Time 7m

Yield 4-6 servings Servings

Number Of Ingredients 10

1 (1-pound) box spinach fettuccine
For sauce:
1 cup chopped frozen spinach, thawed and drained
1 cup heavy cream
1/2 cup butter
1/2 cup fresh grated parmesan cheese
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1 teaspoon salt
Additional fresh grated parmesan (optional)

Steps:

  • Cook fettuccine according to package directions. While pasta is cooking prepare sauce. In a 4-quart saucepan mix spinach, cream, butter, parmesan, onion and garlic powders and salt, and simmer over low heat until combined and heated through. Pour sauce over fettuccine and mix well. Serve immediately with parmesan cheese on the side, if desired. Tips Tip: If not served immediately, the sauce will dry out on the pasta. (I refuse to expose how I came across this valuable lesson. Just take my word for it.) So if not serving immediately, keep sauce and pasta separate. Reheat and mix just before serving. CREAMED SPINACH PASTA

Creamed Spinach Pasta image

This pasta nods to everyone's favorite steakhouse side, and it comes together in no time, making for a fine weeknight meal. One full pound of fresh spinach is cooked down in garlicky butter before cream is added, then simmered until thickened. The cooked pasta is added directly to the sauce, then tossed with ricotta cheese for even more richness. Fettuccine or tagliatelle pasta work best, but the creamy sauce will cling to any long noodles. Top with pine nuts, walnuts or hazelnuts for crunch, or leave the nuts out entirely. Serve as a side to grilled steak, chicken or fish, or serve it on its own, paired simply with a glass of bubbles.

Time 25m

Yield 4 to 6

Number Of Ingredients 10

1 cup whole-milk ricotta
Kosher salt and black pepper
1 pound long pasta, such as fettuccine or tagliatelle
3 tablespoons pine nuts (optional)
4 tablespoons unsalted butter
3 garlic cloves, thinly sliced
1 pound fresh baby spinach
1 cup heavy cream
1/4 teaspoon grated nutmeg
Grated pecorino or Parmesan, for serving

Steps:

  • Add the ricotta to a large bowl; season well with salt and pepper and set aside.
  • Bring a large pot of well-salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain.
  • Prepare your sauce while the pasta cooks: If using, cook the pine nuts in a deep 12-inch skillet over medium heat until toasted, stirring occasionally to make sure they do not burn, 2 to 3 minutes. Transfer to a small bowl.
  • Wipe skillet clean and melt the butter over medium-low heat. Add the garlic and sauté until pale golden, about 2 minutes. Add the spinach, stirring it in by the handful if needed, and cook until it wilts, adding a few tablespoons of the pasta water to help it along if needed, about 4 minutes. Season with salt.
  • Add the cream, bring to a simmer over medium heat and cook until sauce begins to thicken slightly, about 2 minutes more. Stir in the nutmeg then season with salt and pepper. Add the cooked pasta directly to the skillet and toss until the noodles are glossy with sauce.
  • Turn off heat and stir in the prepared ricotta, thinning the sauce with a bit of pasta cooking water if needed. Taste and adjust seasonings as needed. Divide among bowls. Top with pine nuts, if using, and pass grated pecorino or Parmesan at the table.

CREAMY SPINACH FETTUCCINE

Creamy Spinach Fettuccine image

Perfectly al-dente fettuccine pasta, baby spinach, and fresh basil drenched in a rich, creamy sauce. Quick, easy, and delicious.

Provided by Kare for Kitchen Treaty

Time 35m

Number Of Ingredients 9

3 cups baby spinach (lightly packed)
1/2 pound dry fettuccine
4 tablespoons unsalted butter
1 small shallot (minced (about 1/3 cup))
1 cup heavy whipping cream
1/4 cup fresh basil leaves (lightly packed, cut into strips)
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon salt
Ground black pepper

Steps:

  • Fill a large pot with water and bring to a boil. Add the spinach and blanch for one minute. Remove spinach with a large slotted spoon or hand strainer and place in a bowl of cold ice water to stop the cooking. Remove spinach from the ice water and place spinach on paper towels. Squeeze dry and set aside.
  • Add a generous pinch of salt to the boiling water and then add the fettucine. Cook pasta to al dente per package instructions. Reserve a cup of the pasta cooking water and drain the rest.
  • While pasta is cooking, make the sauce. In a large saute pan over medium heat, melt the butter. Add the shallots and saute until tender, about 5 minutes. Add the heavy whipping cream and bring to a boil, stirring occasionally, cooking until the sauce begins to thicken.
  • Season sauce with nutmeg, salt, and pepper. Taste and add additional seasonings if needed.
  • Add the drained pasta, 1/2 cup of the pasta water, and spinach. Toss and cook over medium heat for 3 - 4 minutes until sauce adheres to pasta. Add additional pasta water if necessary. Remove from heat and toss in basil strips (I use tongs for this, they work great).
  • Serve topped with additional basil strips for garnish, if desired, and a hit of freshly ground black pepper.
