FIESTA MEAT LOAF

I got myself one of those really cool meatloaf pans that has an inset that lifts out of the meatloaf pans. It worked perfectly. This meatloaf is nice and moist.

Number Of Ingredients 11

1 1/4 lb ground turkey
1 1/2 c onion, chopped
1 Tbsp garlic, minced
1 tsp salt
1/2 tsp black pepper
1 1/2 tsp worcestershire sauce
1 c quick oats
1/3 c fresh parsley, chopped fine
1/4 c muir glen mild salsa
1/2 c plain yogurt
1 large egg, lightly beaten

Steps:

  • 1. Heat the oven to 400'F.
  • 2. In a non-stick fry pan, cook the onion and garlic in a little oil over moderate heat.
  • 3. Stir continuously until onion is soft, this should take 2-3 minutes.
  • 4. Put the onion and garlic in a large mixing bowl and add all the other ingredients.
  • 5. Let the mixture sit for 5 minutes.
  • 6. Lightly oil a loaf pan and place the turkey mixture in it to the top.
  • 7. Bake 55 minutes until the meatloaf reaches 170'F.
  • 8. Let cool on a wire rack for 10 minutes at least before slicing.
  • 9. Enjoy!

When planning a camping trip a few years back, I looked for recipes that could be made ahead of time for quick eating later. This filling sandwich was the perfect solution.

Number Of Ingredients 12

1 round loaf (1 pound) sourdough bread
1/2 cup refried beans
4 ounces sliced Colby cheese
1 small sweet red pepper, sliced
4 ounces sliced Monterey Jack cheese
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small tomato, seeded and diced
1 cup shredded Mexican cheese blend
2 tablespoons ranch salad dressing
1 avocado, peeled and sliced
4 ounces sliced cheddar cheese

Steps:

  • Cut the top fourth off loaf of bread. Carefully hollow out top and bottom of loaf, leaving a 1/2-in. shell. (Discard removed bread or save for another use.) Set top aside. , Spread refried beans inside bottom of shell. Layer with the Colby cheese, red pepper, Monterey Jack cheese, chilies, olives and tomato. Gently press layers together to flatten as needed. , Combine cheese blend and ranch dressing; spoon over tomato. Top with avocado and cheddar cheese. Replace bread top and wrap tightly in plastic wrap. Chill.
