BAKED FETA RECIPE
Warm, creamy, and luscious baked feta recipe with bell peppers, tomatoes, herbs, and a good drizzle of extra virgin olive oil. One of the simplest and most satisfying mezze you'll make! All you need is some crusty bread or homemade pita chips to serve.

Steps:
- Heat the oven to 400 degrees F and adjust a rack in the middle.
- Arrange the onions, bell peppers, and cherry tomatoes at the bottom of a ramekin or oven-safe dish. Sprinkle with 1 tsp oregano, pinch red pepper flakes, and add some of the fresh thyme. Drizzle a bit of extra virgin olive oil.
- Add the feta on top of the arranged veggies. Season the feta block with the remaining dried oregano, pinch of red pepper flakes and whatever remains of the fresh thyme. Drizzle a generous amount of extra virgin olive oil on the feta and make sure to brush the sides with some of the oil.
- Place the baking dish on the middle rack of the oven and bake for 20 to 30 minutes (and if you like, you can stick it under the broiler very briefly to add color).
- Serve with pita chips or toasted Italian bread.

ROASTED PEPPERS WITH FETA

- Place peppers on grill and char. Remove from grill and place in bowl and cover with plastic wrap for 10 minutes. Cut peppers in half and remove skin and seeds. Mix eggs, feta, parsley, and chiles. Fill peppers evenly and place under broiler until golden brown.
FIERY PEPPERED FETA WITH PITA
From Weir Cooking in the City by Joanne Weir. This dish was one of her favorites during an afternoon of Turkish meze. This can be made a day in advance making it perfect for entertaining. (Make sure to refrigerate it and then bring to room temperature before serving.)

- Preheat the oven to 400°F.
- Place the feta, yogurt, and 1/4 teaspoons salt in a bowl and mash with a fork to make a smooth paste. Alternatively this can be pureed in a food processor. Add the garlic, 1 tablespoon of the olive oil, paprika, and cayenne. Season with salt and black pepper and mix well.
- Wrap the pita tightly in foil and place in the oven until warm, about 10 minutes.
- Spread the feta puree on a serving plate. Drizzle with the remaining 1/2 tablespoon olive oil, paprika, and garnish with olives. Serve with the warm pita.
