce when meatloaf is done.
- Spoon on the sauce over the sliced meatloaf.
- I serve this with a baked potato or boiled potatos and butter with a salad or sliced cukecumbers and roasted carrots.

FIESTA MEAT LOAF
I got myself one of those really cool meatloaf pans that has an inset that lifts out of the meatloaf pans. It worked perfectly. This meatloaf is nice and moist.

Steps:
- 1. Heat the oven to 400'F.
- 2. In a non-stick fry pan, cook the onion and garlic in a little oil over moderate heat.
- 3. Stir continuously until onion is soft, this should take 2-3 minutes.
- 4. Put the onion and garlic in a large mixing bowl and add all the other ingredients.
- 5. Let the mixture sit for 5 minutes.
- 6. Lightly oil a loaf pan and place the turkey mixture in it to the top.
- 7. Bake 55 minutes until the meatloaf reaches 170'F.
- 8. Let cool on a wire rack for 10 minutes at least before slicing.
- 9. Enjoy!
