MEXICAN NOODLE SOUP (SOPA DE FIDEO)
Mexican short noodles (fideos) in a chicken broth flavored with tomato, onion, and serrano pepper for a little kick.

Steps:
- Combine 1/2 cup chicken stock, tomatoes, onion, serrano chile, and garlic in a blender. Blend until smooth. Strain tomato sauce into a bowl and reserve.
- Heat oil in a saucepan over medium-low heat. Add pasta; cook, stirring constantly, until lightly browned, about 4 minutes. Pour tomato sauce into the saucepan over the noodles; add parsley and remaining chicken stock. Season with salt. Bring to a boil, reduce heat, and simmer until noodles are soft, about 20 minutes. Sprinkle with Cotija cheese.

FIDEO SOUP
Steps:
- In large saucepan or stockpot heat the oil or butter. Add pasta and saute until golden, stirring frequently and being careful not to burn. Stir in chiles and cook for 2 minutes longer. Meanwhile, combine tomatoes, garlic, onion, water and salt in a blender. Puree until smooth. Add tomato puree and stock to browned pasta. Cook over medium-low heat until the noodles soften and the flavors meld, about 15 minutes. Serve hot with the sliced avocado and cilantro as garnish.
FIDEO LOCO SOUP WITH CHICKEN
I had a yummy noodle soup called Fideo Loco recently in Texas. I lightened it up by using chicken instead of the more usual beef. Also, used fewer noodles (fideo) than the Texas variety.

Steps:
- 1. Heat oil in large saucepan over medium-high heat. Add fideo to saucepan and stir to coat with oil. Cook 2 minutes or until browned, stirring constantly. Add peppers, onion, carrots and garlic; cook 5 minutes or until vegetables are tender, stirring occasionally.
- 2. Stir in tomato sauce and chicken broth (or water and bouillon). Add beans. Reduce heat to medium-low, cover and simmer 10 minutes or until pasta is tender. Stir in chicken, frozen corn and seasoning. Cook until heated through. Sprinkle with cilantro to serve.

My husband and I love the appetizer portion of fideo soup offered at many Mexican restaurants as the first course to your lunch or dinner order. So let's have it as the main course! Serve in bowls with a side of limes for a squeeze on top of the soup. We like ours as-is but you can garnish with diced avocado, tortilla strips, crumbled pork rinds, or cilantro. Save in one- or two-serving containers for easy reheating.

- Combine beef broth, chicken broth, and 2 cups vegetable broth in a large pot over medium heat; bring to a simmer.
- Meanwhile, combine remaining vegetable broth, fire-roasted tomatoes, tomato halves, onion, garlic, and chicken soup base in the bowl of a food processor; blend until fully combined, 1 to 1 1/2 minutes. Remove the processor blade and set the bowl aside.
- Heat oil in a 10-inch frying pan over medium-high heat. Add fideo pasta and cook, stirring constantly, until golden brown, 2 1/2 to 3 minutes. Stir in oregano and cumin. Hold a 6-inch strainer over the pan and pour in the blended tomato mixture. Quickly stir the sizzling mixture with a wooden spoon so it doesn't stick or burn; continue stirring for 1 minute. Discard any tomato solids left in the strainer.
- Pour fideo-tomato mixture into the simmering broth. Increase heat to high and cook for about 5 minutes. Reduce heat to medium-high and stir in zucchini and salt. Cook until fideo is tender yet firm to the bite, about 2 minutes more.

This is a delicious light soup recipe to whip up for dinner. I got this recipe from my mother-in-law who is from Mexico. I have made a few changes to suit my taste.

Steps:
- 1.In a boiling pan heat oil, once warm add fideo, garlic, cumin & red pepper flakes. Stir constantly, until fideo turn golden brown.
- 2.Once this is brown add water and tomato sauce. Stir often until the fideo is soft. You may need to add more water, to get to soup consistency because the noodles will absorb some of the water.
- 3. Then if you have left over chicken or pork chops heat them, cut them into thin slices and place with soup.
- 4.Serve with tortillas, sour cream & limes. Enjoy!

I like this recipe because the pasta and other ingredients all cook in the same pan, so there is only one pan to wash. This is mildly spiced so the kids can enjoy it too. You can kick it up if you want.

- In a large skillet, cook ground turkey and fideo together until turkey is no longer pink.
- Add remaining ingredients except cheese.
- Heat to boiling, reduce heat and simmer covered until vegetables are crisp-tender, about 15 minutes.
- Stir occasionally while cooking.
- This makes a thick type soup.
- If you want it more"soupy", you can add another can of chicken broth.
- Serve in soup bowls with a garnish of cheese.

- In a large stock pot, heat oil over medium heat. Break vermicelli into small pieces, about 1" long. Saute dry noodles in oil until golden but not too brown. Watch carefully this happens quickly and they can burn easily. Remove from pot and drain on paper towels. Do not wipe out pot. In reserved oil, cook onion and garlic until tender but not brown. Add beef broth, tomato sauce, water, bouillon, cumin,salt and pepper and stir well. Cover and simmer for 20-25 minutes until pasta is tender. Adjust seasoning and serve.
