FARFALLE PASTA SALAD MEDITERRANEAN STYLE
Farfalle Pasta Salad Mediterranean Style is a great pasta salad with super fresh ingredients like cucumbers, tomatoes, onions, and peppers. Kalamata Olives, marinated artichokes and feta cheese, combine to enhance those Mediterranean flavors. Dressed with a red wine based vinaigrette, instead of mayo, makes for super light and refreshing spin on a classic.

Steps:
- Cook pasta according to instructions. Once done, rinse it with cold water, let it sit in coriander for a minute or two to get rid of the extra water;
- Add pasta and all the vegetables and herbs into the big bowl and mix it well;
- Add all the dressing ingredients into the mason jar and mix well. Add salt if needed more;
- Pour the dressing over the salad and mix well;
- Sprinkle the salad with crumbled feta and serve.

My aunt and mom created this recipe. It is a family favorite and a great item to bring to picnics and potlucks.

Steps:
- Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
- Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
- Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
- Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.
- Pour the salad dressing mixture over the pasta mixture; gently toss to coat evenly.
- Refrigerate 3 hours to overnight before serving.

FAR OUT FARRO SALAD

Steps:
- Place the farro in a large bowl and cover with cold water. Soak for 30 minutes.
- Then put the farro in a large pot and cover with the chicken stock and 4 cups cold water. Set over high heat and bring to a boil. Turn down the heat to a simmer and cook uncovered until the farro is tender, 25 to 30 minutes. Drain the farro and toss with the olive oil and red wine vinegar. Season with some salt and pepper. Allow to cool slightly.
- In a large bowl, toss the farro together with the arugula, tomatoes, apples, cucumber and orange supremes. Refrigerate until ready to serve.
MEDITERRANEAN MADNESS SALAD
Steps:
- Heat oven to 400 degrees F.
- In a small bowl, toss cubed eggplant with the garlic and oil. Spread on sheet pan and place in preheated oven. Cook until golden brown, about 20 minutes, stirring occasionally for even browning. Meanwhile, cook pasta according to directions and drain. Remove eggplant to a large nonmetallic bowl. Add pasta and stir in 1/2 cup of feta while pasta and eggplant are still warm. Set aside to cool while preparing other ingredients.
- Add in the rest of the ingredients except the romaine and gently stir to combine, adding remaining feta cheese last. Season to taste with salt and pepper. Chill for 1 hour and serve on a bed of romaine on a large platter.
FARRO SALAD WITH CITRUS VINAIGRETTE

- In a large, heavy saucepan over medium-high heat, add the farro, 2 teaspoons salt, and water (or stock, if using). Bring to a simmer, cover and cook, stirring occasionally, until the farro is tender, 35 to 45 minutes. Check a few times while it is cooking, you want it to be al dente. Remove from the heat, drain any excess water, and set aside to cool.
- While the grains are simmering make the dressing. Whisk together the orange zest and juice, shallots, white balsamic vinegar, and olive oil. Add salt and pepper, to taste, and set aside.
- Just before serving, in a large bowl, toss the farro with 3 tablespoons dressing and transfer to a large serving bowl. In the same large bowl, combine the salad greens with the almonds, prunes, cherries, and onions and gently toss with 3 tablespoons remaining dressing, adding more dressing as needed. Plate the greens mixture on top of the faro and serve.
